EASY BASIC MEATBALLS
This is originally from the Betty Crocker cookbook. My 3rd and 4th grade daughters are learning to cook and this is simple enough for them, but turns out well enough to serve to guests. (When they use this recipe, they usually sub 1/4-1/2 tsp onion powder for the chopped onion.) It's also a very versatile recipe: sometimes we also add other spices -- oregano, basil, thyme for Italian food or cinnamon and mint for Greek food.) We always oven-bake these, though there are also pan-fry and microwave options in the cookbook that we've not tried. Also good to cook ahead and freeze for later use.

Steps:
- Combine all ingredients and shape into 20-24 meatballs (1 to 1-1/2 inches each).
- To oven bake: preheat oven to 375 degrees F. Place in ungreased 9x13 pan (you may want to line it with foil for easier clean-up).
- Bake 20-25 min or until light brown and cooked through; turn meatballs halfway through, if desired, to help maintain a round shape.
- To pan fry: Cook in skillet on medium heat, turning as needed, until brown (approx 20 min).
- To microwave: Place in micro-proof 12x7 pan and cover loosely.
- Micro on high for 3 minutes; rearrange meatballs.
- Cover again loosely and micro until brown inside, approx 5-7 min more.
- Let stand covered for 3 minutes.

BASIC OVEN-COOKED MEATBALLS
The recipe is just my basic recipe for meatballs. You can add in red pepper flakes if you like spicier meat balls. You can even change it up by changing the herbs you use. Once the meatballs are cook you can combine them in any way you want. They make excellent meatball subs also. If you choose to use fresh herbs be sure to double the amount I used in dried.

BASIC FREEZER MEATBALLS
This is a simple but handy recipe for freezer meatballs. Meatballs, in and of themselves, are very simple but they can be used in so many different ways. Now and then I like to make a large batch of meatballs so I can use them to make several different meals or appetizers.

FAMILY FAVORITE BASIC MEATBALLS
I found this recipe in a cooking magazine that I pick up occasionally. My family loves these with pasta, and they're great in meatball subs with fresh tomato sauce (recipe posted separately). No frying required, either.

Steps:
- Preheat oven to 450 degrees F.
- Stir together first 13 ingredients (bread crumbs to nutmeg) in a large bowl.
- Add the meat and mix thoroughly (I use a fork to mix, to prevent overhandling the meat). Shape meat mixture into 2-inch balls, approximately 1 1/2 oz each by weight (I like to use a #30 scoop to portion them out, then I roll them into balls by hand).
- Spray a shallow pan (such as a baking sheet with an edge all around) with nonstick cooking spray. Place meatballs on the prepared pan, taking care not to crowd them or let them touch).
- Pour the 1 cup of beef broth into the bottom of the pan (make sure bottom of pan is covered). Bake for 25 minutes, or until meatballs are cooked through.
- Reserve the pan juices to make the tomato sauce (recipe posted separately).

NO MESS BASIC MEATBALLS
Some recipes fry meatballs for extra flavor and firm texture, however you can retain plenty of flavor and texture by baking them at a high temperature. "Juicy, aromatic, packed with flavor homemade Italian meatballs." You can cook these meatballs ahead and then freeze them on a baking sheet. When frozen remove and store in a freezer bag.
