1/2 cup butter, softened
1 cup light brown sugar
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups mashed bananas
2 eggs, beaten
3/4 cup macadamia nuts

Steps:

  • Preheat oven to 350º.
  • Grease and flour a loaf pan.
  • In a bowl, mix butter and sugar until creamy.
  • In a separate bowl combine flour, baking powder and salt.
  • Blend dry ingredients with creamed butter/sugar mixture.
  • Add mashed bananas, eggs and nuts.
  • Pour into loaf pan. Bake for 1 hour or until a knife comes out clean.

2 1/2 c flour
1 1/2 tsp baking soda
1/4 tsp salt - (the macadamia nuts are salted)
3/4 c salted butter- softened
1/4 c sour cream
2 large eggs
1 1/2 c brown sugar, firmly packed
3 c bananas- mashed
1 1/2 tsp vanilla extract
1 c chocolate chips
1 c macadamia nuts, chopped

Steps:

  • 1. Preheat oven to 325 F. Grease two 9-by-5-inch loaf pans.
  • 2. In a medium bowl combine flour, soda, and salt with a wire whisk; set aside.
  • 3. In a large bowl cream butter and brown sugar with an electric mixer. Add eggs, bananas,vanilla and sour cream beat at medium speed until thick. Scrape down sides of bowl.
  • 4. Add the flour mixture macadamia nuts and chocolate chips, then blend at low speed just until combined. Do not overmix. Pour batter into prepared pans.
  • 5. Bake on center rack of oven for 60-70 minutes. A toothpick inserted in center should come out clean, and the bread should pull away from the sides.
  • 6. Cool in pan, for 10 minutes. Turn pans on sides; cool to room temperature before removing and slicing.

1 1/2 sticks (3/4 cup) unsalted butter, softened
1 cup firmly packed light brown sugar
1/2 cup granulated sugar
1 1/2 teaspoons vanilla extract
3 large eggs
1 tablespoon freshly grated lemon zest
1 1/3 cups mashed ripe banana (about 3 large)
3 tablespoons sour cream
3/4 cup chopped macadamia nuts
1 cup sweetened flaked coconut, toasted lightly and cooled

Steps:

  • Into a bowl sift together the flour, the baking powder, the baking soda, and the salt. In a large bowl with an electric mixer cream the butter with the sugars until the mixture is light and fluffy and beat in the vanilla, the eggs, 1 at at time, the zest, the banana, and the sour cream. Add the flour mixture, beat the batter until it is just combined, and stir in the macadamia nuts and the coconut. Divide the batter among 5 well-buttered and floured 5 3/4- by 3 1/4-inch loaf pans and bake the breads in the middle of a preheated 350°F. oven for 35 to 40 minutes, or until a tester comes out clean. Remove the breads from the pans and let them cool, right sides up, on a rack.

1 (16 ounce) can pineapple chunks, drained
1 cup flaked coconut
3/4 cup sugar
1/2 teaspoon baking powder

  • Preheat oven to 300*.
  • Mix nuts, pineapple, and coconut in large bowl.

1 tablespoon stevia sugar substitute (such as Truvia®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a loaf pan with parchment paper.
  • Place coconut butter and macadamia nuts in a food processor and process on high to achieve a part butter, part chunky, nut meal. Reduce speed to medium-low and add one egg. Run processor to combine, about 10 seconds. Add remaining eggs, one at a time, blending until mixture is creamy.
  • Turn off the food processor and add stevia, baking soda, and salt; process to combine, 10 to 15 seconds. Clean edges of the bowl and process until mixture is evenly blended. Pour in lemon juice and reduce speed to low; blend well. Clean the sides of the bowl again and mix once more to thoroughly combine.

1 tablespoon cinnamon, ground
2 tablespoons pure vanilla extract

2 cups whole milk
2 cups heavy cream
2 loaves challah, cut into one-inch cubes
1 cup macadamia nuts, chopped
9 tablespoons unsalted butter
1/2 cup light brown sugar, packed
3/4 teaspoon cinnamon, ground
6 firm-ripe bananas, peeled and cut crosswise into 3/4-inch thick slices
1/4 cup granulated sugar
1 1/4 cups whole milk
1 1/2 cups heavy cream
1 vanilla bean, split and seeded
10 ounces white chocolate, chopped
2 tablespoons sugar
2 tablespoons cornstarch
6 egg yolks
3 tablespoons heavy cream

Steps:

  • Butter a 10 x 14-inch baking dish with 1 tablespoon of the butter and set aside.
  • Melt the remaining 8 tablespoons butter in a large skillet over medium heat. Add 1 cup of the brown sugar and the cinnamon and cook, stirring, until the sugar dissolves, about 2 minutes. Add the bananas and cook on both sides, turning, until the bananas start to soften and brown, about 3 minutes. Remove from the heat and let cool.

  • For the white chocolate sauce: bring the 1/4 cup sugar, milk, cream, vanilla seeds and empty bean pod almost to a boil in a med sauce pan then remove the bean pod.
  • In a separate mixing bowl, whisk together the 2 tablespoons sugar, cornstarch and egg yolks in a mixing bowl. Stir until smooth. Gradually add the 3 tablespoons of heavy cream. Add one fourth of the hot milk mixture to the egg yolk mixture. Pour this back into the cream mixture in saucepan.
  • Cook over a gentle heat, whisking continuously to avoid scorching. Cook until the sauce begins to thicken. Remove from heat and pour the sauce back into the mixing bowl through a fine mesh strainer over white chocolate. Mix until chocolate is melted and sauce is smooth. Cool over an ice bath, stirring occasionally (makes 5 cups).
  • To serve, scoop the pudding onto dessert plates. Top each serving with a small scoop of ice cream, drizzle with sauce, and serve immediately.
