about a 5kg/ 11 lb piece of beef brisket
500 ml/ 18 fl oz beef stock
1 tbsp sunflower oil
1 small onion , finely chopped
3 garlic cloves , crushed
500 ml/ 18 fl oz tomato ketchup
100 ml/ 3.5 fl oz Worcestershire sauce
75 ml/ 2.5 fl oz lemon juice
2 tbsp brown sugar
1 tbsp malt vinegar
2 tsp Dijon mustard
1 tsp crushed chilli flakes
1 tsp Tabasco sauce
1 tsp dried thyme
2 tbsp each chilli powder and mustard powder
1 tbsp each paprika , ground cumin, garlic powder, ground black pepper, caster sugar
1 bay leaf , crushed

Steps:

  • To make the barbecue sauce, heat the oil in a frying pan, then cook onion and garlic for a few mins until soft. Add the rest of the sauce ingredients to the pan with a good pinch of salt and simmer for 20 mins. Use a hand blender or food processor to whizz to a smooth purée.
  • Heat oven to 150C/130C fan/gas 2. Make the rub by mixing all the ingredients together with a pinch of salt. Rub the mix all over the beef and set aside.
  • In a large roasting tin, mix the beef stock and ½ the barbecue sauce. Add the brisket to the tin, cover tightly with foil, then cook for 4-5 hrs until the meat is really tender when you push a fork into it. The beef can be prepared the night before - just leave it to cool in the tin covered with foil, but don't refrigerate.
  • To finish the beef, get a barbecue fired up and wait until the coals are completely ashen - you want a low, not fierce, heat. Lift the beef out of the roasting tin and place on the barbecue to char. If your barbecue has a lid, close it now. Cook for about 20 mins, turning it carefully with tongs, until lightly charred all over and heated through. Lift onto a board and serve sliced with the remaining barbecue sauce on the side.

BARBECUE SAUCE:
2 cups ketchup
1 cup packed brown sugar
1 cup unsweetened pineapple juice
2/3 cup light corn syrup
1/2 cup finely chopped onion
1/2 cup apple juice
1/4 cup chili powder
2 to 4 tablespoons hot pepper sauce
4 teaspoons Worcestershire sauce
1 to 4 teaspoons Liquid Smoke, optional

Steps:

  • In a small bowl, combine the seasonings. Rub 2 teaspoons over brisket. (Place remaining seasoning mixture in an airtight container; save for up to 3 months for another use.), In a large bowl, combine the sauce ingredients; stir until brown sugar is dissolved. Pour 2 cups into a large resealable plastic bag; add the brisket. Seal bag and turn to coat; refrigerate for 8 hours or overnight, turning several times. Cover and refrigerate remaining sauce., Prepare grill for indirect heat, using a drip pan. Drain and discard marinade from brisket; pat dry with paper towels. Place brisket over pan; grill, covered, over indirect low heat for 30-45 minutes on each side or until browned. , Transfer brisket to a heavy-duty disposable roasting pan. Pour 1-1/4 cups of reserved sauce over brisket. Cover with a double layer of heavy-duty foil and seal tightly. , Grill, covered, over indirect low heat for 3-4 hours or until meat is fork-tender. 2 -3 lbs fresh beef brisket
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon celery seed
1/8 teaspoon pepper
1/2 cup catsup
1/2 cup chili sauce
1/4 cup packed brown sugar
2 tablespoons vinegar
2 tablespoons Worcestershire sauce
1 1/2 teaspoons liquid smoke
1/2 teaspoon dry mustard

Steps:

  • Trim fat from brisket. If necessary, cut to fit into crock pot.
  • Combine chili powder, garlic powder, celery seed and pepper; rub evenly over meat. Place meat in a 3 1/2-5 quart crock pot.
  • For sauce, combine catsup, chili sauce, brown sugar, vinegar, Worcestershire sauce, liquid smoke and dry mustard. Pour over brisket.

1 teaspoon celery salt
1 clove garlic, minced

1 1/4 cups ketchup
1/4 cup apple cider vinegar

Steps:

  • Combine the brown sugar, chile powder, cumin, celery salt, garlic, and salt and pepper to taste in a small bowl. Rub all over the brisket, then transfer to a 5-to-6-quart slow cooker. Combine 3/4 cup ketchup, the vinegar and Worcestershire sauce in another small bowl. Pour over the brisket along with 3/4 cup water. Cover and cook on low, 8 hours.

Steps:

  • In small bowl, mix brown sugar, chipotle chili powder, cumin, celery salt, garlic powder, salt and pepper.

One 1-ounce packet powdered onion soup mix
2 teaspoons Worcestershire sauce
1 cup mayonnaise
3 tablespoons distilled white vinegar
1 teaspoon hot sauce
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
12 potato buns, split

Steps:

  • For the brisket: Add half of the sliced onions to a slow cooker. Sprinkle the brisket on one side with salt and pepper and add to the slow cooker, seasoned-side down. Sprinkle the other side with salt and pepper. Top with the remaining onions and the soup mix and Worcestershire.
  • Cover and cook on high for 6 hours. Let the brisket sit in the onion juices on warm for 30 minutes, or until ready to serve.
  • For the white barbecue sauce: Whisk together the mayonnaise, vinegar, hot sauce, garlic powder, 1/2 teaspoon salt and a generous amount of pepper. Refrigerate until ready to serve.

  • Make the rub. In a small bowl, combine the ingredients for the rub and whisk to mix. (Break up any lumps with the whisk or your fingers.) Place the brisket in a roasting pan and generously sprinkle on both sides with the rub, using about 3 tablespoons per side and patting it onto the meat with your fingertips. You can cook the brisket right away, but it will be better if you let it cure with the rub in the refrigerator, covered, for 4 hours, or up to a day ahead. Make the mop sauce. Many years ago, I found this recipe in a local ladies recipe booklet called, "Cornsilk." I have often used it to take to friends and family so they can reheat it and serve when needed. It freezes well, too. I try to use a brisket but does well with a boneless beef roast or bottom round roast. Serve with hamburger buns.

1 teaspoon salt and pepper (to taste)
3 (8 ounce) cans tomato sauce
1/2 cup water
1/2 cup onion, chopped
1 -2 garlic clove, minced
1/4 cup red wine vinegar
3 tablespoons Worcestershire sauce
1/3 cup brown sugar
2 tablespoons honey
1 teaspoon chili powder
1 teaspoon salt
1 small lemon, thinly sliced
1 dash liquid smoke

Steps:

  • Sprinkle roast with salt and pepper.
  • Roast in a covered roaster at 325 degrees for 3 to 4 hours or until tender; cool and refrigerate a short while for easier slicing.
  • Mix remaining ingredients together except for the lemon.
  • Cut off excess fat on roast and slice meat thinly. Cut across the grain.
  • Place layers of meat in a 9 by 12 casserole dish and top each layer with sauce. I usually get 2 layers of meat with a 5 pound brisket.
  • Put thinly sliced lemon over the top layer, cover and bake at 350 degrees for 1 hour or until heated through.
  • Remove lemon slices before serving.
  • This freezes well; thaw overnight and then reheat. I remove lemon slices before freezing.

2 beef briskets, approximately 5 pound each, trim the fat
4 to 6 (14-ounce) cans beef broth
Spicy Barbecue Sauce, recipe follows
2 teaspoons dry mustard
2/3 cups apple cider vinegar
2 tablespoons Worcestershire sauce
1/2 cup chili sauce
1/2 cup brown sugar
2 teaspoons salt
1/2 teaspoon hot pepper sauce
2 medium onions diced

Steps:

  • Preheat oven to 350 degrees F.
  • Place the briskets in a large roasting pan. Add enough beef broth to cover briskets by a minimum of 1 inch. Cover the roasting pan and cook 3 to 4 hours until fork inserts easily into meat.
  • During the last hour of cooking reduce the oven temperature to 325 degrees F. You will notice that the beef broth has been reduced and the top of the brisket is visible. Pour the "Spicy Barbecue Sauce" on the top and continue baking until done. Check the brisket approximately every 20 minutes. Serve briskets with pan juices over mashed potatoes.
  • Combine ingredients and add to beef brisket during the last hour of cooking.

BRISKET IN COFFEE-BARBECUE SAUCE

3/4 cup vegetable oil
1 large Spanish onion, minced
5 cloves garlic, minced
1 teaspoon crushed-red-pepper flakes
1 tablespoon tomato paste
7 tablespoons light-brown sugar
5 cups brewed coffee
1/2 cup cider vinegar
1 28-ounce can peeled, chopped tomatoes
Kosher salt and freshly ground black pepper
1 brisket (about 4 pounds)

Steps:

  • In a medium kettle, heat 1/4 cup of the oil over medium heat. Add the onion and cook, stirring, until soft and golden brown, about 7 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Stir in the red pepper. Add the tomato paste and cook, stirring frequently, about 1 minute. Stir in the brown sugar. Pour in the coffee, vinegar and tomatoes, bring to a boil, then lower to a simmer. Simmer 10 minutes. Set aside to cool.
  • Working in small batches, transfer the tomato-coffee mixture to a blender and puree. Season with salt and pepper to taste. Set aside.
  • Preheat the oven to 275 degrees. Season the brisket with salt and pepper. In a Dutch oven with a tight-fitting lid, heat the remaining 1/2 cup oil. Brown the brisket on both sides. Drain off the oil, leaving the brisket in the Dutch oven. Turn the brisket so that the fat side is facing up and then coat it with the pureed tomato-coffee mixture. Cover the Dutch oven and place it in the oven. Bake for 3 hours, basting frequently.
  • Remove the lid and bake uncovered until the brisket is glazed and very tender, about an hour and a half more. Remove the brisket and set it aside to rest for 10 minutes, covered with foil, before slicing thinly across the grain.

1 tablespoon smoked paprika
Kosher salt and freshly ground pepper
1 tablespoon olive oil
1 cup ketchup
2/3 cup cider vinegar, plus more for seasoning
1/4 cup molasses
3 tablespoons brown sugar
1 tablespoon mustard powder
3 tablespoons bourbon, plus more for seasoning
1 tablespoon Worcestershire sauce
10 potato rolls, for serving

Steps:

  • Adjust the oven racks to fit a large Dutch oven; preheat the oven to 350 degrees F. Rub the brisket with the paprika, 1 tablespoon salt, and 1/2 teaspoon pepper. Heat the oil in a large Dutch oven over medium-high heat. Add the brisket and sear well on all sides, about 10 minutes.

This original recipe was printed in the insert cookbook that came with my crock pot many years ago. I adjusted it to suit our taste. This brisket is often requested for potlucks and during our football booster club days, it was prepared and sold at all home games. It can be served on buns with sliced onions and dill pickles or by itself. The cooking time reflects the marinade and cooling time.

1 (1 1/4 ounce) envelope commercial onion soup mix (I use Onion Seasoning Mix Onion Seasoning Mix)
2 ounces bottled liquid smoke
1 1/2 cups barbecue sauce

Steps:

  • Place brisket on large piece of foil.
  • Sprinkle with onion seasoning and pour liquid smoke over, fold brisket in half if needed to make a compact packet that will fit in the crock pot.
  • Seal foil, place brisket in refrigerator overnight.
  • In the morning, place brisket in the crock pot on low heat, cook 8 hours.
  • Remove brisket, strain broth into glass jar.
  • Place brisket and broth in refrigerator and allow to cool completely.
  • Skim fat from broth and mix 1 1/2 cups broth with barbecue sauce.
  • Return the sliced brisket to crock pot and pour sauce over.
  • Turn on low and allow to cook for 4 to 6 hours.

1 beef brisket (3 1/2 lb)
1 cup barbecue sauce

Steps:

  • In small bowl, stir together all ingredients except beef and barbecue sauce. Rub mixture over beef. Place in resealable food-storage plastic bag; refrigerate at least 8 hours or overnight.
  • In 3- to 4-quart slow cooker; place beef; pour barbecue over top.
  • Cover; cook on Low heat setting 6 hours.
  • Increase heat setting to High; cook 1 to 2 hours longer or until beef falls apart.
  • Serve with additional barbecue sauce.

Pit Smoked Beef Brisket and Hot Smoked Sausage with Texas Barbecue Sauce image

7 pound brisket
4 tablespoons salt
2 tablespoons brown sugar
2 teaspoons dry mustard
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons dried basil
3/4 teaspoon dried coriander
1/2 teaspoon dried savory
1 teaspoon black pepper
1/2 teaspoon ground cumin
2 dried bay leaves, ground
2 tablespoons brisket rub
1 pound slab bacon, rind removed, diced
1/4 cup onion, minced
1/4 cup garlic, minced
1/4 cup celery, minced
8 bottles Dock Street Lager beer
1 teaspoon dry mustard
1 teaspoon black pepper
1 teaspoon lemon zest
1 tablespoon lemon juice
2 tablespoons soy sauce
2 tablespoons cider vinegar
8 beef sausages from Southside Market and BBQ; Elgin, Texas

Steps:

  • Mix all the ingredients together, saving 1/4 cup, and rub the brisket vigorously. Store brisket well sealed overnight in a shallow pan.;
  • In a medium sauce pot, place bacon, onion garlic, and celery. Cook over medium heat until browned. Add 4 bottles of beer to the pot. It's going to be a long day; you will need the other beers for the cook. Bring the pot to a boil. Add rub, mustard, pepper, zest, juice, soy sauce and vinegar. Continue to slowly simmer, for 1 hour, as the meat smokes.
  • Start a charcoal fire on one side of the grill. Add post oak pieces that have been well soaked (1 hour), or still green and uncured. Control the heat of the fire by closing the air vents to the grill. Place brisket, fat side up, on indirect heat (not over the fire) and close the top of the grill. Grill should be 300 degrees. Baste meat continuously with mop every 30 minutes. When turning meat always carefully use a spatula and never prick the meat. Tongs or forks may pierce the meat allowing juices to escape making the meat dry and tough. Brisket will be done in about 4 1/2 to 5 hours or when internal temperature reaches 165 degrees. Allow to rest 30 minutes before slicing.
  • Remove any excess fat and slice brisket across grain 3/8 inches thick. Texans don't use barbecue sauce, but they haven't tried these. Serve hot smoked sausages split, brisket sliced, BBQ sauce, white bread and pickled peppers.
  • Place sausages on smoking grill beside the brisket with indirect heat, not over the fire. Cook at 300 degrees for 1 1/4 hours.
  • Chipolte BBQ Sauce: 2 tablespoons vegetable oil 1/2 onion, diced 3 cloves garlic, smashed 1 cup chopped tomatoes 1 cup ketchup 1/2 cup coffee 3 tablespoons molasses 2 tablespoons Dijon mustard 3 tablespoons brown sugar 1 tablespoon Worcesterchire sauce 2 chipotle peppers In a medium saucepan, over medium heat, place oil, onion and garlic. Cook for 3 minutes. Add the tomatoes and simmer for about 8 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 15 minutes. Remove from heat and puree in food processor. Serve right away or let cool and refrigerate.
  • Pickled Peppers: 3 cups cider vinegar 3 cups pineapple juice 1 tablespoon cracked peppercorns 2 teaspoons thyme leaves 2 bay leaves 1 teaspoon salt 40 jalapenos 25 garlic cloves 1 red onion, peeled and chopped 2 carrots, peeled and shredded
  • In a large saucepan over high heat, bring vinegar, juice, peppercorns, thyme, bay leaves and salt to a full boil. Add jalapeno, garlic, onion and carrots and bring to a boil again. Remove from heat. Transfer to a large container and seal.

1 fresh beef brisket (3 pounds)
1 cup barbecue sauce
1/2 cup finely chopped onion
2 tablespoons Worcestershire sauce
1 tablespoon prepared horseradish
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Cut brisket in half; place in a 5-qt. slow cooker. Combine the barbecue sauce, onion, Worcestershire sauce, horseradish, salt and pepper; pour over beef. Cover and cook on low for 6-7 hours or until meat is tender., Remove beef and keep warm. Transfer cooking juices to a large saucepan; bring to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Slice meat across the grain; serve with gravy.

Steps:

  • Combine salt, pepper, chili powder and bay leaves.

1 fresh beef brisket (5 pounds)
2 to 4 teaspoons Liquid Smoke, optional
1/2 teaspoon celery seed
1/4 teaspoon pepper
1 cup chili sauce
1/4 cup barbecue sauce

  • Place flour in a large oven roasting bag; shake to coat bag. Rub brisket with Liquid Smoke if desired, celery seed and pepper; place in bag. Place in a roasting pan. Combine chili sauce and barbecue sauce; pour over brisket. Seal bag. , With a knife, cut six 1/2-in. slits in top of bag. Bake at 325° for 3-1/2 to 4 hours or until meat is tender. 1 gallon cold water
12 ounces kosher salt
2 cups canned beef stock or broth
3/4 cup brown sugar
1/4 cup whole black peppercorns
5 sprigs fresh parsley
4 cloves garlic
3 bay leaves
1 small carrot, sliced
1 celery stalk, sliced
1 small onion, sliced
One 8-pound whole beef brisket
2 cups brown sugar
6 ounces granulated sugar
1 cup cornstarch
1 cup paprika
4 tablespoons chili powder
2 tablespoons kosher salt
1 tablespoon ground cumin
2 teaspoons onion powder
2 teaspoons ground black pepper
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1 teaspoon ground white pepper
1/4 cup vegetable oil
1 onion, diced medium
1 teaspoon minced fresh garlic
1 teaspoon medium diced fresh ginger
56 ounces ketchup
1/2 cup mustard
1/2 cup brown sauce (see Cook's Note)
1/2 cup light brown sugar
1/2 cup red wine vinegar
1/2 cup Worcestershire sauce
1/4 teaspoon kosher salt
Juice of 1 lemon
10 crusty Italian rolls

Steps:

  • For the brisket brine: Put the water, salt, stock, brown sugar, peppercorns, parsley, garlic, bay leaves, carrot, celery and onion in an 8-quart stainless pot. Bring to a boil, then stir and turn off the heat. Allow the brine to completely cool.
  • Place the beef brisket in a glass or stainless pan and pour brine over the top of the brisket. Cover with plastic wrap and refrigerate for 48 hours.
  • Remove the brisket from the brine and pat off excess liquid with paper towels.
  • For the Tennessee rub: Mix the brown sugar, granulated sugar, cornstarch, paprika, chili powder, salt, cumin, onion powder, black pepper, garlic powder, cayenne and white pepper in a bowl.
  • Rub both sides of the brisket with the Tennessee rub. Set up your smoker with 3/4 pound of hard wood (preferably hickory). Put the brisket on a wire rack. Set your smoker temperature to 190 degrees F.
  • Smoke the brisket 8 hours. Remove the brisket from the smoker and allow it to rest for at least 45 minutes.
  • For the barbecue sauce: Heat a stainless steel or lined 4-quart saucepan on medium heat until the pan is hot. Add the oil along with the onions, garlic and ginger. Saute for 5 minutes, then add the ketchup, mustard, brown sauce, brown sugar, vinegar, Worcestershire, salt and lemon juice. Simmer for 2 hours, stirring occasionally to keep it from burning on the bottom. You may make your barbecue sauce ahead and keep in your refrigerator for 7 days. The sauce also freezes very well.
  • To make your sandwiches, slice and warm your Italian rolls in a toaster oven or nonstick pan. Cut a generous portion of brisket for each and place on a toasted roll. You can either top with the barbecue sauce or serve it on the side and dip your sandwich as you eat it. Repeat to make 9 more sandwiches.
