2 large bananas
8 (7 inch square) spring roll wrappers
1 cup brown sugar, or to taste
1 quart oil for deep frying

Steps:

  • Preheat the oil in a deep-fryer or large cast-iron skillet to 375 degrees F (190 degrees C).
  • Peel bananas, and slice them in half lengthwise, then crosswise into fourths. Place one piece of banana diagonally across the corner of a spring roll wrapper, and sprinkle with brown sugar to taste. Roll from the corner to the center, then fold top and bottom corners in, and continue rolling. Dip your finger in water and brush the last edge to seal. Repeat with remaining banana pieces.
  • Fry a few banana rolls at a time in the hot oil until evenly browned. Remove to paper towels to drain. Serve hot or cold.

For sauce
1 cup sugar
1/2 cup water
3/4 cup whipping cream
1 1/2 tablespoons dark rum
For Rolls
12 spring roll wrappers
3 small bananas, peeled, quartered lengthwise, trimmed to 4 inches
1/4 cup toffee bits (such as Skor)
1/4 cup finely chopped toasted walnuts
Vegetable oil (for deep-frying)
Powdered sugar
Chinese five-spice powder

Steps:

  • Make sauce:
  • Stir sugar and 1/2 cup water in heavy medium saucepan over medium-low heat until sugar dissolves. Increase heat and boil until syrup turns deep amber, brushing down sides of pan with wet pastry brush and swirling pan occasionally, about 12 minutes. Reduce heat to low. Add cream (mixture will bubble vigorously) and stir until caramel bits dissolve. Remove from heat. Mix in rum. (Can be made 1 day ahead. Chill. Before serving, rewarm over low heat, stirring occasionally.)
  • Make rolls:
  • Arrange 4 spring roll wrappers on work surface (keep remainder covered). Place 1 banana piece diagonally across 1 corner of each wrapper. Brush opposite corner with water. Drizzle each banana with 1 teaspoon caramel sauce, 1 teaspoon toffee bits and 1 teaspoon walnuts. Fold in wrapper corner closest to banana. Roll wrapper over banana once, then fold in sides and roll up as for egg roll, pressing ends to seal. Repeat filling and rolling remaining wrappers. (Can be made 2 hours ahead. Cover and chill.)
  • Pour enough oil into heavy large saucepan to reach depth of 3 inches. Heat oil to 375°F. Working in batches, fry rolls in oil until deep golden brown, turning frequently, about 3 minutes per batch. Using slotted spoon, transfer rolls to paper towels and drain. Arrange 2 rolls on each plate. Sift powdered sugar over. Sprinkle with five-spice powder. Drizzle caramel sauce around rolls and serve.

"MONKEY ROLLS": BANANA SPRING ROLLS WITH SPICED CHOCOLATE SAUCE, PEANUTS, AND TOASTED COCONUT

1 cup chocolate syrup
2 tablespoons peanut butter
1/2 teaspoon chile powder
16 sheets (6-inch diameter) rice paper circles* (See Cook's Note)
4 cups warm water
4 bananas, halved lengthwise, and then across
1 cup toasted peanuts, chopped fine
1 cup toasted sweetened coconut threads

Steps:

  • For the chocolate sauce mix in a medium size bowl the chocolate syrup with the peanut butter and chile powder. Place the water in a flat cake pan large enough to lay the rice paper sheets flat. Lay out 2 paper towels side by side. Soak rice paper sheets 2 at a time in the water for 1 minute then transfer to the paper towels with the sheets overlapping 30 percent. Cover with paper towels and continue until you have 8 sets of two-rice paper circles. In the center of the bottom 1/3 of the rice paper place 2 pieces of banana and liberally drizzle and sprinkle chocolate sauce, peanuts and coconut over the bananas. Fold over the edges and snugly roll them up in the shape of egg rolls. Place them seam side down on a plate and continue until you have 8 spring rolls. Serve them cut in 1/2 or whole.

1 quart peanut oil, for frying
1 banana, quartered
4 wonton wrappers
4 teaspoons semi-sweet chocolate, chopped into small pieces
2 tablespoons cane or granulated sugar
4 ounces caramel ice cream

Steps:

  • Preheat the oil to 350 degrees F in a large, deep (at least 2 quarts) pot.
  • Place 1 piece of the quartered banana and several small chocolate pieces at the bottom of the wonton wrapper. Sprinkle with sugar and wet the edges with water. Repeat with remaining ingredients. Wrap like a burrito and drop into the oil. Fry until golden brown and place on a plate with paper towels to soak up excess oil until ready to serve.
  • Sprinkle again with sugar. Place on the serving plate with a scoop of ice cream.

8 (8-inch) square frozen spring roll pastry wrappers, thawed
4 small ripe Chinese bananas (dwarf bananas), peeled, halved lengthwise, or 2 regular bananas, peeled, halved lengthwise, then halved crosswise
2 Champagne mangoes (small orange kidney-shaped mangoes) or 1 regular mango, peeled, pitted, cut lengthwise into 3-inch-long, 1/2-inch-wide strips
1 egg, beaten to blend
Vegetable oil (preferably grapeseed oil; for frying)
Fresh mint sprigs

Steps:

  • For ganache:
  • Combine coconut milk, palm sugar, and ginger in heavy medium saucepan. Bring mixture to simmer over medium heat, stirring until sugar dissolves. Remove from heat. Add chocolate and whisk until mixture is melted and smooth. DO AHEAD Ganache can be made 1 day ahead. Cover and refrigerate. Before serving, stir over low heat just until pourable.
  • For spring rolls:
  • Line baking sheet with parchment paper. Place 1 spring roll wrapper on work surface in diamond shape (1 pointed end toward you and 1 pointed end in opposite direction). Place 1 banana piece across center of wrapper, then 2 mango strips. Fold bottom pointed corner of spring roll wrapper up over fruit, then fold in sides over fruit. Brush unfolded part of spring roll wrapper with beaten egg. Roll up wrapper, enclosing fruit completely. Place on prepared baking sheet. Repeat with remaining spring roll wrappers, banana halves, mango strips, and beaten egg. DO AHEAD Spring rolls can be made 4 hours ahead. Cover with plastic wrap and refrigerate.
  • Pour enough vegetable oil into heavy deep skillet to reach depth of 1 1/2 inches; heat oil to between 360°F and 375°F. Working in 2 batches, add spring rolls to hot oil and cook until golden and crisp, turning often, about 3 minutes per batch. Using slotted spoon, transfer spring rolls to paper towels to drain.
  • Place 1 spring roll on each of 8 plates. Garnish with mint sprigs. Drizzle with coconut-chocolate ganache.

The rolls can be done several hours ahead of time and the sauce can be done the day before and reheated, if you like. You should use spring roll wrappers for this. I'm not sure if an egg roll wrapper is the same.

  • Then lay 1 quarter banana on the wrapper horizontally and then layer strawberry slices across to cover.
  • Sprinkle a little coconut on the strawberries, and then put another quarter banana on top (like a sandwich).
  • Fold the wrapper over, then the side corners in and roll up, being careful not to tear it.
  • Seal with a little egg white.
  • Keep covered with a lint free towel, and continue with the rest of the banana and strawberries until you have 8 rolls.
  • Hold in the refrigerator until ready to serve.

2 ounces unsalted butter, melted
4 small bananas, ripe and sliced lengthwise
4 ounces bittersweet chocolate, chopped

Steps:

  • Preheat the oven to 425º F.
  • Line a baking tray with parchment paper and set aside.
  • Lay two spring roll wrappers on a clean work surface; brush wrappers lightly with melted butter.
  • Slice the bananas in half on the diagonal.
  • Place one banana half in the lower third portion of the wrapper and cover with the chocolate.

100ml sunflower oil , for frying
3 sheets filo pastry
60g dulce de leche
3 bananas , halved widthways
Chinese five-spice powder , for sprinkling
coconut ice cream and toasted black sesame seeds, to serve

Steps:

  • Warm the sunflower oil in a saucepan, or heat your deep-fat fryer to 180C. Meanwhile, cut each sheet of filo pastry in half vertically.
  • Spread 2 tsp duche de leche over a halved banana. Sprinkle over some five-spice, then put the banana at the bottom of a halved filo sheet. Roll up and around the banana, folding in the sides with each roll so that they look like a spring roll. Brush some water across the final seam to seal. Repeat with the remaining banana halves. You can do this up to a day ahead, or make and freeze for up to a month.
  • Deep-fry three rolls at a time until crispy and golden, then place on kitchen paper to drain.
  • Slice in half and serve with coconut ice cream, scattered with toasted black sesame seeds.

These are famous sweet Filipino snacks sold in sidewalks. Very simple to make and a traditional comfort food for many households. Basics would just be the bananas, sugar and wrapper but adding the jack fruit makes all the difference and is preferred by most. Note: There are different types of spring roll wrappers. Get the non-translucent ones, if ever.

6 plantains, ripe and each cut lengthwise
12 spring roll wrappers, non-translucent or 12 egg roll wrappers or lumpia skins
3/4 cup dark brown sugar
6 slices jackfruit, cut lengthwise (optional)
1 teaspoon cinnamon (optional)
1/4 cup water
1 teaspoon starch
1 cup oil, for deep frying

Steps:

  • place a sliced banana 1 1/2 inch from the bottom edge of a spring roll wrapper, sprinkle it with some sugar and cinnamon, and top it with a sliced jack fruit.
  • seal the sides and roll the wrapper, sealing the top as well with water/starch mixture.
  • In the meantime, heat oil in non-stick wok(so sugar doesn't stick) until it's sizzling hot with the leftover sugar and fry the wrapped bananas until it's golden brown, spooning (or use spatula) the sugar from the pan on the wrapper to give it a bit of caramelized coating.
