Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans or one 9x13-inch pan.
  • In a medium bowl, cream together white sugar and 1/2 cup butter. Mix in eggs and 3 mashed bananas.
  • Sift together flour and baking soda in a separate bowl. Add to the creamed mixture alternately with buttermilk, mixing well after each addition. Blend in 1 teaspoon vanilla extract. Fold in 1 cup of pecans and 1 cup coconut. Pour batter into prepared pans.
  • Bake in the preheated oven until a tester inserted in the center comes out clean, about 45 minutes. Cool completely on wire racks.
  • To Make Frosting: Cream together 1/2 cup butter and confectioners' sugar until light and fluffy. Mix in 1 medium mashed banana, 1 cup pecans, 1 cup coconut and 1 teaspoon vanilla.

1 teaspoon vanilla extract

Steps:

  • In a bowl, cream shortening and sugar until fluffy. Add eggs; beat for 2 minutes. Add bananas and vanilla; beat for 2 minutes. , Combine dry ingredients; add to creamed mixture alternately with buttermilk. Mix well. Stir in pecans if desired. Pour into two greased and floured 9-in. round baking pans. Sprinkle each with coconut. , Bake at 375° for 25-30 minutes or until cake tests done; loosely cover with foil during the last 10 minutes of baking. Cool in pans 15 minutes before removing to a wire rack, coconut side up. , In a bowl, cream shortening and butter. Add remaining frosting ingredients. Mix on low until combined; beat on high for 5 minutes. Place one cake layer, coconut side down, on a cake plate; spread with some of the frosting. Steps:

  • Make cake:
  • Put oven rack in middle position and preheat oven to 350°F.
  • Lightly butter and flour a 9-inch round cake pan, knocking out excess flour.
  • Whisk together flour (1 1/2 cups), baking powder, baking soda, and salt in a small bowl.
  • Beat together butter (1 stick) and brown sugar in a large bowl with an electric mixer at high speed until pale and fluffy. Beat in egg until combined, then add bananas, sour cream, and vanilla and beat until combined well. Reduce speed to low and add flour mixture, mixing until just incorporated.

  • On a baking sheet toast coconut in the middle of the oven, stirring once, until golden, about 6 minutes.

1 cup banana puree, from about 2 medium very ripe bananas
2/3 cup buttermilk or yogurt, at room temperature
10 tablespoons unsalted butter, at room temperature
1 1/4 cups granulated sugar (about 250 grams)
1/2 cup light brown sugar, lightly packed (about 110 grams)
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon fine salt
1/2 teaspoon baking soda
1/2 cup vegetable oil
1 tablespoon pure vanilla extract
3 large eggs, at room temperature
1 large egg yolk, at room temperature
3/4 cup toasted shredded coconut
1 medium banana, cut into 1/4-inch cubes
1/3 cup heavy cream
2 teaspoons espresso-style instant coffee granules
Pinch fine salt
2/3 cup semisweet chocolate chips

Steps:

  • Set a rack in the center of the oven and preheat to 350 degrees F. Have a standard 12-cup bundt pan and nonstick cooking spray with flour on hand to spray the pan right before adding the batter.
  • Place the flour in a medium bowl and whisk to aerate and break up any lumps. Combine the banana puree and buttermilk in a large measuring cup and stir well.
  • Add the butter, granulated sugar, brown sugar, baking powder, cinnamon, salt and baking soda to the bowl of a stand mixer fitted with the paddle attachment and mix on low speed until combined. Raise the speed to medium and mix until a stiff dough forms and no chunks of butter remain, 2 to 3 minutes. Lower the mixing speed to low and add the oil and vanilla. Stop and scrape the bowl and paddle. Raise the mixer to high speed and beat until lightened in color and fluffy like whipped cream, 3 to 4 minutes.
  • Lower the mixer to medium-low speed, add one egg and mix until the egg is incorporated, 20 to 30 seconds. Repeat with the remaining eggs. Add the yolk and mix on medium speed until combined. Scrape the bowl and mix a few more seconds.
  • In three alternating additions, add the flour and the banana-buttermilk mixture, mixing at low speed the entire time, beginning and ending with the flour. Scrape the bowl as needed. Use a spatula to fold in the toasted coconut and banana cubes.
  • Spray the bundt pan with the nonstick spray with flour. Scrape the batter into the pan and smooth the top. Bake until a toothpick inserted into a few spots towards the center of the cake comes out with moist crumbs attached, 1 hour to 1 hour 5 minutes. Cool the pan on a wire rack for 20 minutes. Unmold the cake and let cool completely.
  • Place the cooled cake on a serving platter and refrigerate 20 minutes. This will chill the surface, making glazing easier.
  • For the espresso ganache: Place the cream, instant coffee and salt in a microwave-safe bowl and stir to combine. Microwave until steaming, about 15 seconds. Stir the cream to dissolve the instant coffee and add the chocolate chips. Microwave in 12-second intervals until melted, stirring after each interval. The ganache should be smooth. Transfer to a measuring cup with a spout.
  • Pour the ganache over the cake allowing it to flow down the sides. Sprinkle the toasted coconut over the warm ganache and allow it to set. Serve at room temperature. Store any leftovers covered at room temperature for up to 3 days.

1 cup milk
2/3 cup white sugar
5 egg yolks
1/3 cup cornstarch
3 bananas, sliced

2 tablespoons white sugar
1 cup unsweetened coconut flakes, toasted golden brown

Steps:

  • Cake:
  • Preheat the oven to 350 degrees. Butter and flour two 9-inch cake pans. In the bowl of an electric mixer, beat the butter and sugar together until it is light and fluffy. Add the eggs one at a time, beating well in between each addition, and continue to beat until very light and fluffy. Add buttermilk and mashed banana and mix well. In a separate bowl, sift and dry ingredients together (flour, baking soda, salt, baking powder), then add to batter and mix at low speed on the electric mixer until moistened. Beat one minute at medium speed, then fold in pecans and pour batter evenly into the two prepared cake pans. Bake for 25 to 35 minutes, until a toothpick inserted in the center comes out clean.   • Coconut Custard:
  • Line a baking sheet with parchment paper and cut another piece of parchment to the same size. Set both aside. Combine the coconut milk and milk and stir together. In a bowl, mix 2/3 cup of sugar with 1/3 cup cornstarch and stir with a fork until free from lumps. Mix the sugar and cornstarch together with the egg yolks and 1 cup of coconut milk mixture. Whisk until smooth and set aside. In a heavy saucepan, bring the remaining coconut milk mixture to a boil. Pour it into the bowl with the egg yolk-sugar mixture, whisking constantly. Return the mixture to the saucepan over medium flame and continue stirring. Cook until small bubbles start to form on the surface of the custard. Remove from the heat and spread onto the parchment-lined baking sheet. Cover the top of the custard with the other sheet of parchment to prevent a skin from forming. Cool in the refrigerator.
  • To Assemble Cake:
  • In a large bowl, gently toss banana slices with the lemon juice, and sugar. Trim the top of the first layer of cake so that the surface is level, then spread with a thin layer of custard. Place bananas completely over bottom layer, so that no cake is showing. Spread with another layer of coconut custard. Place next cake layer on top of this and spread the top generously with coconut custard. Garnish liberally with toasted coconut flakes.

1/2 cup buttermilk
3 bananas (large, very ripe, mashed)
3/4 cup unsalted butter, room temperature
1 1/2 cups granulated sugar
2 cups all-purpose flour
1/2 teaspoon baking soda
2/3 cup shredded coconut
1 (8 ounce) package cream cheese, reduced fat, room temperature
1 cup powdered sugar, sifted

Steps:

  • FOR THE CAKE: Preheat oven to 350 degrees F, then grease a 9-inch springform pan & line it with parchment paper.
  • In a medium bowl, combine eggs, zest, lime juice, buttermilk & mashed bananas, then whisk together until well combined. Set aside.
  • In a large bowl, using an electric mixer, beat together the butter & sugar until light & fluffy.
  • Add banana mixture & beat on low until combined.
  • In another bowl, whisk together the flour & baking soda, then add this to the banana/buttermilk mixture, whisking until well combined.
  • With a large metal spoon, gently fold in only half of the coconut untl just combined.
  • Spoon the batter into the prepared springform pan & bake for 50 minutes or until golden & a skewer inserted in the center comes out clean.
  • Cool in the pan for 5 minutes, then remove the springform sides before transferring the cake to a wire rack to cool completely.
  • Meanwhile, in a pan over medium heat, toast the remaining 1/3 cup of shredded coconut, stirring constantly, until golden in color, then remove from the heat.
  • FOR THE ICING: In a bowl & using an electric mixer, combine the cream cheese & powdered sugar, & beat until smooth.
  • Spread over the cake, then sprinkle with the toasted coconut before slicing & serving.

  • To make the cake: sift together the flour, baking soda, and salt; set aside.

  • Beat in bananas at low speed.

1 c sweetened flaked coconut

1/2 cup heavy cream
1 ripe banana, mashed
1/2 teaspoon vanilla extract
1/4 cup macadamia nuts, toasted and roughly chopped
2 tablespoons butter, at room temperature
1 cup sugar
1/4 cup water
1 pinch cream of tartar
1/4 cup coconut milk
Service:
8 pineapple rings
1 pint coconut ice cream
1/2 bunch mint

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease and flour 1 (12-cup) muffin tin.
  • In a medium bowl, combine the flours, baking powder, ginger, and salt.
  • In a large bowl of a stand mixer, add the butter and sugars and beat until the mixture is very light and fluffy. Mix in the egg until incorporated. While the mixer is running, add in the dry ingredients and then the cream. Scrape down the sides of the bowl and beat in the mashed banana and vanilla. Fill each muffin cup 2/3 of the way with the batter.
  • Bake the muffins until toothpick inserted in the center comes out clean, about 15 minutes. Remove the tin from the oven and, when cool enough to handle, transfer the muffins to a cooling rack.
  • Brittle and caramel sauce:
  • Line a sheet pan with a silpat or aluminum foil that has been generously buttered.
  • Toss the macadamia nuts with the butter in a medium bowl.
  • In a heavy-bottomed saucepan, combine the sugar with the water and cream of tartar. Bring the mixture to a boil over medium-high heat. When the syrup reaches a medium golden-amber color, switch off the heat and stir half of the syrup into the bowl with the macadamia nuts. Pour the mixture onto the prepared sheet pan and let the brittle cool. To the remaining caramelized sugar, carefully stir in the coconut milk. Cool the sauce completely before using.
  • When the brittle has cooled, chop it roughly with a knife.
  • Arrange a pineapple ring on a small plate. Invert a cake onto the pineapple ring. Top with a small scoop of coconut ice cream and a sprinkling of the chopped macadamia brittle. Drizzle the dessert with 2 tablespoons of the caramel sauce and garnish with some mint. Repeat with remaining ingredients and serve.

  • 3. During last 5 minutes of baking, prepare frosting.

BANANA COCONUT UPSIDE DOWN CAKE

Sweeten it. Add a drained 20oz can of crushed pineapple to the topping. Omit the lemon juice and arrange the bananas on top of the pineapple. Be fruitful. Be sure the bananas are ripe yet firm. If they're green, they'll be tasteless. If they're too ripe, they'll turn to mush. I have not tried this recipe. I'm posting this for safe keeping. I found this recipe in All You magazine. 90 g desiccated coconut
180 ml milk
125 g butter
220 g caster sugar
2 eggs
300 g self raising flour
2 ripe mashed bananas
60 ml milk, extra
60 g butter, softened
60 g cream cheese
320 g icing sugar, sifted
1 tablespoon passion fruit pulp

Steps:

  • Preheat oven to moderately slow, 160 centigrade.
  • Grease a deep 19cm square cake pan, line base with baking paper.
  • Combine coconut and milk in a bowl.
  • Let it stand for 30 minutes.
  • Beat the butter and the sugar in a bowl with and electric mixer until light and fluffy.
  • Add the eggs and beat until combined.
  • Stir in the sifted flour, then banana, coconut mixture and the extra milk.
  • Spread the mixture into the prepared pan.
  • Bake in the oven for around 50 minutes until cooked when tested.
  • Allow to stand for 5 minutes, then turn out to cool.
  • For the frosting, beat the butter and cream cheese in a small bowl with and electric mixer until light and fluffy.
  • Gradually stir in the icing sugar and the passionfruit pulp.
  • Spread cake with the passionfruit frosting.
