7 Grain and Seed Banana Nut Bread Granola image

1/2 cup Coconut Oil
1/2 cup Coconut Sugar
1 tablespoon Pure Vanilla Extract
2 Bananas, ripe, mashed
4 cups Organic Grains 7 Grain Cereal Flakes
3/4 cup Almonds, Raw
1/2 cup Organic White Chia Seeds
1 1/2 teaspoon Cinnamon, Saigon
1/2 teaspoon Ginger, ground
1/2 teaspoon Allspice
1/2 teaspoon salt

Steps:

  • Directions: Preheat the oven to 300°F. Line two baking sheets with parchment paper. In a large bowl, combine coconut oil, coconut sugar, vanilla and mashed bananas. Add remaining ingredients and stir well. Bake the granola by dividing it between the two baking sheets. Bake 35 minutes, stirring halfway through baking. Remove from oven and cool completely.
  • Yield 20 1/4 cup servings. Estimated Nutritional Information: 144 cal, 7 g fat, 18 carbohydrate, 3 g fiber, 3 g protein.

1 1/4 cups dates
1/2 cup water
2 bananas
1 tablespoon vanilla
1 1/2 teaspoons salt
10 cups rolled oats
1 1/2 cups seeds or 1 1/2 cups coconut (or less)

Steps:

  • Bring water and dates to a boil in a covered saucepan.
  • Remove from heat.
  • Let stand 5 minutes, then blend in blender with all but oats and seeds or coconut.
  • Stir all ingredients together.
  • Spread on two cookie sheets.
  • Bake at 225 degrees for 2 hours, stirring.
  • Put in a air tight container until ready to use.
