The flavors of Spain shine in these spicy, Manchego cheese-topped burgers. Plus, dinner can be on the table in less than 20 minutes!

1 poblano chile
1/4 c. light mayonnaise
1 1/2 tsp. grated lemon zest
1 tsp. lemon juice
3/4 lb. lean ground chuck
1/2 lb. dried chorizo
1 large tomato
4 slice sourdough bread
1 c. shredded Manchego cheese
2 c. frisée lettuce

Steps:

  • Preheat grill to medium-hot. Grill chile until blackened on all sides, about 10 minutes. Place in a bowl, cover, and let stand until cool. Peel, seed, core, and chop chile.
  • In a bowl, combine mayonnaise, lemon zest, and juice.
  • Crumble chuck into a large bowl. Add chorizo and chopped chile. Mix gently but thoroughly, until combined. Shape into 4 burgers (3/4-inch thick).
  • Grill burgers 4 minutes per side, or until medium-rare. Grill tomato slices until hot, about 1 minute per side. Sprinkle bread slices evenly with cheese and carefully transfer to grill rack. Grill covered until underside of bread is toasted and cheese melts
  • To assemble burgers, cut each slice of bread in half. Place burgers on half of the bread. Spread lemon mayonnaise on burgers, and top each with a tomato slice and frisée. Top with the remaining bread, cheese side down.

Burgers get a kick from a homemade BBQ spice mix. Then they're cooled down with some creamy coleslaw served right on top.

12 ounces beef chuck, coarsely ground
12 ounces beef sirloin, coarsely ground
2 teaspoons smoked paprika
1 teaspoon brown sugar
1/2 teaspoon cayenne
1/2 teaspoon coriander
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard powder
1/2 teaspoon onion powder
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper
[For Serving:] Hamburger buns, coleslaw and potato chips (optional)

Steps:

  • Heat a large cast-iron skillet over medium-high heat for 20 minutes.
  • Gently mix the chuck and sirloin together in a large bowl, making sure not to overwork the mixture.
  • Combine the paprika, brown sugar, cayenne, coriander, cumin, garlic powder, mustard powder and onion powder in a small bowl. Sprinkle the spice mixture over the beef along with the Worcestershire sauce and fold gently to combine. Form the beef into 4 3/4-inch-thick patties, each about 4-inches in diameter. Sprinkle them generously with salt and a pepper.
  • Put the patties in the hot skillet (do not press down with a spatula). When the patties are seared and browned on one side, about 3 1/2 minutes, flip and cook on the other side until browned and the burgers are medium-rare, about 3 1/2 minutes more.
  • Put the burgers on buns and top with coleslaw and serve with potato chips if using.
