1 ½ cups sifted whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt

3 ripe bananas, mashed
½ cup unsalted butter, melted
1 large egg
¾ cup white sugar
1 teaspoon vanilla extract
¼ cup packed dark brown sugar
2 tablespoons whole wheat flour
½ teaspoon ground cinnamon
1 tablespoon unsalted butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray 10 muffin cups with cooking spray.
  • Whisk 1 1/2 cups sifted whole wheat flour with baking soda, baking powder, salt, and 1/2 teaspoon cinnamon in a large bowl. Mix together mashed bananas, 1/2 cup melted unsalted butter, egg, white sugar, and vanilla extract in a separate bowl. Gently fold banana mixture into dry ingredients just until moistened; do not overmix. Spoon batter into prepared muffin cups, filling them about 3/4 full.
  • Mix dark brown sugar with 2 tablespoons whole wheat flour and 1/2 teaspoon cinnamon in a bowl, stirring until combined; mash 1 tablespoon unsalted butter into the mixture with a fork until streusel topping resembles crumbs. Sprinkle topping over muffins.
  • Bake muffins in the preheated oven until a toothpick comes out clean or with moist crumbs, about 20 minutes.

1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon cinnamon (divided)
1 egg
1 cup banana (mashed)

1/4 cup vegetable oil
1/2 cup walnuts (chopped)
1/2 cup brown sugar
1/4 cup oats
2 tablespoons unsalted butter (melted)

Steps:

  • Heat oven to 350 degrees.
  • Prepare a 12 cup muffin pan with paper muffin cups.
  • In a bowl combine the brown sugar, 1/4 cup of the flour, oats, melted butter, and 1/2 tsp of the cinnamon, mix and press together with a fork until it looks crumbly, and set aside.
  • In another mixing bowl, combine the remaining 1 1/2 c flour, baking powder, baking soda, 1/4 tsp cinnamon, and 1/8 tsp salt. Set aside.
  • In another bowl combine the egg, mashed bananas, sugar, and oil, mix well then add to the flour mixture. Stir until just moistened, fold in the walnuts.

2 1/2 teaspoons baking powder
1/2 teaspoon baking soda

3 ripe bananas, mashed
2/3 cup whole milk
1 teaspoon vanilla extract
1 1/2 cups raspberries (fresh or frozen)

Steps:

  • To make the streusel, by hand, with a fork or pastry blender, mix the brown sugar, flour, cinnamon and butter until crumbly and well blended.
  • Preheat oven to 375*F. LIne 12 muffin cups with paper cupcake liners, or coat with melted butter and dust with flour, or spray generously with cooking spray. To make sure the muffins release with ease, coat the top of the pan as well as the inside of the cups when you grease the tins.
  • Sift together the flour, baking powder, baking soda and salt; set aside. Whisk the butter and brown sugar in a large bowl, then whisk in the eggs. Add the bananas, milk and vanilla. Add the dry ingredients all at once, stirring just until blended. Quickly fold in the berries. Divide into prepared muffin pans and sprinkle with 1/4 cup of the butter streusel (put remainder of the streusel in a jar, cover and refrigerate for another use, it's very good sprinkled on all kinds of muffins).
  • Bake 25 to 30 minutes or until the tops of the muffins are golden brown and they spring back when lightly touched with a finger. Cool for about 5 minutes, then remove from the pan.

Steps:

  • Preheat the oven to 375 degrees Fahrenheit. Line a standard-size 12-cup muffin tin with cupcake liners.
  • In a large bowl, whisk together the flour(s), oats, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, and cloves.
  • In a medium bowl, mash the bananas, then whisk in the buttermilk, brown sugar, oil, egg, and vanilla extract, stirring until blended.
  • Pour the wet ingredients into the flour mixture, and whisk just until blended.
  • Divide the batter between the muffin cups - about 1/3 cup worth of batter for each cup (I use an ice cream scoop with a trigger and it makes the job SO much easier!)
  • Make the streusel topping. In a small bowl, stir together the flour, oats, brown sugar, cinnamon, and salt. Using a pastry blender, two butter knives, or your fingers, cut the butter into the flour/oat mixture until it is the consistency of coarse crumbs (the butter pieces should be about pea-sized). Distribute the streusel topping evenly over the muffins.
  • Bake for about 20 minutes, until a toothpick inserted into the center comes out clean.
  • Allow to cool for about five minutes in the tins, then remove and place on a wire rack to cool.
  • They keep in an airtight container at room temperature for 2 - 3 days, or freeze them in a zipper bag for a couple of months.

  • In a medium or large bowl, sift together flour, baking powder, baking soda, salt and cinnamon.
  • In another bowl beat the melted butter with sugar, egg and vanilla extract until well blended (about 2 minutes) add in the mashed bananas, mix until just blended.

1 1/2 c all purpose flour
1/2 tsp cinnamon
3/4 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt
1/2 c sugar
1 large egg
6 Tbsp butter, unsalted (room temp.)
1 1/2 c mashed banana's (very ripe)
3 Tbsp vanilla yogurt
STREUSEL
1 Tbsp cinnamon
1/4 c packed brown sugar
3/4 c semi-sweet chocolate chips
1/2 c chopped walnuts

Steps:

  • 1. Preheat oven to 425F degrees. Line muffin tin with baking cups or spray with nonstick spray. Set aside.
  • 2. Make the streusel first by combining all ingredients in a small bowl. Set aside.
  • 3. n a medium bowl, gently toss together the flour, cinnamon, baking soda, baking powder, and salt. Set aside. Using an electric stand or hand mixer, beat the sugar, butter, and egg in a large bowl until fluffy, scraping down the sides as needed. On low speed, beat in the mashed bananas and yogurt. By hand, stir in the dry ingredients mixing until everything is just combined. Do not overmix.
  • 4. Layer one spoonful of batter into the muffin cup. Sprinkle with streusel. Layer another spoonful on top and layer with more streusel. Continue to layer batter and streusel into each muffin tin.
  • 5. Bake muffins for 5 minutes at 425F degrees. Lower temperature dial down to 350F degrees and continue to bake for about 14 more minutes until the muffins are set and lightly browned. Allow to cool for 5 minutes in the tins and transfer to wire rack to cool completely.

For topping, in a small bowl, combine the brown sugar, flour and cinnamon; with your fingers, incorporate the margarine to the flour mixture until crumbly. Sprinkle topping over the muffins. Bake for 25-30 minutes, until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
