2 tablespoons butter
2 crisp apples, such as gala or honey crisp or golden delicious, sliced
1 large red onion, quartered and thinly sliced
A little freshly grated nutmeg
About 3 cups poached chicken, pulled
Hard rolls, split
Grated white sharp Cheddar, for topping
Sliced dill or bread and butter pickles, for topping
EVOO, for drizzling
4 ounces deli-cut good-quality smoky bacon, chopped
2 cloves garlic, finely chopped
1 onion, finely chopped
1 cup organic ketchup
1 cup chicken stock
1/4 cup Grade A maple syrup
1/4 cup grainy Dijon mustard
About 3 tablespoons Worcestershire sauce
About 2 tablespoons cider vinegar
Coarse black pepper

Steps:

  • Heat a drizzle of EVOO in a saucepot over medium-high heat. Add the bacon and brown to crisp. Then add the garlic and onions and stir to soften, about 3 minutes. Add the ketchup, stock, syrup, mustard, Worcestershire, vinegar and pepper. Stir and simmer to thicken, 20 minutes.
  • Heat a drizzle of EVOO in a large skillet over medium-high heat, add the butter and melt. Add the apples and red onions. Season with some salt, pepper and nutmeg. Cook to tender-crisp, 5 to 6 minutes. Add the chicken and sauce and combine. Cool and store for a make-ahead meal. Reheat over medium heat and serve the BBQ chicken, apples and onions on the rolls topped with cheese and pickles.

8 slices bacon
4 skinless, boneless chicken breast halves
¾ cup barbeque sauce (such as Cattlemen's® or Jack Daniel's®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Cook bacon in a skillet over medium heat until the edges begin to crisp, about 5 minutes; drain bacon on paper towels. Wrap each chicken breast with 2 slices of bacon in an x-shaped pattern and place into the prepared baking sheet with bacon ends underneath.
  • Bake in the preheated oven for 30 minutes; spread barbeque sauce over chicken breasts and bake until the juices run clear, the chicken is no longer pink inside, and an instant-read meat thermometer inserted into the thickest part of a breast reads at least 160 degrees F (70 degrees C), 10 to 15 more minutes.

2 lbs boneless, skinless chicken breast (3-4 chicken breasts)
1 sweet yellow onion
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/3 cup BBQ sauce
1/2 cup cheddar cheese
1/4 cup crumbled bacon
2 tbsp chopped green onions

Steps:

  • Preheat the oven to 400˚F.
  • Thinly slice the onion and place it in the bottom of a casserole dish.
  • Combine the salt, pepper, garlic powder, and onion powder and season both sides of the chicken. Lay the chicken on top of the onions.
  • Spread the BBQ sauce equally over each chicken breast. Sprinkle cheese over the top of the dish.
  • Cover and bake covered for 25 minutes, then uncovered for an additional 15-20 minutes or until chicken is cooked through (165˚F internal temperature.)

Sweet and spiced barbecue rubbed chicken can be cooked in a pan or grilled then is topped with a sweet and tangy onion bacon jam for a tasty weeknight meal.

4 slices bacon, chopped
2 onions, thinly sliced
3 Tablespoons bourbon
1 teaspoon salt
1 teaspoon black pepper
2 Tablespoons brown sugar
1/3 c. vinegar
2 teaspoons Worcestershire sauce
1 1/2 lb. chicken breasts or chicken breast tenders
2 Tablespoons brown sugar
1 Tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper

Steps:

  • To make the jam place the bacon in a sauce pan over medium heat. Cook for 5-7 minutes or until browned.
  • Remove from pan and drain on a paper towel.
  • In the same pan add the onions over medium low heat. Cook, stirring occasionally, until the onions have begun to caramelize.
  • Add the bourbon to the onions and saute for 1 minute.
  • Add the salt, pepper, brown sugar, vinegar, and Worcestershire sauce. Return the bacon to the pan. Simmer for 5 minutes or until the mixture has thickened.
  • In a small bowl combine the brown sugar, chili powder, garlic powder, paprika, salt, and pepper. Mix well.
  • Rub the mixture all over the chicken breasts or tenders.
  • Heat a tablespoon of oil in a skillet over medium heat. Add the chicken and cook for 5-7 minutes per side or until the chicken is cooked through.
  • Divide the chicken between the plates. Top with the bacon jam.

BACON-ONION JAM

Here is a shockingly good accompaniment to chicken-liver pâté that came to The Times from the kitchen of the Fort Defiance in Brooklyn. But don't think that is its only use. Bacon-onion jam is also a terrific sandwich condiment. Paired with crumbled blue cheese, it's a fantastic topping for a serious, grown-up pizza pie. And because the recipe makes a lot of jam, all three options are possible. One note: Take your time. The point is to cook the mixture until it has achieved full jamminess. The onions should really caramelize. Covered, it will keep in the refrigerator for a week or so.

3/4 pound slab bacon, diced into cubes
4 medium-size white or Spanish onions, peeled and diced
1 1/2 teaspoons mustard seed
2 1/2 tablespoons dark brown sugar
1/4 cup balsamic vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Set a Dutch oven or heavy pot over medium heat, and add the bacon. Cook, stirring occasionally, until the fat is completely rendered and the bacon has started to crisp, approximately 12 to 15 minutes.
  • Drain all but 1 tablespoon of the fat from the pot, and add the onions, mustard seed, brown sugar, vinegar and 3 tablespoons of water. Stir to combine, then cover the pot, lower the heat and allow the mixture to cook undisturbed for 15 or 20 minutes. Remove the top, stir again and then partly cover the pot. Allow the mixture to cook until most of the liquid is gone and the onions have achieved a dark brown jamminess, approximately 60 to 70 minutes. (Add a little more water as needed.)
  • Taste the jam, and add salt and pepper if necessary.
  • Remove mixture from heat, and allow to cool slightly. Spoon the jam into a jar or bowl, then allow to cool completely. Store, covered, in the refrigerator for up to a week.

Bacon jam isn't just for burgers, add it to grilled cheese, waffles or roasted veggies, the possibilities are endless. I prefer the ratio of more onion to bacon but feel free to add additional bacon. I've made the consistency thicker than a traditional jam.

5 ounces smoked bacon, diced
3 cups finely chopped onions
2 tablespoons high-quality balsamic vinegar
1 tablespoon real maple syrup
2 tablespoons water, divided

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until fat has rendered and bacon is evenly browned but not yet crisped, about 5 minutes.
  • Remove all but 2 tablespoons of bacon fat. Add onions to the pan with the bacon and cook, stirring frequently, over medium heat until onions are soft and lightly browned, 5 to 6 minutes. Lower heat to a simmer and add balsamic vinegar, maple syrup, and 1 tablespoon water.
  • Simmer until jam comes together, 15 to 20 minutes. Stir in remaining tablespoon water and remove from heat.
