Steps:
- Boil potatoes in plenty of salted water. When just boiled, drain and leave to steam dry. In large frypan on high heat, add half the spring onion, finely chopped coriander, garlic, fish sauce and oil, and mix well to combine. Add potato to frypan and fry over medium heat, stirring (or tossing) regularly for 10 minutes or until dark golden. Tip into serving bowl along with scraped up caramelised bits from bottom of pan. Add remaining spring onion and coriander and toss well.
