OPEN-FACED BBQ BEEF SANDWICH

2 tablespoons vegetable oil
1 (10-pound) bottom round roast
Kosher salt and freshly ground black pepper
2 tablespoons minced garlic
1 (4-ounce) can mushrooms
1/2 cup of your favorite barbecue sauce
Dutch Oven Sourdough Biscuits, recipe follows
2 cups all-purpose flour, plus additional for kneading
3 tablespoons baking powder
2 tablespoons sugar
1 teaspoon salt
1/2 cup shortening
1 1/2 cups Sourdough Sponge, recipe follows
1/2 cup milk
1 cup all-purpose flour
1 cup water, used to cook potatoes in

Steps:

  • Preheat a wood fire or outdoor charcoal grill to medium heat.
  • In a Dutch oven, placed on the grill grate or directly on the embers of the fire, heat vegetable oil.
  • Season roast with salt and pepper. Rub minced garlic all over surface of roast. When oil is hot, place roast fat side down in Dutch oven. Pour mushrooms over roast and cover. Cook with coals or embers on the lid and a small amount under the oven.
  • Cook until meat shreds easily, about 12 hours, adding coals or wood as necessary to maintain a constant temperature. Shred meat with 2 forks and return to pot. Add barbecue sauce and mix well. Serve open-faced over Dutch Oven Sourdough Biscuits.
  • Preheat a wood fire or outdoor charcoal grill to medium heat.
  • In a mixing bowl, combine flour, baking powder, sugar and salt. Using a pastry blender or your fingertips, rub shortening into dry ingredients until the mixture resembles coarse meal.
  • Combine sourdough sponge and milk. Add to the dry ingredients and mix until dough no longer sticks to the side of the bowl.
  • Turn dough out onto a floured countertop. Flour fingertips and knead about 12 to 15 times. Roll out dough with a rolling pin to a 1/2 to 3/4-inch thickness. Using a 3-inch round biscuit cutter (or an empty can or glass), cut biscuits and place in a large Dutch oven with sides touching. Bake with coals on the lid and a small amount under the oven until biscuits are puffed and golden, about 15 to 20 minutes.
  • Mix flour and water used to cook potatoes in. Let mixture stand in a warm place covered with a dish towel for 3 days, or until bubbly and sour smelling. This is your starter. Use as directed in recipe.

1 Tbsp. HEINZ Worcestershire Sauce
1 boneless beef chuck roast (3 lb.)
1 cup beef broth
6 slices Texas toast white sandwich bread, grilled
3/4 cup HEINZ BBQ Sauce Kansas City Sweet & Smoky
1/2 cup small white onion slices, separated into rings
1/2 cup HEINZ Sweet and Spicy Pickle Chips

Steps:

  • Heat grill to medium-high heat.
  • Mix sugar and Worcestershire sauce until blended; rub evenly onto both sides of roast.
  • Grill roast 3 to 4 min. on each side or until seared on both sides. Meanwhile, heat oven to 325°F.
  • Transfer roast to shallow pan sprayed with cooking spray. Pour beef broth over roast; cover.
  • Bake 2 to 2-1/2 hours or until roast is done (160°F). Remove roast from oven; let stand 10 min. Transfer roast to cutting board, reserving cooking liquid in pan; chop meat into 1-inch pieces.
  • Skim fat from surface of cooking liquid; discard fat. Return chopped meat to cooking liquid in pan; mix lightly.
  • Place 1 toast slice on each of 6 serving plates; top with meat. Drizzle barbecue sauce over sandwiches; top with onions and pickles.

1 lemon, juiced
1/2-ounce extra-virgin olive oil

5 ounces sliced beef brisket
3 slices sharp Cheddar
Salt and freshly ground black pepper
1 brioche roll, sliced and toasted

Steps:

  • For the salad:
  • Put the watercress, grapefruit and fennel into a large bowl and season with salt and pepper, to taste. Add the lemon juice and the olive oil and toss to combine.
  • For the brisket:
  • In a small saute pan, add the BBQ sauce and brisket, and cook over medium heat until beef is hot and cooked through. Top the brisket with 3 slices of Cheddar and toss together until combined. Season with salt and pepper, to taste.

1 large Spanish onion, sliced into thin rings (or 2 smaller onions)
2 tablespoons butter
1 cup tomato ketchup
1 cup Pepsi
2 teaspoons maple syrup
1 tablespoon Worcestershire sauce
1 tablespoon vegetable oil (add more if needed)
1 medium green bell pepper, chopped small
1 lb round steak, very thinly sliced (across the grain, not with it)
1/2 teaspoon garlic powder

Steps:

  • Slice the onion and slowly brown in 2 Tbsp of butter until onions are soft and carmelization begins, should be ready a little before the beef is done, sprinkle lightly with salt when done.
  • In a medium bowl, combine ketchup, cola, and worcestershire and syrup.
  • In a sauce pan, bring to a boil and then simmer, uncovered, 20 minutes,.
  • stirring occasionally.
  • While the sauce is cooking, slice the round steak and chop the pepper.
  • In a 12 inch skillet on med-high setting heat the oil and add the chopped green pepper and cook for 2 mins (or until soft).and then add the sliced beef and garlic powder.
  • Quickly cook the meat just until no longer red and no blood is showing, you may need to do this in batches. If the sauce is ready add the meat and peppers to it right away. If not just set the skillet aside for the few mins until the sauce has cooked for the 20 minutes.
  • After the 20 mins add beef mix and gently simmer an additional 5 minutes.
  • Serve on toasted buns with onions topping the beef mix.

1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1 lb top round roast, extra lean cut into 3/4 in cubes (can use steak)
cooking spray, olive oil flavored
3/4 cup beef broth, low-fat, lower-sodium
2 tablespoons liquid smoke
1/3 cup barbecue sauce
1 cup onion, sliced
4 hamburger buns, whole-grain

Steps:

  • In a medium plastic bag, combine flour, garlic powder and onion powder.
  • Add beef and shake bag until beef is evenly coated.
  • Refrigerate beef for at least 15 minutes.
  • Preheat a medium, non stick sauce pan over medium-high heat.
  • When it's hot, lightly mist pan with spray, then add beef.
  • Brown beef on all sides about 1 minute per side, then reduce heat to medium. Add broth and liquid smoke.
  • When liquid comes to a boil, reduce heat to low (liquid should still be boiling slightly).
  • Cover and cook beef, stirring occasionally, for 1 to 1 1/2 hours or until it's very tender. (The pieces should easily fall apart when smashed wit a fork).
  • Using a slotted spoon, drain any excess liquid from beef and discard.
  • Using a fork, separate pieces so beef is somewhat shredded., then mix in barbecue sauce.
  • During the last 5 minutes of cooking the beef, lightly mist a small, nonstick frying pan with spray and place it over medium heat.
  • Add onion strips and cook until tender, about 5 minutes.
  • Meanwhile, place bun halves, inside down, in a medium, nonstick frying pan over medium heat. Cook until just toasted, about 2-4 minutes.
  • Place each bun bottom on a plate.
  • Pile 1/4 of beef mixtures onto each bun.
  • Top with 1/4 of onion strips.
  • Add bun tops and serve immediately.
