Wonderful, impressive dessert. Can also be used for savoury fillings, seafood, sauced meat,salads. Very handy to have on hand in the freezer.

1/2 cup water
1/4 cup butter or 1/4 cup margarine
1/4 teaspoon vanilla extract
1/8 teaspoon salt
7 tablespoons rice flour
2 eggs
whipped cream

Steps:

  • In a saucepan, bring to boil, water, butter, vanilla and salt, over medium high heat.
  • Dump rice flour in all at once and stir until mixture is smooth and forms a ball.
  • Remove from heat, cool 5 minutes.
  • Add eggs, one at a time, beating in between each addition.
  • Beat until batter is smooth.
  • Drop by large spoonfuls onto ungreased baking sheet.
  • Bake at 400 degrees for 30 to 35 minutes until golden brown and crisp.
  • Cool on rack.
  • When completely cooled, bag airtight and freeze, or, cut each puff in half fill with whipped cream, replace top, or partially fill with any kind of fruit sauce, top with whipped cream, replace top, drizzle fruit sauce over, and top again with whipped cream.

The foundation of the perfect cream puff is light, airy pâte à choux, which is made with eggs, flour, and butter. Once the cream puffs are shaped and baked, they're filled with a rich homemade pastry cream.

1/2 cup (1 stick) unsalted butter, cut into pieces
1 teaspoon sugar (optional)
1/2 teaspoon salt
1 cup all-purpose flour
5 large eggs
No-Fuss Pastry Cream

Steps:

  • Preheat oven to 375 degrees. Line two baking sheets with parchment paper.
  • In a medium saucepan over medium-high heat, combine butter, sugar, salt and 1 cup water. Bring to a boil and quickly stir in the flour with a wooden spoon. Continue to stir until a film forms on the bottom of the pan.
  • Remove from heat and transfer contents to a bowl to cool slightly, about 3 minutes. Add 4 eggs, one at a time, stirring vigorously to entirely incorporate egg after each addition.
  • For the egg wash, whisk together the remaining egg with 1 tablespoon water. Set aside.
  • Transfer the pate a choux to a large pastry bag fitted with a 5/8-inch plain tip. Pipe 1-1/2-inch rounds onto each prepared pan. Gently smooth the pointed peaks with a moistened finger, rounding tops to ensure even rising. Brush tops with reserved egg wash. Bake until puffs rise and are golden brown, about 30 minutes. Let cool on sheets on wire racks. Puffs can be stored at room temperature for up to 1 day.
  • Transfer pastry cream to a pastry bag fitted with a 1/8-inch plain round tip. Insert the tip into the opening of each pastry, and pipe to fill with pastry cream. Serve immediately.

5 egg yolks
2 cups half-and-half cream
1 cup coconut milk
3/4 cup sugar
1/3 cup cornstarch
1 cup sweetened flaked coconut
1 teaspoon vanilla extract
1/2 cup unsalted butter, cubed
1/2 cup coconut milk
1/2 cup water
1 pinch salt
1 cup flour
3 eggs, for inside
1 egg, to be used for the egg wash

Steps:

  • For the Cream Filling:.
  • To a medium saucepan whisk together egg yolks, half and half, and coconut milk over medium/low heat.
  • Once combined, add in sugar and corn starch, stirring constantly until the mixture thickens and comes to a light boil.
  • Remove from heat and mix in the shredded coconut and vanilla extract.
  • Cover with plastic wrap and chill at least two hours.
  • For the Puffs:.
  • Preheat oven to 425°F (220°C).
  • To a medium saucepan add the butter, coconut milk, water, and salt over medium heat.
  • Allow all the butter to melt and bring the mixture to a boil.
  • As soon as the mixture begins to boil, reduce heat to medium-low and add in the flour.
  • Using a wooden spoon, mix thoroughly to incorporate the flour. Continue stirring until the dough starts to pull away from the sides and a thin film forms on the bottom of the pan (about three minutes).
  • Remove the mixture from heat and transfer to a large mixing bowl. Let the dough cool slightly.
  • Add in the eggs, one at a time, being sure to fully incorporate each egg before adding the next.
  • Once the dough comes together, transfer it to a piping bag and pipe onto a parchment-paper-lined baking sheet into 1½-inch mounds.
  • Smooth out any peaks/ridges cause by piping with a wet fingertip (this will ensure your puffs cook evenly and maintain a nice ball shape).
  • Then brush the dough with egg wash and place in preheated oven.
  • Bake for 15 minutes at 425°F. Then, without opening the oven, reduce heat to 350° (175°C) and bake for an additional 15 minutes.
  • Remove puffs from oven. Using the tip of a knife, cut a small "x" into the bottom of each puff and transfer ("x" side up) to a cooling rack.
  • Just before serving (or up to two hours in advance), pipe the cream filling into the cooled puffs. Sprinkle with powdered sugar.

1 small onion, chopped
1 lb mushroom, chopped
2 tablespoons flour
1/2 teaspoon lemon juice
1/2 cup heavy whipping cream
salt
pepper
1 (17 1/3 ounce) package frozen puff pastry, thawed

Steps:

  • Melt the butter in a large frying pan over medium heat.
  • Add the onion and mushrooms, saute until the liquid evaporates.
  • Add the flour, whisking until smooth.
  • Cook for 1 minute, stirring constantly.
  • Add the lemon juice, stirring constantly.
  • Add the cream and cook over medium heat, stirring constantly until the mixture is thickened and bubbly.
  • Stir in the salt and pepper, to taste.
  • Remove from heat.
  • Roll out the pastry on a floured surface to 1/8 inch thick.
  • Cut into 2 1/2 inch squares.
  • Place a heaping teaspoon of the filling in the center of each square.
  • Grasp all 4 corners and pinch the four seams to form a bundle, drop into the cup of a mini muffin pan (Do not force them down).
  • Repeat with the remaining pastry and filling.
  • Cover and chill.
  • Preheat the oven to 400 degrees F.
  • Bake for 20-25 minutes or until sides and bottoms are browned.

1 package Jell-O pudding mix, prepared

Steps:

  • Preheat oven to 400.
  • Heat water and butter to a rolling boil, stir in flower.
  • Stir vigorously over low heat until mixture forms a ball (about 1 minute).
  • Remove from heat, mix in eggs all at once until smooth.
  • Drop 1/4 cup at a time on ungreased baking sheet, bake 35-40 minutes until golden.
  • Cool completely.
  • Cut off tops and pull out any soft dough from the inside.
