LEMON-BASIL CARROTS
THIS IS one of my favorite ways to prepare carrots-simple but flavorful. I devised this recipe since we always seem to have carrots on hand, and the dish has drawn quite a few compliments. - Place carrots in a small saucepan; add water to cover. Cook for 10 minutes or until tender; drain and return to pan. Add the remaining ingredients. Cook over low heat until butter is melted.

QUICK CARROTS WITH GARLIC & BASIL
A quick different way with carrots. You can use other herbs if you like in place of the basil. I have used both fresh garlic and crushed from a jar with little difference.

Steps:
- Cook carrots in boiling water for for 2 -3 mins until tender but crisp or microwave if desired.
- Drain and reserve 1/2 cup of liquid.
- Combine the garlic and oil in a nonstick pan and cook over a moderate heat until fragrant (you can smell the garlic).
- Add the carrots and stirring, cook until well combined and hot, adding a little of the reserved cooking liquid if necessary.
- Remove from the heat and stir in the basil.
- Serve hot.

- In a small bowl, combine the parsley, basil, lemon zest, orange zest, garlic and pepper flakes if desired; set aside., In a 2-qt. microwave-safe dish, combine carrots and 1/4 cup water. - 1. Peel and slice carrots into 1/4-inch "coins." Cook briefly in small amount of boiling water in a saucepan until tender-crisp. Refresh with cold water in a colander.

- Peel the carrots and slice them. Put them in a pan with the cup of water. Bring to a boil. Cover and reduce heat. Simmer for about 10 minutes or until soft (but not mushy). Drain and return to the pan.
- While the carrots are cooking combine the other ingredients in a small bowl. Mix well to combine.
- When the carrots are drained add the vinegar mixture and return to the heat. Stir frequently for 2 minutes.
- Serve warm.

- Peel and slice the carrots on the diagnal - into about 1/2 slices.
- Boil gently or steam for about 7-10 minutes, until just softening a bit.
- Leave to carry on cooking in the water with the lid on until you are ready to serve - up to 15 minutes maximum.
- Drain and add the creme fraiche, garlic & basil to the carrots in the pan.
- Put the lid on again and gently mix around in the pan by shaking it.
- Serve hot & make sure you get all the creamy herb juices out & pour them over the carrots!
- You can garnish them with a bit more chopped basil OR chopped parsley if you wish.

- Cut the zucchini and carrots into very thin slices (the size of wooden matchsticks).
- Cut the scallions into thin slices, including a little of the green.
- In a medium-sized skillet, heat the oil.
- Add the carrots and begin to saute, stirring frequently.
- When they begin to soften, add the zucchini and scallions.
- (Add a tablespoon or two of water or broth, if needed).
- Since the heat should be rather high, do not add the garlic until the vegetables are almost done, or it may brown.
