ITALIAN WHITE BEAN SOUP



Italian White Bean Soup image

Immerse yourself in a bit of heaven with this Italian White Bean Soup. Buttery and soft cannellini beans pair with tantalizing herbs to be slowly simmered to perfection. Serve with some bruschetta to finish off one beautiful dish.

3 cups white beans
1 leek or yellow onion (diced)
1 carrot (chopped)
1 celery stalk (chopped)
7 cloves garlic (chopped)
1 sprig rosemary
1 sprig sage
1 bay leaves
8 cups water or vegetable stock
1.5 tsp smoked applewood sea salt ((or liquid smoke))
1 -2 Tbsp Nutritional yeast (optional)
bread + garlic for bruschetta ((1 slice/ person))

Steps:

  • Rinse and pick the beans then cover them with water and soak for 6 hours or overnight. Drain.
  • In a large heavy bottom pot heat up a good lug of olive oil and saute the leek (or onion) with the carrot and celery until they begin to soften.
  • Quickly stir in the chopped garlic and cook for a few seconds just until fragrant then add the soaked beans.
  • Pour in the water and bring to a constant simmer. Add the bay, sage and rosemary, cover with a lid and cook for 45 minutes or until the beans are soft and tender to your liking.
  • Check the beans half way through cooking and see if you might need to add extra water if they are absorbing lots of liquid.
  • Once your beans are perfectly cooked remove from heat, stir in the nutritional yeast and season to taste with the smoked sea salt.
  • Meanwhile grill the bread on both sides until nice dark char marks form. Rub each slice on both sides with a garlic clove, lightly brush with some olive oil and finish with sea salt.
  • Ladle the soup into bowls and tear chunks of the garlic bruschetta over the top. Finish with a light drizzle of olive oil on top and enjoy.

2 cans cannellini beans (rinse them)
2 chopped medium onions
5-8 crushed garlic cloves (don't dice as this would make it overpowering)
4 cups chicken or veggie broth ((water down if concerned with sodium))
1 bunch head of leafy grean lettuce (escarole is a great choice!)
3-4 Tablespoons extra virgin olive oil
1/4 cup dry white wine (optional)
1/4 - 1/2 cup grated Romano cheese (or other grated Italian cheese)

Steps:

  • In a large sauce pan saute the onions with 3 Tablespoons olive oil over medium heat until translucent.
  • Add in crushed garlic and saute for 3 minutes.
  • Add cannellini beans and broth.
  • Cook until all beans are tender - mash down some of the beans to add some creaminess to the soup.
  • Add greens and cook down for about 15 minutes.
  • Add in 1/4 cup dry white wine and half the cheese. Stir.
  • Cook another 10 minutes.
  • Serve in bowls and sprinkle remaining cheese on top.

1 pound Italian sausage (or ground beef)
1 onion (diced)
1 ½ teaspoons Italian seasoning
½ teaspoon garlic powder
1 carrot (chopped)
3 cups beef broth (or chicken broth)
15 ounces canned diced tomatoes (with juices)
15 ounces canned white beans (drained and rinsed)
2 tablespoons tomato paste
1 bay leaf

Steps:

  • Brown sausage and onion in a large pot until no pink remains. Drain any fat.
  • Add remaining ingredients and bring to a boil. Reduce heat and simmer 15 minutes or until carrot is tender and flavors have blended.
  • Discard bay leaf and serve.
  • Garnish with parmesan cheese and parsley if desired.

1 pound dry great Northern beans
8 cups water
12 baby carrots
1 cup chopped onion
½ pound chopped ham
¼ cup ketchup
salt and pepper to taste

Steps:

  • In a large bowl, combine the beans with the water, cover and let soak overnight.
  • In a large pot over medium high heat, combine the soaked beans with water, carrots, onion and ham. Add more water to cover all, if necessary. Bring to a boil, then reduce heat to low and let simmer for 4 to 6 hours. Add ketchup just to get desired color. Season with salt and pepper to taste.

1/4 cup balsamic vinegar

30 baby carrots
10 baby zucchini (optional)

1 pound Italian turkey sausage, casings removed
2 carrots, thinly sliced
1 large onion, chopped
1 cup thinly sliced mushrooms
⅓ cup chopped fresh parsley, divided
1 clove garlic, minced
3 cups water
1 (15 ounce) can garbanzo beans (chickpeas)
2 cubes beef bouillon
½ teaspoon dried sage
salt and ground black pepper to taste

Steps:

  • Heat a pot over medium heat. Cook and stir turkey sausage in the hot pot until browned and crumbly, 5 to 7 minutes.
  • Stir carrots, onion, mushrooms, 1/4 cup parsley, and garlic into sausage. Cook and stir until onion is soft, 7 to 10 minutes.
  • Pour water, garbanzo beans with liquid, beef bouillon cubes, and sage into sausage mixture. Bring to a boil, cover the pot, reduce heat to low, and simmer until carrots are tender, about 10 minutes. Skim and discard any accumulated fat. Season with salt and pepper; garnish with remaining 4 teaspoons parsley.
