Yummy cookies!! Great when you have leftover bananas that are too soft to eat .. they smell heavenly while baking, and keep well in the fridge ... I don't add the nuts, but you can if you like ..

1 cup mashed ripe banana (chopped)
1/2 cup butter
1/2 cup sugar
2 large eggs
1 teaspoon vanilla
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon cinnamon
1 pinch salt
1/2 teaspoon nutmeg
1/8 teaspoon clove
1 1/2 cups quick oatmeal
1/2 cup nuts
1 cup chopped dates

Steps:

  • Preheat oven to 375°F.
  • In a large bowl, combine butter, sugar and eggs.
  • Add bananas and vanilla, mix well.
  • Add the rest of the ingredients, with dates and nuts last.
  • Drop dough onto cookie sheet (sprayed with non-stick spray), and flatten slightly.
  • Bake 12 minutes or until done.

⅓ cup shortening
1 cup white sugar

They do not taste strongly of banana - it's just a hint.

Nonstick cooking oil spray
1 very ripe medium banana
1/3 cup canola oil
2/3 cup sugar
1 teaspoon vanilla extract
3/4 cup plus 2 tablespoons all-purpose flour, or as needed
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2 cups quick-cooking (not instant) oatmeal or rolled oats
1/2 cup chopped walnuts
1/2 cup chocolate chips (vegan, if desired)

Steps:

  • Preheat oven to 350 degrees. Lightly spray two baking sheets with oil. In a mixing bowl, mash banana well. Add oil, sugar and vanilla, and mix with a strong fork. Add flour, baking soda, salt and cinnamon, and mix until just moistened.
  • Add oatmeal, walnuts and chocolate chips. Using your hands or a sturdy spoon, mix well, making sure oats are well moistened. (If dough is very slippery, add one or two extra tablespoons flour.)
  • Using clean, wet hands, re-wetting as needed, roll dough into balls slightly smaller than a golf ball, about 1 1/3 inches in diameter. Flatten slightly and place 2 inches apart on a baking sheet. Bake until lightly browned, 10 to 12 minutes. Remove from heat and allow to cool for 2 minutes, then transfer to a rack to cool completely. Store in an airtight container.

1 cup sugar
1 egg, room temperature
1 cup mashed banana (about 2 1/2 large bananas)
1 teaspoon baking soda
2 cups flour
1 pinch salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup chopped nuts (pick your favorite or even add chocolate chips)

Steps:

  • Preheat the oven to 350°F Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.
  • In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
  • Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.
