BUTTERSCOTCH BANANA DROPS

Most folks are surprised to learn that banana is the secret ingredient in these soft cookies. My grandmother shared the recipe with me some 30 years ago, and I've relied on it ever since.

3/4 cup butter, softened
1 cup sugar
1 egg
1-1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1 cup mashed ripe bananas (about 2 medium)
1-1/2 cups quick-cooking oats
1-1/2 cups chopped pecans
1 cup butterscotch chips
1 cup chopped dates

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, salt, baking soda and nutmeg; gradually add to the creamed mixture and mix well. Beat in bananas. Stir in the oats, pecans, butterscotch chips and dates. , Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

COOKIE:
3/4 c butter,softened
3/4 c brown sugar, firmly packed
1 c mashed ripe bananas(about 2)
1 large egg
2 tsp fresh grated orange zest
1/2 tsp vanilla extract
2 c all purpose flour
1/2 tsp each-baking powder and baking soda
1/4 tsp salt
FROSTING:
2 Tbsp butter, cold
3 Tbsp brown sugar, firmly packed
2 Tbsp half & half , or milk
1 1/4 c powdered sugar
1/2 tsp vanilla extract
grated orange zest for garnish,if desired

Steps:

  • 1. Heat oven to 350^. Combine the butter and sugar in a large bowl. Beat at medium speed,until creamy. Add bananas, egg, orange zest and vanilla; continue beating until well mixed. Reduce speed to low, add flour, baking powder , salt and baking soda. Beat until well mixed. Chill dough for 20 minuted.
  • 2. Drop dough by rounded teaspoonfuls, 2 inches apart, onto UNgreased cookie sheets. Bake 8 to 10 minutes--just until the edges begin to lightly brown. Cool completely on paper bag.
  • 3. Frosting: Melt butter in a small saucepan over medium heat. Add brown sugar and 1/2 & half. Continue cooking, stirring occasionally, until mixture boils. Remove from heat. Add powdered sugar and vanilla; beat until well mixed; Cool slightly. Frost cooled cookies. Garnish with orange zest. Let stand until frosting sets.

A fruity cookie that melts in your mouth. For those who love bananas, you can replace the vanilla extract with more banana extract.

Number Of Ingredients 11

2 ½ cups all-purpose flour
¼ teaspoon baking soda
¼ teaspoon salt
⅞ cup brown sugar
¼ teaspoon ground cinnamon
½ cup butter
¼ teaspoon vanilla extract
¼ teaspoon banana extract
2 eggs
3 ripe bananas, mashed
⅓ cup chopped walnuts, toasted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with parchment paper.
  • In a medium size mixing bowl, sift together flour, baking soda and salt. In a separate small bowl, combine 2 tablespoons brown sugar with cinnamon, set aside.
  • In a medium size mixing bowl, beat together 3/4 cup brown sugar with the butter or margarine, vanilla and banana extract until the mixture is light in texture. Beat in the eggs. Mix in the banana. Slowly mix the flour mixture into the egg, banana and sugar mixture. Fold in nuts.
  • Drop the dough by teaspoonful onto the prepared cookie sheet. Sprinkle the cookies with the mixture of brown sugar and cinnamon prepared earlier.
  • Bake 8 to 10 minutes, until lightly browned.
