- Combine the crumbs, butter and sugar; press into an ungreased 13-in. x 9-in. dish. Chill for 1 hour., In a bowl, beat the butter, confectioners' sugar, milk and vanilla until smooth. Spread over crust; chill for 30 minutes. Layer with bananas, pineapple and strawberries. , In a small bowl, beat cream until soft peaks form. Add confectioners' sugar; beat until stiff peaks form. Spread over fruit. Sprinkle with nuts. Chill until serving.

PINEAPPLE STRAWBERRY BANANA UPSIDE DOWN CAKE
I came up with this recipe by combining three family favorites. The topping is basic pineapple upside down cake with the addition of strawberries. The cake is yellow cake mix with bananas added with a touch of cinnamon. Pure delight in every bite.

- 1. Prepare your 13x9-1/2x2 inch cake by either greasing the sides with butter or using cooking spray such as Pam. Place the butter in your cake pan and place it in the oven while your oven is preheating at 350 degrees so that your butter melts. Once butter is melted remove pan from oven and sprinkle one cup of the brown sugar evenly over the bottom of your pan.
- 2. Now spoon crushed pineapple evenly over the bottom of the pan. Add the chopped strawberries evenly over the pineapple layer and set aside until cake batter is prepared.
- 3. In a large mixing bowl place the dry cake mix, brown sugar, and cinnamon. Add mashed bananas, 1 cup water/pineapple juice mix, oil, and eggs. Blend with an electric mixer for one minute. Stop mixer and scrap down side of bowl with rubber spatula. Beat for 2 minutes at medium speed until well blended, scraping sides again if needed.
- 4. Pour batter evenly over the fruit layer in your baking pan. Place on center rack in your oven.
- 5. Bake until top is golden brown and a toothpick inserted in the center comes out clean, about 40 minutes. Remove from oven and let stand about 5 minutes for topping to set; then turn cake onto a large serving platter or a cookie sheet. Serve cake pieces with a dollop of whipped cream if desired. This cake is good both warm or cold. Enjoy!!

- In a food processor or blender, add the eggs, milk, oil, vanilla, bananas, sugar, salt, and flour. Blend until the batter is smooth without clumps.
- In a medium nonstick skillet over medium heat, melt the butter and swirl so it coats the entire pan. Then pour in ¼ cup of crepe batter and tilt the pan to cover the entire bottom. Cook until the bottom surface of the crepe begins to brown and the edges are lacey, for about 3 minutes, and then flip. Repeat with the remaining crepe batter.
- In a food processor or blender, add the strawberries and puree until smooth. Pour the strawberry puree through a sieve into a medium bowl to remove any seeds and clumps. Chill for 15 minutes until the puree is cold.
- In a large bowl, using a whisk or hand mixer, beat the cream until thickened. Add the powdered sugar, and beat until soft peaks form. Add half of the strawberry puree, and blend with the hand mixer. Add the rest of the strawberry puree and gently fold it into the whipped cream with a spatula.
- Dollop a bit of strawberry cream on a plate, then place the first crepe and frost with about ¼ cup of filling. Stack the remaining crepes on top of each other, with strawberry whipped cream between each layer. Spread the rest of the strawberry whipped cream on top of the last crepe.
- Arrange slices of strawberry on top for garnish.
- Slice and serve.

- In a large bowl, combine the first 6 ingredients; beat on low speed 30 seconds. Beat on medium 2 minutes; stir in basil. Transfer to a greased 5-qt. slow cooker. - 1. Preheat oven to 375* Prep: Strawberries hold out 10 whole set (chill) Don't slice bananas till time to Ice cake (bananas will turn brown). Lightly grease and flour 2 - 9x1 1/2 Cake pans. Slice one layer in half to make three layers
- 2. In mixing bowl place, flour, baking powder, and salt. In mixer bowl beat shortening on medium speed for 30 seconds. Add sugar, vanilla, and beat till fluffy.
- 3. Add dry ingredients and milk alternating to beaten mixture. Beat on low speed after each addition.
- 4. Wash beaters. In small mixing bowl beat egg whites beat till stiff peaks form. Gently fold into flour mixture. Pour into cake pans. Bake in 375* oven for 20 minutes till toothpick inserted comes out clean. Cool 10 minutes on rack, remove from pans place on rack.
- 5. Icing Cake: Combine yogurt and milk with whisk mix into instant pudding stir till thickens. Stir in 2 cups of whip cream, chill while cake cools. Put remainder of whip cream into refrigerator.
- 6. Let's put it together:) Lay first layer face down on cake plate, spread pudding mixture on cake, layer 1 cup of sliced strawberries on top of pudding mixture, layer 1 cup of bananas on top of strawberries, layer 2 do same, place top layer face up on top carefully push toothpicks (5) around to hold layers together. Cover an chill 2 hours.
- 7. Frost with remaining whipped cream. OPT Place the 10 remaining Strawberries end Down on top of cake. Serve chilled

- 1. Make cake according to package instructions, adding the mashed bananas and strawberries to the mix. Pour half of the batter in pan, then add sliced strawberries and bananas in a single layer. Pour other half of batter in pan and bake according package.

- 3. Poke holes in the cooled cake. Add a layer of sliced bananas and strawberries.

- 1. Preheat oven to 350.
- 2. In a large mixing bowl combine the cake mix, jello, eggs, oil, sprite, vanilla and lemon extracts.
- 3. Toss one cup of the nuts with 3 tablespoons flour. Fold the nuts, strawberries and bananas into the cake mixture until well combined.
- 4. Pour mixture into a 12 cup bundt pan that has been sprayed liberally with nonstick baking spray or greased and floured.
- 5. Shake the pan around on a level surface to be sure the batter is evenly distributed.
- 6. Place in the oven and bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- 7. Do not overbake. Remove from oven and allow to sit for about 20 minutes before turning it onto a cake plate.
- 8. While it cools prepare the cream cheese glaze. Beat the cream cheese and butter with an electric mixer until fluffy.
- 9. Add the vanilla and the powdered sugar. Add the milk or cream and beat until smooth.
- 10. When it has cooled completely pour the cream cheese glaze over all and sprinkle with the other 1/2 cup of chopped pecans
BANANA CREAM CAKE WITH STRAWBERRY CREAM FILLING
Steps:
- 1. Cake: Sift together flour, baking powder and salt; set aside.
- 2. Beat eggs until light and foamy; add flavorings, then sugar gradually.
- 3. Add flour mixture alternately with cream, beating after each addition until just smooth.
- 4. Pour batter into two 9\" greased round cake pans and bake in a preheated 350 degree oven 40 minutes or until done; cool on racks and then brush with Simple Syrup.
- 5. Simple Syrup: Combine sugar and water in a heavy small saucepan; bring to a boil over moderate heat, stirring constantly until sugar is dissolved.
- 6. Remove from heat and cool to room temperature; stir in creme de banana.
- 7. Strawberry Frosting: Whip cream in large chilled bowl on low speed until soft peaks form.
- 8. Add Grand Marnier and sugar and beat on high speed until spreading consistency; fold in mashed strawberries.
- 9. Spread this mixture between layers and add sliced banana on top of bottom layer.
- 10. Add remaining mixture on top and sides of cake.

Banana Cake with Strawberry Honey Filling, Cream Cheese Frosting & Marzipan Honey Bees Making the beehive cake is very easy and allot of fun but dont let the construction of the cake overwhelm you. You can easily make this into a simple layer cake and it will still be wonderful. The strawberry honey filling adds a wonderful dimension to the cake, topped with the cream cheese frosting this cake is absolutely scrumptious. And of course the honey bees are just plain adorable :)

- Preheat oven to 350 degrees. Grease and flour an 8 inch cake pan and an 8 inch metal mixing bowl. Line the cake pan with parchment paper. Set aside. Or grease and flour a 9x13 inch baking pan or two 9 inch layer cake pans.
- In a large bowl, cream butter, sugar and eggs. Sift flour several times, then add the salt and baking powder to the flour.
- To the creamed butter mixture, slowly add the milk and flour.
- Add vanilla, baking soda and pureed bananas
- Bake cakes for 25-30 minutes, for the 9x13 inch pan approximately 35-40 minutes.
- Remove from oven, place on cooling racks; allow to cool and remove from pans. Slice layers in half. While cake is baking prepare the filling.
- Strawberry Honey Filling: Puree half of the strawberries in a food processor with the honey, maple syrup, lemon juice, and vanilla until a smooth sauce is formed. Add the remaining strawberries and pulse until chopped, but not liquefied. Set aside.
- Cream Cheese Frosting: In a large mixing bowl combine cream cheese and butter, beat until smooth. Add sugar and vanilla, beat well.
- Marzipan Honey Bees: Take a small piece of the marzipan and roll it between the palms of your hands until a 1 inch sized rope is shaped. Paint the stripes on the marzipan with a clean paintbrush using black food coloring. Place them on a sheet of parchment allowing them to dry. When they are no longer tacky, press 2 almond slivers into the bees to make their wings. Twist a little crafting wire, insert one end into the bottom of the bees.** The bees can be made several days ahead and stored in a sealed container.
- To construct the cake: Place 1 8inch layer on cake plate, put a very thin layer of the cream cheese frosting (crumb coat thickness) over the cake first. This helps to keep the berry filling from seeping into your cake. (To make the crumb coat thickness: just thin a little of the cream cheese frosting with milk to an approximate consistency of mayonnaise.)
- ** Before applying the berry filling, use some of the cream cheese frosting to build a "dam" around the edge of cake. This keeps the filling in place so it doesn't squeeze out when you put on the next layer. Place some of the strawberry honey filling on the first layer. Repeat with the remaining layers.
- When all the layers are in place, swirl the remaining frosting on the cake in a beehive pattern. Insert the Marzipan Honey Bees Ta-Da... a wonderful, luscious springtime cake
FROZEN STRAWBERRY-BANANA CAKE WITH STRAWBERRY SAUCE

- Cut cake into 1/4-inch-thick slices. Arrange enough slices in bottom of 9-inch-diameter springform pan with 2 3/4-inch-high sides to just cover bottom, fitting tightly. Cook preserves and liqueur in heavy small saucepan over medium heat until reduced to 2/3 cup, stirring frequently, about 14 minutes. Spread half of preserves mixture over cake in pan. Freeze 10 minutes. Spoon sorbet over cake in pan; smooth top. Arrange more cake slices over to just cover sorbet. Spread remaining preserves mixture over cake. Freeze 10 minutes.
- Spoon frozen yogurt over cake; smooth top. Cover and freeze overnight. (Can be prepared 1 week ahead.)
- Puree thawed berries in processor. Cover and refrigerate until cold. (Sauce can be prepared 2 days ahead.)
- Release pan sides from cake. Place banana slices around cake edge. Mound berries in center. Serve cake with sauce.
STRAWBERRY/BANANA NUT CAKE
My favorite homemade ice cream is strawberry/banana. This past weekend, I had a strawberry cake mix, a can of strawberry icing, a ripe banana, and some nuts in my kitchen and I thought, "why not". I topped this bundt cake with a powdered sugar lemon glaze, but I also want to try it with a cream cheese icing.

- 1. To cake mix, add the eggs, oil, icing, sour cream, water, nuts and bananas. Stir until well blended and smooth.
- 2. Prepare a bundt pan, add batter, and bake in a 350 degree oven for 45-50 minutes. (Until cake is pulling away from the sides of the pan.)
- 3. Let sit for 5 minutes and then turn out onto cake plate and let it cool. To the powdered sugar, stir in enough lemon juice to make a glaze and drizzle over the cake.
- 4. OPTIONAL: Instead of doing a lemon glaze, ice the cake with your favorite cream cheese/powdered sugar frosting.

- 3. heat jello mix and i cup water to a boil, remove from heat. Do not add any more water.
- 4. pour hot jello all over top of cake, paying special attention to the holes. set aside
- 5. make pudding according to directions on box
- 6. mix pudding with cool whip well
- 7. slice the bananas, and place on top of cake

- 1. Bake Cake according to its directions for two 9-inch cake pans and let cool.
- 2. While the cake cools, chop 2 of the bananas into thin slices and set aside. Mash the last banana and mix well with the cake icing.
- 3. Place one cake down, if top is not flat, carefully use a bread knife to cut an even, flat top.
- 4. Layer the sliced banana on top of the first cake so it completely covers the cake, using all the banana.
- 5. Place the second cake on top of the layered banana and make sure cake edges are flush.
- 6. Ice the cake with the strawberry-banana icing and chill to set.
- 7. An optional step, because I've been advised its not a cake without sprinkles, give it about a handful of rainbow sprinkles across the top. :)

There are so many ways to change this recipe. sometimes I add sliced bananas with the strawberries are just make it fresh peaches without the banana in the cake batter ect... Great for summer and the fresh fruit in season.

- cake Mix together butter, shortening and sugar. Separate your eggs and add the yolks one at a time. reserve egg whites for later.
- In a separate bowl combine flour, baking soda and a pinch of salt. slowly add this to your wet mixture and beat for about one minute. Then add your buttermilk, sour cream, smashed banana and vanilla beat until blended.
- In a separate bowl, beat egg whites till stiff and fold into the cake batter.
- Grease and flour a 9x13 pan and bake at 350 for 35-40 minutes. Let cake cool completely. I kept mine in the ice box until I was ready to top it.
- Glaze In a small pan bring to a boil your water, sugar and corn starch and cook just until it begins to thicken. Let it cool and then stir it into the diced strawberries and spread over the top of cooled cake.
- Cool whip topping Combine cream, sugar and vanilla in bowl and beat on high until stiff peaks form, be careful not to over beat. Spread the whipping cream over the top of the layer of strawberries. Place in refrigerator until cake is cold.
