What can be cuter than mini turkey meatloaf cupcakes topped with skinny mashed potato "frosting". A family friendly meal everyone will love (and no one will guess there are vegetables hiding in the meatloaf)!

1.3 lb 93% lean ground turkey
1 cup grated zucchini (all moisture squeezed dry with paper towel)
2 tbsp onion (minced)
1/2 cup seasoned breadcrumbs
1/4 cup ketchup
1 egg
1 tsp kosher salt
1 lb about 2 medium Yukon gold potatoes, peeled and cubed
2 large garlic cloves (peeled and halved)
2 tbsp fat free sour cream
2 tbsp fat free chicken broth
1 tbsp skim milk
1/2 tbsp light butter
kosher salt to taste
dash of fresh ground pepper
2 tbsp fresh thyme

Steps:

  • Put the potatoes and garlic in a large pot with salt and enough water to cover; bring to a boil.
  • Cover and reduce heat; simmer for 20 minutes or until potatoes are tender.
  • Drain and return potatoes and garlic to pan. Add sour cream and remaining ingredients.
  • Using a masher or blender, mash until smooth.
  • Season with salt and pepper to taste.
  • Meanwhile, preheat the oven to 350°.
  • Line a muffin tin with foil liners.
  • In a large bowl, mix the turkey, zucchini, onion, breadcrumbs, ketchup, egg, and salt.
  • Place meatloaf mixture into muffin tins filling them to the top, making sure they are flat at the top.
  • Bake uncovered for 18-20 minutes or until cooked through.
  • Remove from tins and place onto a baking dish.
  • Pipe the "frosting" onto the meatloaf cupcakes and serve.

1 cup crushed saltine crackers
½ cup chopped onion
½ cup chopped green bell pepper
⅓ cup milk
1 egg
1 tablespoon Worcestershire sauce
2 cloves garlic, chopped
1 teaspoon ground black pepper
1 teaspoon seasoned salt
½ cup ketchup
½ cup brown sugar
4 cups mashed potatoes
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground beef, saltine crackers, onion, green bell pepper, milk, egg, Worcestershire sauce, garlic, black pepper, and seasoned salt together in a bowl.
  • Stir ketchup and brown sugar together in a bowl. Spoon ketchup mixture into the bottom of each muffin cup of a 6-cup muffin tin.
  • Fill muffin cups with beef mixture, leaving 1/2-inch space on the top.
  • Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain fat from muffin cups.
  • Top each 'cupcake' with mashed potatoes and Cheddar cheese.

1 cup bread crumbs
1 onion, finely diced
1 egg, lightly beaten
1 1/2 teaspoon salt

1 (8 ounce) can tomato paste
2 tablespoons brown sugar
1 1/2 tablespoons Dijon mustard
1 1/2 tablespoons Worcestershire sauce
12 slices bacon
5 potatoes
1/4 cup Cheddar cheese, shredded
2 tablespoons butter
1/4 cup milk
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F. MEATLOAF: Line your muffin tin with the bacon so that each tin is circled by one strip. Mix together the beef, bread crumbs, onion, egg, salt, pepper, tomato paste, sugar, mustard, and Worcestershire sauce. Form the meat into 12 equally sized balls and place them into the bacon-lined muffin tins. Fold the top of the bacon over, if needed. Pop them into the oven for 45 minutes to 1 hour, or until the meat is cooked through and the bacon is crisp. POTATOES: While the meatloaf is cooking, prepare your mashed potatoes. Dice up the potatoes and boil them in salted water until they're soft. Drain the potatoes, pop them into a mixing bowl, and mash them with a fork until they're completely smooth. Add your butter, cheese, milk, salt, etc and mix until fully combined. Move your mashed potatoes into a piping bag (or a zip-lock with an edge cut off) and save it until the meatloaf is ready. CUPCAKE: Once the meatloaf is ready, take them out of the oven, and pipe them with the mashed potatoes! After they're all piped, pop them back into the oven, and turn your heat up to 400-500 degrees F. Heat until the tops of the potatoes are golden brown (it should be very quick - no more than 5-6 minutes). Remove them from the oven, let cool for a bit, and enjoy!

4 slices bacon (reserve bacon drippings)
1 onion, chopped
1 1/2 lbs ground turkey
1/2 cup breadcrumbs
1 cup cheddar cheese
1/2 cup barbecue sauce
2 eggs
4 cups cubed peeled yukon gold potatoes (about 2 pounds)
1/4-1/2 cup heavy whipping cream (or half & half)
1/4 cup sour cream
3 tablespoons butter
1/2 teaspoon kosher salt or 1/2 teaspoon sea salt
1/4 teaspoon fresh ground black pepper (optional)

Steps:

  • Preheat oven to 350°.
  • Heat a large nonstick skillet over medium-high heat. Cook bacon until crisp. Remove from pan and place on a paper towel. Allow to cool. Crumble into pieces.
  • Add chopped onion to the reserved bacon drippings and sauté 3-4 minutes. Cool.
  • Add turkey, breadcrumbs, cheddar cheese, BBQ sauce, eggs, sautéed onions & crumbled bacon to a bowl and mix until combined.

Drain. Put potatoes into a ricer for best results. Return potato to pan. Add heavy whipping cream and remaining ingredients; stir with a spoon to desired consistency. If they are not creamy enough for you, add up to 1/4 cup more cream or milk - although they need to be stiff enough to pipe on top.
  • Put the potatoes into a pastry bag with a wide star tip and pipe the mashed potatoes on top of the meatloaf.

1 pouch Betty Crocker® roasted garlic mashed potatoes (from 6.6-oz box)
Water, butter and milk called for on potato box for 1 pouch
½ cup shredded Cheddar cheese (2 oz)
Meat Loaf Mixture:
1 lb extra-lean (at least 90%) ground beef
¼ cup Progresso® Italian style bread crumbs
2 tablespoons chopped onion
2 tablespoons milk
¼ teaspoon pepper
1 egg
Sauce:
½ cup ketchup
1 tablespoon packed brown sugar
2 teaspoons ground mustard
½ teaspoon ground nutmeg
Chopped fresh parsley, if desired

Steps:

  • 1.) Heat oven to 375°F. Place foil baking cup in each of 12 regular-size muffin cups.
  • 2). In 2-quart saucepan, make 1 pouch potatoes as directed on box. Stir in cheese. Set aside.
  • 3.) In large bowl, mix meat loaf mixture ingredients. Press about 3 tablespoons meat mixture in each muffin cup.
  • 4.) In small bowl, mix all sauce ingredients except parsley. Spread about 2 teaspoons sauce over meat loaf mixture in each muffin cup. Place potato mixture in decorating bag fitted with #847 or desired tip. Pipe potatoes on cupcakes.
  • 5.) Bake 14 to 16 minutes or until meat thermometer inserted in center of cupcake reads 160°F. Sprinkle with parsley; serve immediately.
  • * Skip the homemade sauce and just use, ketchup or barbecue sauce.
  • * Skip the potato piping. Just spoon the potatoes over the sauce.
  • * Make sure to use extra-lean ground beef so there is less fat in foil baking cups after baking.

Sounds easy, right?! Well with the proper preparations, you can take your bacon to a whole new level. You can cook it ahead of time and have an awesome BLT, or you want some really flavorful bacon bits added to your salad, or to those main dishes that have bacon in them. Well this is a great alternative answer. Also by BBQ the bacon, it drips alot of the grease that it normally bathes in while you pan fry. The prep time is so the bacon can marinate and get all nice and cozy with the BBQ sauce. Double or triple for large potluck meal batches. **NOTE** - Recently we started adding Rum to the mix, it comes out awesome. So if your inclined to do so, add a cup of good dark rum to the marinating bag.

1 lb bacon (from a butcher or meat counter)
1/2 cup barbecue sauce (Sweet Baby Rays, or Deb's Soulicious are our favorites)
1 medium onion (I prefer red, but sweet is also good)
1 cup dark rum (Optional, I like Sailor Jerry myself)

Steps:

  • Dice Onion up really nice.
  • Add diced Onion, Bacon, BBQ sauce and Rum (optional of course) to a ziploc freezer baggy (large enough to hold everything together).((I use a vacuum sealer for this)).
  • Pretend it is a gel sack and mix things up really well after you seal the bag.
  • Freeze combination for at least 6 hours, the freezing causes the ice crystals to cause mini-tears in the meat, allowing the Bacon to be extremely tender.
  • Take freezer pack out of freezer and allow to thaw normally (in the fridge).
  • Ready your BBQ, when hot, cook to doneness that you normally like your bacon (tender or crispy).
  • NOTE: Watch the flames, the dripping grease causes fires, and if you don't remain observant, you will end up with little charcoal sticks. :).

1 cup Progresso™ panko crispy bread crumbs
1 small red onion, finely chopped
1 tablespoon coarsely chopped fresh Italian (flat-leaf) parsley
2 cloves garlic, finely chopped
2/3 cup ketchup
2 teaspoons Worcestershire sauce
Salt and pepper
6 large potatoes, peeled, cubed
1/4 cup herb butter
1/4 to 1/2 cup milk

Steps:

  • Heat oven to 350°F. Spray 18 regular-size muffin cups with cooking spray.
  • In large bowl, mix Meatloaf ingredients until well combined. Divide mixture evenly among muffin cups, pressing mixture down firmly.
  • Bake 35 to 40 minutes or until meat thermometer inserted in center of loaves reads 160°F. Cool slightly in muffin cups.
  • While loaves are baking, in 3-quart saucepan, place potatoes in generously salted cold water. Heat to boiling. Reduce heat; cook potatoes until fork-tender. Drain; return to saucepan.
