BASIC OVEN-BAKED MARINATED TEMPEH



Basic Oven-Baked Marinated Tempeh image

Although the marinade sounds similar to several of those given for tofu, it's just different enough that, when used on the completely different tempeh, you have a wholly distinct, and wholly delicious, dish. This is a base preparation. Use the baked tempeh as part of a component plate, sauced or unsauced, cut up as the filling for spring rolls with tempeh, added to a vegetable stir-fry, or as the centerpiece of a hearty sandwich.

Yield Serves 3 to 4 as a main course, possibly many more if used in a stir-fry, spring rolls, pasta dish, or casserole

Number Of Ingredients 6

2 tablespoons tamari or shoyu soy sauce
1 1/2 tablespoons vinegar (white, cider, balsamic, rice, red- or white-wine - whatever you have on hand or goes with the flavors of whatever your end-use recipe is)
1 teaspoon Pickapeppa (optional but good) (see tip, below)
Any combination of the seasonings (see note; optional)
1 tempeh cake (8 ounces), cut in the size or shape appropriate to use
Cooking spray

Steps:

  • 1. Combine the tamari, vinegar, and Pickapeppa in a nonreactive dish and stir to combine. If using additional seasoning (see below), add it here. Add the tempeh. Marinate at room temperature, turning occasionally, for 20 minutes to 1 hour or refrigerated for up to 2 days.
  • 2. Fifteen minutes before you are ready to cook the tempeh, preheat the oven to 375°F.
  • 3. Place the marinated tempeh pieces on a nonstick baking sheet or one that has been sprayed with cooking spray, allowing plenty of air space between chunks. Bake for 12 to 15 minutes, then flip the pieces over and bake for another 10 minutes. Remove from the oven and use as desired.
  • Seasoning Tempeh
  • The above is a basic recipe, designed to be compatible with almost any finished recipe. But the marinade can certainly be zapped up to good effect.
  • Try any one to three of the following additions:
  • • 1 to 3 cloves garlic, pressed
  • • 1 to 2 teaspoons peeled grated ginger
  • • 1/4 to 1/2 teaspoon freshly ground black pepper
  • • 1 to 2 teaspoons honey
  • • 1 teaspoon ground coriander
  • • 1 to 2 teaspoons toasted sesame oil
  • • 1/2 to 1 teaspoon Tabasco or other hot sauce
  • • 1 tablespoon ketchup or tomato paste

Basic Scrambled Tempeh image

From Isa Chandra Moskowitz's book, Vegan Brunch. This is a refreshing change of pace for breakfast time, but would make a great meal at any time of day. She suggests that steaming the tempeh before preparing this recipe gives it a juicier texture and reduces the bitterness of tempeh. I steamed it for five minutes with 2 tablespoons of water in the microwave, but if you like a stronger tempeh flavor you can skip that.

3 tablespoons olive oil, divided
1 lb tempeh, cubed
1 red bell pepper, thinly sliced
1 small red onion, thinly sliced
3 garlic cloves, minced
2 teaspoons dried thyme or 2 tablespoons chopped fresh thyme
1/4 teaspoon salt
fresh black pepper
4 large leaves swiss chard, torn into pieces (or any leafy green)

Steps:

  • Preheat a large, heavy-bottomed pan over medium heat. Saute the tempeh in 2 tablespoons olive oil for about 7 minutes, stirring often, until lightly browned.
  • Add red bell pepper and onion and drizzle in remaining oil. Saute for about 5 minutes until veggies are softened but still slightly crunchy. Add garlic and thyme and saute for 2 more minutes.
  • Season with salt and pepper. Add greens and saute until just wilted. Serve immediately.

BASIC TEMPEH 101



Basic Tempeh 101 image

After sauteing the tempeh you may use it in a variety of ways - cut into1 1/4" pieces, spear with a tooth pick and serve as an appetizer with any oriental dipping sauce - or stir fry veggies and add the tempeh instead of meat- you may even add the cut up tempeh to a favorite pasta sauce and serve it over pasta. I am not vegetarian but I enjoy tempeh dishes. The original tempeh 101 recipe was on the back of a "Turtle Bay" Tempeh label (excellent tempeh) Try something new you'll love it If you wish bake the tempeh in a 375 oven for apprx 20 minutes or until it is golden.

8 ounces tempeh, cut in 1/4 inch strips
1 1/2 tablespoons sesame oil
1/4 cup soy sauce
2 1/2 cups water
1 1/2 teaspoons fresh ginger, grated
1 1/2 teaspoons pressed garlic
1 tablespoon sesame oil

Steps:

  • Place the cut tempeh strips into the marinade for 20 to 45 minutes.
  • Drain whatever fluid is left& saute the tempeh in the sesame oil over medium heat until golden.
  • Remove from heat, place on paper towel to remove any excess oil.
  • You may now use the tempeh in a variety of ways (see description).
