1 3/4 pounds cubed beef stew meat
2 tablespoons ancho chile powder
2 tablespoons packed light brown sugar
1 tablespoon sweet paprika
2 teaspoons ground cumin
Kosher salt and freshly ground pepper
1/3 cup chili sauce (such as Heinz)
1 tablespoon plus 1 teaspoon red wine vinegar
1 tablespoon yellow mustard
2 teaspoons Worcestershire sauce
1 16-ounce can chili beans (do not drain)
Corn chips, shredded cheddar cheese, sour cream and/or sliced scallions, for topping

Steps:

  • Toss the beef with the chile powder, brown sugar, paprika, cumin, 1/2 teaspoon salt and a few grinds of pepper in a 6- to 7-quart slow cooker. Whisk the chili sauce with 1 tablespoon vinegar, the mustard and Worcestershire sauce; add to the slow cooker along with the beans. Cover and cook on low until the beef is tender, 7 to 8 hours.
  • Uncover and stir to combine; let sit, uncovered, 10 minutes. Stir in the remaining 1 teaspoon vinegar. Serve with corn chips and desired toppings.

1 pound ground beef
1 small onion, chopped
1 can (16 ounces) kidney beans, rinsed and drained
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (11 ounces) whole kernel corn, drained
3/4 cup picante sauce
1 tablespoon chili powder
1/4 to 1/2 teaspoon garlic powder
Corn chips, sour cream and shredded cheddar cheese, optional

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , Transfer to a 3-qt. slow cooker. Stir in the beans, tomatoes, corn, picante sauce, chili powder and garlic powder. Cover and cook on low for 3-4 hours or until heated through. Serve with corn chips, sour cream and cheese if desired.

6 ears corn, with husks
1/2 cup real butter, softened
1/2 teaspoon lime zest
3 tablespoons lime juice
1 -2 teaspoon ground red chilies or 1 -2 teaspoon chili powder

Steps:

  • Prepare chili-lime spread by mixing all the ingredients together.
  • Heat coals or gas grill.
  • Remove large outer husks from each ear of corn;turn back inner husks and remove silk.
  • Spread each ear of corn with about 2 teaspoons of chili-lime spread;reserve remaining spread.
  • Pull husks up over ears and secure ends with fine wire(I don't secure mine)
  • Grill corn uncovered 3 inches from MEDIUM heat 20-30 minutes,turning frequently,until tender.
  • Serve corn with remaining spread.
  • ***TIP***I grill my corn on my gas grill,on the top rack, covered,and it came out the same as directed.

6 tablespoons butter
2 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/8 teaspoon cayenne
8 ears corn

Steps:

  • Melt butter in small pan over medium heat. When melted, add garlic, chili powder, cumin, paprika, and cayenne and cook about 1 minute. Set aside.
  • Prepare the corn by removing all but the innermost layer of the husk. The kernels should be covered but visible through the layer. Use scissors to snip off the silk ends.
  • Grill the corn over medium-hot fire, turning corn every 2 minutes until the dark outlines of the kernels show through the husk and the husk is charred and beginning to peel away from the kernels, about 8-10 minutes.
  • Transfer the corn to a platter. Remove and discard charred husk and silk. Using brush, brush each ear with butter mixture.

1 can (22 oz) southern pit barbecue grilling beans, undrained
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 box (9 oz) frozen corn
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 cup shredded Cheddar cheese (2 oz)
2 cups corn chips

Steps:

  • In heavy 3-quart saucepan, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Stir in remaining ingredients except cheese and corn chips. Heat to boiling; reduce heat. Simmer uncovered 5 to 10 minutes, stirring occasionally, until corn is tender. Top individual servings with cheese and corn chips.
