After my husband ate this he said "You should post THIS one!"...so now I am! It tasted very nice with pine roasted couscous.

Steps:
- Grease the bottom of a casserole dish with oil.
- In a separate bowl, mix spinach, rigotta cheese, and worchesire sauce together, and then spread the entire mixture at the bottom of the casserole dish.
- Clean and pat fish dry. Spread the fish side by side on top of the spinach mixture.
- Sprinkle the fish with lemon juice and salt.
- Top each fish with tomatoes, basil, scallions, spices, butter and vinegar.
- Add the parm. cheese 5 minutes before the fish is done cooking.

- Preheat oven to 350°. Place tilapia in a 13x9-in. baking dish coated with cooking spray; sprinkle with pepper. Spoon tomatoes over tilapia; top with onion and green pepper., Cover and bake 30 minutes. Uncover; sprinkle with cheese. Bake 10-15 minutes longer or until fish flakes easily with a fork., Freeze option: Cool fish mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet, stirring occasionally, until a thermometer inserted in fish reads 145°.

ORANGE TILAPIA
Steps:
- Pour 1 1/2 cups orange juice into a resealable plastic bag. Add tilapia fillets, coat with the juice, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator 3 hours to overnight.
- Preheat oven to 400 degrees F (200 degrees C).
- Whisk butter, panko bread crumbs, 3 tablespoons orange juice, garlic, and basil together in a bowl.
- Remove tilapia from the orange juice and shake to remove excess liquid; arrange fillets in a 13x9-inch baking dish. Discard marinade.
- Pour 1/2 cup orange juice over the tilapia fillets. Spread butter mixture over the top of the filets to cover each completely.
- Bake in preheated oven until the liquid is bubbling and the fish flakes easily with a fork, about 15 minutes.
