1/2 cup reduced-sodium soy sauce
1/3 cup canola oil
1/4 cup water
2 tablespoons dried minced onion
2 tablespoons sesame seeds
1 tablespoon sugar
4 garlic cloves, minced
1 teaspoon ground ginger
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
2 broiler/fryer chickens (3 to 4 pounds each), quartered

Steps:

  • In a small bowl, combine first 10 ingredients. Set aside 1/3 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag. Add chicken; seal and turn to coat. Refrigerate 8 hours or overnight., Prepare grill for indirect heat, using a drip pan. Place chicken over drip pan; grill, covered, over indirect medium heat 45-60 minutes or until a thermometer reads 170°-175°, turning and basting frequently with reserved marinade during the last 20 minutes.

This is a great way to BBQ a chicken to ensure it will be cooked through and juicy. It only takes 3/4 hr to finish before serving. Use whatever juice you like - cranberry, orange whatever. It looks divine and tase good too

1 large chicken (enough to serve 6)
water, to cover
1 tablespoon salt
1 teaspoon ground ginger
1 star anise or 1 pinch anise
2 teaspoons sugar
1 onion, peeled quartered
2 tablespoons soy sauce
1 tablespoon honey
1/2 cup pineapple juice

Steps:

  • Do ahead: Clean& truss chicken (Tie legs together and secure wings) and place in a large pot, cover with water.
  • Add salt, ginger, anisseed,onion& soy sauce.
  • Bring to a boil, reduce heat ans simmer for 1 hour.
  • Drain water from the chicken and leave it to cool completely.
  • Mix honey and pineapple juice in a cup.
  • BBQ Cooking: Thread the chicken onto a spit from the tail end coming out through the wishbone (Make sure it is balanced).
  • Place over moderate heat with the spit rotating.
  • Baste with the honey juice.
  • Cook until golden about 3/4 hour.

Moist, easy and full of summer flavors! A great recipe that will remind you a breezy night on a tropical island. This recipe is loved by all ages as it is savory yet sweet from the pineapple juice and has an almost caramel flavor from the brown sugar. Preparation time includes allowing chicken to marinate. Stevia can replace brown sugar but I do not have the correct amount needed for this. Also please note that the fat and calorie count is incorrect as you discard most of the marinade. Enjoy!

1/4 cup dark brown sugar, firmly packed
1/2 cup Italian dressing, bottled
1/2 cup pineapple juice
2 tablespoons of fresh mint, chopped
1 1/2 teaspoons fresh ginger, grated
2 garlic cloves, minced
6 boneless skinless chicken breast halves
6 pineapple slices, grilled (optional)

Steps:

  • In a small bowl, combine all ingredients except chicken.
  • In a large, shallow non-aluminum baking dish or plastic bag, pour 1 cup marinade over chicken (Reserve the remaining 3/4 cup marinade in fridge for later); turn to coat.
  • Cover or close bag and marinate in the refrigerator, turning occasionally, for at least 30 minutes and up to 3 hours.
  • Remove chicken from marinade, discarding marinade.
  • Grill or broil chicken, brushing with refrigerated marinade, until chicken is no longer pink.
  • Serve, if desired, with grilled pineapple wedges.

These Grilled Island Chicken Kabobs are so simple to throw together and are perfect for summer.

⅓ cup vegetable oil
¼ cup lemon juice
2 Tablespoons soy sauce
1 teaspoon minced garlic
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon pepper
4 boneless, skinless chicken breasts
1 red onion (cut into large chunks)
1 green bell pepper (cut into large chunks)
4 cups fresh pineapple chunks

Steps:

  • Combine vegetable oil, lemon juice, soy sauce, garlic, oregano, salt, and pepper in a large resealable bag.
  • Place chicken in bag, making sure all pieces are covered.
  • Seal bag and place in fridge and let marinate for at least 4 hours (or overnight).
  • On metal or soaked wooden skewers, thread chicken, onion, pepper and pineapple.
  • Discard remaining marinade in bag.
  • Heat grill to medium heat.
  • Place skewers on grill and cook for 7-8 minutes per side or until chicken is no longer pink in the middle (if using a meat thermometer, make sure it registers 165 degrees F).
  • Remove from grill and serve.

ISLAND CHICKEN

This recipe was given to chef Keith Famie by one of the locals from Bora-Bora. It really showcases the flavor of Polynesia. This is a nice change of pace from your regular roasted chicken. The chicken gets crispy on the outside, but is nice and tender on the inside. Note: Use low-sodium soy sauce so the chicken doesn't get too salty.

2 tablespoons light low sodium soy sauce
1 tablespoon light brown sugar, unpacked
1 cup pineapple juice
1/2 tablespoon fresh ginger, grated
1 garlic clove, minced
1/4 cup honey
1 1/2 teaspoons orange zest, chopped
1 (3 lb) whole chickens
salt and black pepper, to taste
2 tablespoons shredded unsweetened coconut

Steps:

  • Preheat your oven to 400 degrees F.
  • Glaze:.
  • In a saucepan over medium heat, whisk the soy sauce, brown sugar, pineapple juice, ginger, garlic, honey and orange zest together. Reduce the glaze by one-third and then cool to room temperature.
  • Chicken:.
  • Put the chicken on a wire reack iwth a drip pan underneath. Season outside and inside the chicken with salt and pepper, to taste, then put in the oven.
  • Roast the chicken for about 15 mintues, then turn the temp down to 350 degrees F. Roast an additional 20 minutes. Brush the glaze on the chicken and return to the oven for an additional 15 minutes. (If you have a larger chicken you may need to increase the time so the chicken fully cooks.).
  • Remove chicken from the oven and sprinkle the shredded coconut over the whole chicken. Place back in the oven for about 5 minutes, or until the coconut is toasted.
  • Remove the chicken form the oven and let rest for about 5 minutes. Carve and serve!

2 tablespoons brown sugar
1 tablespoon ground allspice
1 tablespoon dried leaf thyme (not powdered)
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon cayenne
1/2 teaspoon fresh ground pepper
6 garlic cloves, peeled
2 inches fresh ginger, peeled and cut into chunks
1/2 scotch bonnet peppers or 3 jalapeno peppers, seeded and coarsley chopped
1 bunch green onion, trimmed and coarsley chopped
1/4 cup vegetable oil
1/4 cup red wine vinegar
2 tablespoons fresh lime juice
3 1/2 lbs chicken, cut into serving pieces

Steps:

  • To make Marinade:.
  • Combine all ingredients except chicken in food processor or blender; Process until smooth.
  • Use immediately or refrigerate for up to two weeks.
  • Makes approximately 1 1/2 cups jerk marinade.
  • Reserve 1/2 cup marinade for basting.
  • Put chicken pieces into large self sealing food storage bag.
  • Pour on remaining 1 cup of marinade and rub it in well.
  • Seal and refrigerate at least 2 hours and as long as 24 hours, turning occasionally.
  • Heat grill to medium-high; oil the grates.
  • Lift chicken from the marinade, letting excess drip off; discard marinade.
  • Place on grill and cover.
  • Cook, turing occasionally, until chicken is blackened in spots, about ten minutes.
  • Move chicken to a cooler part of grill and continue to cook covered, basting from time to time with reserved marinade until chicken is cooked through; 10-15 minutes more.

Number Of Ingredients 6

4 (6-ounce) boneless, skinless chicken breasts
2 teaspoons extra-virgin olive oil
2 1/4 teaspoons salt-free Jamaican jerk seasoning, divided (recommended: The Spice Hunter)
Salt
1 (20-ounce) can no-sugar added pineapple slices, in juice with juice reserved (recommended: Dole)
1 tablespoon brown sugar

Steps:

  • Preheat grill or cast iron grill pan to medium-high heat.
  • Remove any excess fat from chicken and rinse under cold water. Pat dry with paper towels. Use a pastry brush to brush with olive oil and season with 1 1/2 teaspoons jerk seasoning and salt, if desired. Set aside.
  • Drain pineapple slices and reserve juice. Season both sides of pineapple slices with 1/2 teaspoon of jerk seasoning; set aside.
  • In small saucepan, bring reserved pineapple juice, remaining 1/4 teaspoon jerk seasoning, and brown sugar to a boil over high heat. Reduce liquid by 1/2, about 5 minutes. Remove from heat and set aside.
  • Just before grilling, oil grate. Place chicken breasts on grate and grill for 4 to 5 minutes per side or until cooked through. Remove to platter and tent with foil.
  • Place pineapple slices on grate and grill for 1 to 2 minutes per side until grill marks appear and pineapple is heated through.
  • Serve chicken breasts with pineapple slices and warm sauce.
  • NOTE: Chicken may also be broiled 4 to 6 inches from heat source for 6 to 8 minutes per side. Broil pineapple 1 to 2 minutes per side.
