BASIC PIZZA SAUCE

Number Of Ingredients 9

1 can (28-ounces) whole peeled tomatoes, in juice
1 small white or sweet onion, finely diced and minced
1 clove garlic, peeled and minced
3 to 4 fresh basil leaves
1 teaspoon dried oregano
Pinch salt
Pinch fresh ground black pepper
Pinch sugar, optional
2 tablespoons olive oil, to saute

Steps:

  • Empty the contents of the tomato can in a mixing bowl and coarsely crush the tomatoes with a fork or your hands, leaving them just a little chunky. In a heavy bottom 2-quart saucepot, add the olive oil, over a medium high flame and heat a little. Add the onions and saute until slightly translucent. Add the garlic and saute about a minute until golden. Quickly add the crushed tomatoes to the mix. Stir well and bring to a simmer. Season with salt and pepper, to taste, and add the fresh basil and oregano. You can add a touch of sugar if desired or if tomatoes are tart. Simmer on a low flame, stirring often for at least 15 minutes. If not using right away, cool down and store in airtight container in the refrigerator, up to 1 week.

1 tablespoon olive oil
1 diced onion
2 minced garlic cloves
1 can (28 ounces) whole peeled tomatoes
1 can (28 ounces) crushed tomatoes
1/4 teaspoon dried oregano
Pinch of sugar (optional)
Coarse salt and ground pepper

Steps:

  • In medium saucepan, heat oil over medium. Cook onion and garlic until translucent, stirring, 3 minutes.
  • Add whole, peeled tomatoes (lightly crushed with hands), crushed tomatoes, oregano, and a pinch of sugar (optional).
  • Simmer, stirring until thickened, 10 to 20 minutes. Season with salt and pepper. Freeze any leftover sauce for up to 3 months.

1 cup diced onion
1 tbsp minced garlic
3/4 can tomato paste
1 can diced tomatoes
2 cans tomato sauce
3 tsp sugar
2 tbsp black pepper
2 tbsp dried basil
2 tsp dried rosemary
1 tbsp oregano

Steps:

  • Sweat onions & garlic in preheated saucepan w/ olive oil. Add all other ingredients and bring to a simmer for one hour. Season to taste. Add water as needed to keep from reducing too far. Simmer until diced tomatoes break down into a paste. Can optionally add browned hot italian sausage in with onion & garlic.

1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons basil
1 teaspoon Greek oregano
2 teaspoons garlic salt
2 teaspoons onion powder
1 tablespoon parsley (fresh, if you can get it)

Steps:

  • Fold everything together in a bowl. When baking the pizza, the sauce will cook adequately. Make this up before you start your pizza dough, and let the sauce sit in the fridge. By the time your pizza is ready to be topped, the flavors will have blended.
  • This freezes well.
