This is adapted from a Cooking Light recipe for my son, who is allergic to dairy and eggs. I also added some wheat flour to see how it tasted. It turned out light and delicious! You could make this vegan by not using the goat milk, and adding the juice of 1/2 a lemon.

1 cup whole wheat flour
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons potato flour (can substitute 2 eggs, just use less milk)
1/4 teaspoon salt
3/4 cup regular oats
1 cup mashed ripe banana (about 2-3 large)
2/3 cup honey
1/3 cup goat milk yogurt
1/3 cup rice milk (can substitute low fat milk)
1/4 cup vegetable oil
1 teaspoon vanilla extract
cooking spray

Steps:

  • Preheat oven to 340°F.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, potato flour salt in a large bowl; stir well with a whisk to combine. Stir in oats.
  • Combine mashed banana, honey, yogurt, milk, oil and vanilla; add to flour mixture and stir until just moist.
  • Spoon batter into 8 x 8 baking pan (can use 8 x 4 loaf pan) coated with cooking spray.
  • Bake at 340F for 45 - 55 minutes or until a wooden toothpick inserted in center comes out clean. Cool 15 minutes in pan.

1 1/2 cups rolled oats (plus 1 tablespoon for sprinkling on top (do not use instant oatmeal; quick oats will work in a pinch))
1 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon baking powder
½ teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 1/2 cups mashed very ripe bananas (about 4 medium bananas)
2/3 cup honey or pure maple syrup
4 tablespoons unsalted butter (melted)
1/4 cup milk
3 tablespoons nonfat plain Greek yogurt
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Spread 1 1/2 cups oats in a single layer on a rimmed baking sheet. Place in the oven and toast for 8 to 10 minutes, until very light golden and fragrant, stirring once halfway through. Set aside to cool. Line a 9 x 5-inch loaf pan with parchment paper so that two sides overhang like handles. Lightly mist with nonstick spray.
  • In a medium mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir in the toasted oats. Set aside.
  • Mash the banana in the bottom of a large mixing bowl and double check to make sure you have 1 1/2 cups. Whisk in the honey, melted butter, milk, and Greek yogurt. If the butter resolidifies, warm the bowl in the microwave in 10-second bursts, just until it melts. One at a time, whisk in the eggs. Whisk in the vanilla extract.
  • Add the dry ingredients to the banana-honey mixture. By hand with a rubber spatula, stir very slowly and gently, stopping as soon as the flour disappears. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the batter with remaining 1 tablespoon oats for decoration.
  • Bake for 30 minutes, then loosely cover the pan with foil, making sure that the foil shields both ends of the pan (because the bread is sweetened with honey, it will caramelize and become dark at the corners). Continue baking for 35 to 45 additional minutes (65 to 75 minutes total) or until a small, thin knife inserted in the center of the loaf comes out without any wet batter clinging to it. Repeat the test once or twice. An even easier way to tell is to use an instant-read thermometer. When the bread reaches between 200 to 210 degrees F at the center, it's done.
  • Place the pan on a wire rack, and let the bread cool in the pan for 1 hour. Using the parchment paper handles, lift the bread and set it out on the rack to finish cooling completely. Slice and enjoy!

1 cup quick-cooking oats
1 large ripe banana, sliced
2 teaspoons brown sugar
1 teaspoon honey

½ cup shortening
1 cup white sugar
2 eggs, beaten
½ teaspoon vanilla extract
1 cup all-purpose flour
1 cup quick cooking oats
1 teaspoon baking soda
½ teaspoon salt
¼ cup milk
½ teaspoon ground cinnamon
1 ½ cups mashed bananas
½ cup chopped raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan and set aside.
  • Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.
  • Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.

6 ripe bananas
4 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup margarine, room temperature
1/4 cup Butter Flavor Crisco
3/4 cup sugar
3/4 cup of packed light brown sugar
4 eggs
1 tablespoon vanilla extract
3/4 cup honey
3 cups old fashioned oats

Steps:

  • Preheat oven to 350. Spray 3 4 by 8 loaf pans with non-stick spray.
  • Mash bananas in a small bowl. Set aside.
  • Mix together flour, baking powder, baking soda and salt in a medium bowl. Set aside.
  • In a large bowl, cream together margarine, crisco and sugars. Mix in eggs and vanilla.
  • Slowly add flour mixture. Mix in 2 1/4 cups of oats by hand.
  • Pour half of the batter into the pans. Drizzle half of the honey over batter. Top with remaining batter. Sprinkle 1/4 cups of oats on each pan. Drizzle with remaining honey.
  • Bake for 45-55 minutes. Cool on wire racks in pans for 15 minutes. Remove from pans and cool completely on wire racks.
