MINNEAPOLIS BAR BURGERS AKA JUICY LUCY BURGERS
Steps:
- Preheat the oven to 400 degrees F.
- For the caramelized onions: Heat the oil in a large cast-iron pan over medium heat, add the onions and cook, stirring occasionally, until soft and caramelized, about 10 minutes. Season with salt and pepper to taste. Transfer to one side of a rimmed baking sheet and set aside. Reserve the cast-iron pan.
- For the burgers: Place the buns cut-side up on the other side of the rimmed baking sheet, brush the cut sides with some canola oil and sprinkle with salt and pepper. Toast in the oven until golden brown, 4 to 5 minutes.
- Divide the meat into 8 equal portions (about 3 ounces each). Shape each portion with your hands into a thin patty and place on another baking sheet. Places 2 slices of cheese each in the center of 4 of the patties. Place the remaining patties on top of the cheese. Pinch together the edges of both patties to seal. Sprinkle both sides of each burger with salt and pepper.
- Heat the same cast-iron pan over high heat. Add the canola oil and let heat until it begins to shimmer. Put the burgers in the pan and cook, flipping once, until golden brown on both sides and cooked to medium doneness, about 8 minutes total.
- Carefully add a splash of water and immediately cover tightly with a lid. Cook about 1 minute longer (the steam will ensure the cheese in the center melts completely).
- Place the burgers on the bottom buns and top with the ketchup, sliced pickles, caramelized onions and the top buns and serve immediately.
BAR-B-Q-BURGERS
This recipe comes from "Better Homes and Gardens, Junior Cook Book" from 1955. My mom made these when she was a kid, and for us when we were kids! It's a nice "sloppy joe" style sandwich without the tomato sauce.

- 1. Mix all ingredients together in large bowl as if you are making a meatloaf until they stick together well.
- 2. Form into 4 1/4 lb burger patties (use regular hamburger not ground sirloin etc, too dry)
- 3. Cook in pre-heated iron skillet for 10 minutes or until browned & juices come to top. Flip and cook other side for another 5 minutes. Pop onto a grilled bun and serve your choice of condiments. I use banana peppers, sliced tomato and lettuce.

- 1. For the sauce, combine first 10 ingredients and bring to a boil. Remove from heat and set aside 1 cup to serve with burgers. In lg. bowl, combine egg, oats, 1/4 c. or remaining sauce, onion salt, garlic salt, pepper and salt. Crumble ground beef over top and mix well. Shape into 6 patties. Grill, covered over med. heat 6-8 min. per side, basting with 1/2 c. sauce during last 5 min of grilling time. Serve on buns with your favorite toppings and reserved sauce.

There are plenty of fancy recipes for hamburgers, but as most of you know.. the best burgers are those ones that you get at the neighborhood bar. Whats the secret? The big secret is that there is no secret! The grill cook is just trying to fill the order as quickly as possible with no special effort. The simplicity is what makes bar burgers taste so good. One of the keys is to buy meat labeled hamburger.. no lean ground meat for these. Look for the packages with the grind marks visible.. These are the best!!

Steps:
- Heat griddle or cast iron pan on medium high heat.
- Without disturbing grind marks, carefully divide hamburger into 6 sections.
- Place hamburger sections on hot griddle.
- Press hamburgers down onto griddle with a heavy spatula. Use pressure. this causes the hamburgers to stick to the griddle and prevents shrinkage.
- Sprinkle tops with salt and pepper and any other spices you may want to use.
- When the edges look cooked and juices rise to the top, turn over but dont press down again.
- When bottoms are browned, and burger is to desired doneness, remove from griddle and set aside.
- Cover with foil or wax paper.
- Spread cut sides of buns lightly with butter.
- Place butter side down on griddle until lightly browned.
- Place burgers on buns and top with your favorite toppings.
