1 ½ cups unbleached all-purpose flour
1 cup rolled oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg
¾ cup milk
⅓ cup vegetable oil
½ teaspoon vanilla extract
1 cup mashed bananas

Steps:

  • Combine flour, oats, sugar, baking powder, soda, and salt.
  • In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
  • Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup mashed ripe banana
¼ cup white sugar
¼ cup sour cream
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the sour cream. Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.
  • Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving. For best flavor, place in an airtight container or bag overnight.

2 large eggs
1 teaspoon vanilla extract
3 ripe bananas, mashed
1 tablespoon milk

Steps:

1 stick (8 tablespoons) unsalted butter
1 1/2 cups whole wheat pastry flour or white whole wheat flour
1/2 cup plus 2 tablespoons rolled oats
1 teaspoon baking powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1/2 cup reduced-fat sour cream
1/2 cup packed dark brown sugar
1 teaspoon pure vanilla extract
2 large eggs
2 medium bananas, peeled and cut into 1/2-inch pieces (about 1 heaping cup)

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with cupcake liners.
  • Melt the butter in a small skillet set over medium heat, and cook until it starts to bubble and foam, about 5 minutes. Continue cooking, stirring constantly, until the foam subsides and brown specks start to appear, 1 to 2 minutes. Transfer the butter to a medium mixing bowl to cool slightly.

1 cup quick-cooking oatmeal
1 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda

2 large eggs, room temperature
1 1/2 cups mashed bananas (approximately 5 bananas)
1/2 cup sour cream
1/3 cup butter, melted and cooled
1 teaspoon vanilla extract
18 large paper baking cups

Steps:

  • Preheat oven to 375°F Line muffin tins with the paper baking cups and set aside.
  • In a medium bowl, stir together the flour, oatmeal, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
  • In a separate bowl, combine the mashed banana, eggs, vanilla, sour cream and melted butter and stir until well mixed.
