SIMPLE BASIL VINAIGRETTE

1 shallot (roughly chopped)
2 cups tightly packed fresh basil leaves (stems removed (about 4 ounces))
1 clove garlic
1/2 teaspoons red pepper flakes
1/2 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon kosher salt

Steps:

  • Combine all the ingredients for the basil vinaigrette in a high powered blender and blend for 60 seconds until very smooth.
  • Taste and adjust salt and pepper as needed. Serve immediately. Or you can refrigerate the vinaigrette for up to 3-5 days.

Steps:

  • Mince the garlic as finely as possible. Then use the side of your knife blade to mash and grind it into a paste. (Alternate method: you can combine all ingredients in a food processor and blend until smooth.*)
  • Mince the basil as finely as possible.
  • Whisk together the garlic and basil with the white wine vinegar, yellow mustard, and mayonnaise. Keeps in the refrigerator for 2 weeks.

1 ½ pounds plum tomatoes, seeded and cut into small dice
¼ cup chopped fresh basil
6 tablespoons extra-virgin olive oil, divided
2 tablespoons finely chopped red onion
2 large cloves garlic, minced
2 teaspoons red wine vinegar
freshly ground black pepper to taste
1 French baguette, cut into 1/2-inch thick slices
1 tablespoon high-quality balsamic vinegar, or to taste

Steps:

  • Stir tomatoes, basil, 3 tablespoons olive oil, red onion, garlic, red wine vinegar, and pepper together in a bowl; let tomato mixture stand at room temperature for 15 minutes, then place in the refrigerator to marinate for 45 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Brush one side of each slice of bread with remaining olive oil. Place bread slices, oiled-side-up, onto a baking sheet.

1 cup basil leaves
2 1/2 quarts cider vinegar
6 cloves garlic
1 cup fresh basil, added after 2 weeks
1 cup red wine vinegar, added after 3 weeks
1 cup boiled water, added after 3 weeks
3 sprigs fresh basil, added afteer 3 weeks

Steps:

  • In a 4 quart stainless or enamel pot crush the basil leaves.
  • Add the cider vinegar.
  • Bring to a boil over high heat.
  • Remove from heat and add the cloves of garlic.
  • Cover or place in a sterile container-again covered.
  • Let stand two weeks.
  • Strain vinegar into another sterile container and add the 1 cup basil.
  • Let stand another week.
  • Strain and add the red wine vinegar and water.
  • Sterilize 3 1-quart jars-or as many pint jar/half pint jar combo's as you wish.
  • Chop remaining basil and divide between choosen bottles.
  • Add the vinegar and cap or seal.

2 cloves garlic, peeled and split
2 cups wine vinegar or 2 cups white vinegar

Steps:

  • Place 1/2 cup coarsely chopped fresh basil leaves and 2 cloves split peeled garlic in a sterilized pint jar.
  • Heat the wine or white vinegar to just below the boiling point.
  • Fill the jar with the vinegar, and cap tightly.

⅓ cup olive oil
¼ cup tomato sauce
2 tablespoons red wine vinegar
