1 cup cornflake crumbs
1 tablespoon toasted sliced almonds
1/2 cup egg whites (or egg substitute)
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
4 slices cinnamon-raisin bread
1/4 cup mashed banana
Strawberries and blueberries (optional)

Steps:

  • Heat griddle over medium-high heat. Combine cornflake crumbs and almonds in a bowl. Combine egg whites, vanilla extract and cinnamon in another bowl. Dip 1 slice bread in egg batter, then coat on both sides with cornflake crust; repeat with remaining bread slices. Spread mashed banana on 1 side of 2 pieces of crusted bread; top with remaining 2 bread slices to make 2 sandwiches. Cook sandwiches on griddle until golden brown, 2 minutes per side. Cut in half and serve with fresh berries, if desired.

Having vegan friends in college forced me to find some recipes that are friendly to their choice if I wanted to entertain. This recipe is delicious whether or not you are vegan. I've made it with almond, rice, soy, and regular milk and they are all very similar to identical in flavor and consistency.

2 cups all-purpose flour
2 cups cornmeal
2 cups milk
2 bananas
1 ⅓ cups white sugar
⅔ cup vegetable oil
2 teaspoons baking powder
2 teaspoons salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine flour, cornmeal, milk, bananas, sugar, vegetable oil, baking powder, and salt together in a bowl until batter is smooth; pour into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes.

1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup mashed banana
1/4 cup butter
1/4 cup water
1 1/2 cups cereal
1 cup walnuts

Steps:

  • Pre heat the oven at 350 degrees F.
  • Mix flour, baking powder, baking soda and salt in a large bowl.
  • Cream butter, add in sugar slowly.
  • Once it is well creamed, add in eggs.
  • Mix in water and bananas.
  • Add in Flour mixture, stir till it is moistened.
  • Stir in cereal and walnuts.
  • Pour into greased 9x5 inch loaf pan.
  • Bake for 55-65 minutes, till toothpick inserted in center comes out clean.
  • Cool for 10 minutes before removing from pan.
  • Cool completely on wire rack.

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

2 1/2 cups Kellogg's® corn flakes
1/2 cup margarine or butter, softened
3/4 cup sugar
2 eggs
1/2 cup coarsely chopped walnuts

  • 1. Stir together flour, baking powder, soda and salt. Set aside.2. In medium mixing bowl, combine bananas and KELLOGG'S CORN FLAKES cereal. Let stand 5 minutes or until cereal softens. Beat well.3. In large mixing bowl, beat margarine and sugar until combined. Add eggs. Beat well. Mix in cereal mixture and nuts. Stir in flour mixture. Spread batter evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray.4. Bake at 350°F about 1 hour or until wooden pick inserted near center comes out clean.
