Steps:

  • In a small saucepan, stir together sugar and water. Bring to a boil, then remove from heat and allow to cool.
  • When the sugar syrup is cool, stir in bananas. Pour into a freezer - safe baking dish. Freeze for 3 to 4 hours, until set at the edges.
  • Remove from the freezer and transfer to a mixing bowl. Use an electric mixer to beat until smooth. Return to the freezer until gently set, at least 2 hours.

Two 3.5-ounce packets frozen unsweetened acai puree
1 tablespoon virgin or extra-virgin coconut oil
1 tablespoon pure maple syrup

  • Cut each banana into 6 chunks, and freeze until rock solid, preferably overnight.
  • With the acai inside the packet, crush the puree into smaller pieces. Process the pieces in a food processor to a fine slush. Add the frozen banana chunks, coconut oil and maple syrup, and begin to process (the food processor may jolt in the very beginning). As the bananas break down and combine with the acai, the mixture will look crumbly, then gooey and eventually smooth and slightly slushy, like a sorbet.   • For the cake: Preheat oven to 350 degrees. Sift dry ingredients together in a bowl. Puree bananas, add sugar and puree until smooth. Add eggs, vanilla, rum and process until combined.   • To assemble: Slice cake into 9 squares; slice each square in half diagonally. Lay banana slices on top, sprinkle liberally with sugar. Place under broiler or caramelize sugar with a blowtorch. Place 2 halves on plate, with a scoop of sorbet alongside and a few almonds around.

*Combine 2 Tbsp sugar and 2 Tsp cinnamon in small bowl. Store in air tight container.
