BARBECUED CHICKEN

2 chickens (2 1/2 to 3 pounds each), quartered, with backs removed
1 recipe Barbecue Sauce, recipe follows
1 1/2 cups chopped yellow onion (1 large onion)
1 tablespoon minced garlic (3 cloves)
1/2 cup vegetable oil
1 cup tomato paste (10 ounces)
1 cup cider vinegar
1 cup honey
1/2 cup Worcestershire sauce
1 cup Dijon mustard
1/2 cup soy sauce
1 cup hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Steps:

  • Marinate the chickens in 2/3 of the barbecue sauce for a few hours or overnight in the refrigerator.
  • Heat the coals in a charcoal grill. Spread the bottom of the grill with a single layer of hot coals and then add a few more coals 5 minutes before cooking, which will keep the fire going longer. Place the chicken quarters on the grill, skin side down, and cook for about 45 minutes, turning once or twice to cook evenly on both sides. Brush with the marinade as needed. The chicken quarters are done when you insert a knife between a leg and thigh and the juices run clear. Discard any unused marinade.
  • Serve with extra barbecue sauce on the side.
  • In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer uncovered on low heat for 30 minutes. Use immediately or store in the refrigerator.
  • Yield: 1 1/2 quarts

I tried this recipe, with my own twist, on the whole family and they loved it. You can adjust the recipe so that it fits for your family needs. I usually cook more so that there can always be leftovers and my husband can take some for lunch.

4-5 - boneless chicken breasts
2 tablespoon(s) butter
1 - medium-large onion, chopped
8-10 stick(s) celery, chopped
4 - green peppers, chopped
2 cup(s) ketchup
1 1/2 cup(s) water
4 tablespoon(s) worcestershire sauce
4 tablespoon(s) brown sugar

Steps:

  • Preheat oven to 350*.
  • Bake chicken until it is completely done. While chicken is cooking cut up your onions and put them in a bowl. Cut up the celery and green peppers and put them in a separate bowl, together.
  • Take the rest of the ingredients and mix up so that you have your sauce.
  • Saute your onions in butter until soft, do not burn. Once onions are soft add the rest of the vegetables and pour the sauce over them. Bring to a boil.
  • Cut up chicken and add to a casserole dish. Be sure to use a cooking spray in the dish to prevent food from sticking. Once chicken is in dish pour the ingredients in from the pan over the chicken.
  • Mix the chicken and vegetables together. Cover and bake in oven for 1 hr.

This recipe tastes best with a Hawaiian style BBQ sauce, but if one isn't available, just use your own favorite. Every time I fix this, everyone LOVES it! There are usually no leftovers.

6 skinless, boneless chicken breast halves
1 green bell pepper, sliced
4 medium red potatoes, sliced
1 (20 ounce) can sliced juice-packed pineapple, drained, juice reserved
1 (18 ounce) bottle barbeque sauce

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a medium baking dish.
  • Place the chicken in the baking dish. Arrange pepper, potatoes, and pineapple around chicken. Pour the reserved pineapple juice over all, and top with barbeque sauce.
  • Bake 1 hour in the preheated oven, or until chicken juices run clear and potatoes are tender.
