SKEWERED SHRIMP DIPPED IN CORN DOG BATTER

Steps:
- Heat oil in deep fryer to 375 degrees F.
- Mix batter by combining cornmeal, flour, baking powder, sour cream, milk, eggs, salt and melted butter. (Add a little more milk if the batter is too thick for dipping the shrimp.)
- Skewer the shrimp, dip in the batter, and deep-fry until golden brown.
BATTER-DIPPED SHRIMP
Steps:
- Devein shrimp; rinse and drain thoroughly. Pour oil into a skillet or large saucepan to a depth or 1 to 1 1/2-inches (2.5 to cm); heat to 375 F (190.c).
- Mix egg and milk together in a large bowl. Add flour, salt and pepper. Beat batter until smooth. Dip shrimp one at a time; drain excess batter.
- Fry shrimp until golden brown, about 3 to 4 minutes; drain. Serve with tartar sauce or cocktail sauce.
