GARLIC AND BASIL CHICKEN PASTA WITH ALFREDO SAUCE
This is a French dish and this is probably one of the best pasta recipes I have. It takes a fair bit of time but the prep and cook time may differ for you

Steps:
- Cut fat off of chicken. Cut chicken into bite sized pieces and set aside.
- In a small bowl, combine olive oil, wine vinegar, basil, chives, garlic, salt, & pepper.
- Sautee chicken in large skillet until no longer pink and nicely seared on both sides. This will take approximately 30 minutes on med-high heat with an electric stove.
- While chicken is sauteeing, cook pasta according to package instructions. Spoon mixture from step 2 over chicken about 2 minutes before it is done cooking.
- When pasta is done, drain in colander and place in a large (very large) bowl. Add chicken and alfredo sauce to the noodles. Use a scooper to incorporate well.
- Serve and enjoy!
CREAMY CHICKEN, BASIL, AND SUN-DRIED TOMATO PASTA BAKE
This is from Wild Oats. It can be made up the night before and then just popped in the oven the next day. They recommend it be served with steamed veggies or a crisp green salad.

- Preheat oven to 350. Boil pasta according to package directions. Drain and place in baking dish.
- Rinse and pat chicken dry. Season both sides with salt and pepper.
- Heat large saute pan over medium heat. Add 1 teaspoon olive oil. Place chicken in pan, and cook 2 to 3 minutes per side, or until the chicken is browned. Remove from pan and place on a cutting board.
- In the same pan, melt butter, and add the rest of the olive oil. Add the garlic and onions. Cook for about 2 minutes, until the onions are soft.
- Stir in the tomatoes and 3/4 cup of the chicken broth or wine. Bring to a boil. Turn down and let simmer for about 10 minutes.
- Meanwhile, slice the chicken into 1/4-inch thick slices and place over pasta (the chicken will finish cooking in the oven).
- Stir in cream and 1/2 cup cheese into the tomatoes. Simmer over medium heat until the sauce thickens.
- Add the rest of the broth or wine if the sauce gets too thick. Stir in basil. Add salt and pepper to tast.
- Pour sauce over chicken and pasta. Sprinkle with remaining cheese.
- Bake uncovered for about 20 minutes, or until bubbling and golden brown.
CHICKEN, TOMATO, AND PASTA SALAD WITH BASIL VINAIGRETTE
Steps:
- In a blender, add the Dijon and vinegars and blend. Drizzle in the oils to emulsify. In a large salad bowl, toss the chicken, pasta, tomatoes and basil. Season with salt and black pepper. Check for flavor.
- In a large pasta bowl, plate the entire salad and garnish with basil tops.
- In a blender, puree garlic, ginger, lime juice, salt, and sugar and oil until smooth. Do not overmix thereby heating the mixture. Add the basil and puree smooth. Check for seasoning.
BASIL CHICKEN AND PASTA
This is a great quick meal; the chicken and sauce can be prepared in the time it takes to cook the pasta. You can add more cream or less pasta if you like it creamier. Try ziti or farfalle pasta to add even more variety to this recipe. The leftovers don't heat very well, so eat it all up the first time!

- Cook pasta according to package directions, adding green beans the last 5 minutes of cooking; drain. Rinse with cold water; drain again.

CREAMY PASTA WITH CHICKEN, BROCCOLI AND BASIL - LOW FAT VERSION
This comes from a Pam Anderson recipe. I love creamy pastas like alfredos, etc... but don't like all the fat. This recipe is a great solution. By using 2 percent evaporated milk, instead of heavy cream, the fat content is cut considerably. The flavor and consistency is still wonderful, in my opinion. I love this recipe because: it's lower in fat; you can use left-over chicken (or cooked rotisserie chicken); cooking the broccoli in the same pot as the pasta saves an extra pot to wash, it's an easy one-dish meal! There are many variations you could try with this recipe, too. Notes: 1.this recipe calls for diced tomatoes - if you'd prefer a more traditional alfredo-type sauce, I think you could probably omit the tomatoes and it would be just fine. 2. Also, if you like your pasta spicier you could add more red pepper flakes than the amount called for. 3. I find it very helpful to have all my ingredients prepped/chopped and ready before I start cooking - especially for this recipe. 4. Make sure you reserve about a cup of the pasta cooking water - it helps to thin out the finished product, if necessary. Have fun and enjoy!

- Bring about 2 quarts of water to a boil - add a tablespoon of salt to the boiling water.
- Add pasta and use the cooking time given on the package to cook your pasta al dente. Stir frequently at first to prevent pasta from sticking.
- Add the broccoli to the boiling pasta water during the last 5 minutes of cooking.
- Meanwhile, microwave broth, milk and garlic in a microwave-safe bowl until steamy hot (approx. 3 to 4 minutes). Then let it stand for a few minutes.
- Put butter in a saucepan over low heat.
- After butter melts, whisk in flour, then hot milk mixture. Whisk constantly over medium-low to medium heat until sauce thickens. This should take about 1 to 2 minutes. You judge as to when the sauce thickens up.
- Stir in parmesan, cooked chicken, tomatoes, basil and red pepper flakes.
- Salt and pepper to taste and let simmer for about 5 minutes to blend flavors.
- Drain pasta and broccoli, *reserving 1 cup pasta cooking liquid* and return to pasta pot.
- Pour cream sauce over pasta, adding enough reserved cooking liquid to moisten.
- Toss and serve immediately with a light sprinkling of parmesan.
- Enjoy!

- Grill, steam or microwave chicken breasts until they are tender and cooked through.
- Cut into strips.
- Heat oil in a large pan, add onion and tomatoes; stir over heat until onion is soft.

- 1. Put basil.walnuts,and parmesan cheese in food processor. Blend well. add remaining ingredients starting with olive oil,and sour cream. You can adapt ingredients to get the flavor you are looking for.

- Cook macaroni according to package directions, except omit any oil and use 1/4 teaspoon salt.
- Drain pasta.
- Rinse with cold water.
- Drain pasta again.
- Meanwhile, cut chicken into 1 pieces.

- Boil salted water in a saucepan for the pasta. Cook until done. About 4 minutes for fresh, and 8 minutes for dried pasta. Drain and set aside.
- While pasta is cooking, rub salt and pepper on the chicken breasts. (This is optional, but I like the extra flavoring.) Heat olive oil in a large skillet.
- Cook the chicken in the oil about 3 minutes on each side or until juices run clear.
- Remove the chicken from the pan, and shred. Mix chicken and feta with the pasta.
- Add a little more oil to the pan and fry the basil. Remove when it is crispy. (Don't worry, once it's past the wilted stage, it will crisp up. Believe me!).
- Top pasta with the fried basil and serve with lemon wedges.

CHICKEN TOMATO BASIL AND PASTA

- In a large sauté pan heat a splash of olive oil on medium high, add chopped onion , a dash of smoked paprika, hot pepper garlic salt and pepper. Heat a few minutes until onions are fragrant and translucent. Add chicken to pan and sauté until cooked through and slightly browned. Add fire roasted tomatoes. Bring to a boil and then lower heat to a simmer for about 20 minutes. Add more seasonings to taste. Add basil and sliced tomatoes at the end of cooking time. Cook up some pasta and serve up your sauce! Top with freshly grated cheese.
