This recipe comes from my Grandma Schlientz. Anytime there are ripe bananas around our house, it's banana brownie time! People are always surprised to learn there's fruit in the recipe.

1/2 cup butter, melted, cooled
1 cup sugar
3 tablespoons baking cocoa
2 large eggs, lightly beaten
1 tablespoon whole milk
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup mashed ripe bananas (2-1/2 to 3 medium)
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • In a bowl, combine butter, sugar and cocoa. Stir in eggs, milk and vanilla. Blend in flour, baking powder and salt. Stir in bananas and nuts. , Pour into a greased 9-in. square baking pan. Bake at 350° for 40-45 minutes or until brownies test done. Cool on a wire rack. Just before serving, dust with confectioners' sugar if desired.

A small banana is added to a basic made-from-scratch brownie for a hint of banana flavor. This is a fudgy brownie and it does not rise much. Add 1/2 cup chopped nuts or mini chocolate chips for more flavor. No mixer required!

½ cup butter
⅔ cup semisweet chocolate chips
1 large egg
⅔ cup packed light brown sugar
1 small ripe banana, mashed
½ teaspoon vanilla extract
¼ teaspoon salt
¾ cup all-purpose flour

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Grease an 8 inch square pan.
  • Melt butter in sauce pan over medium-low heat. Remove from heat, add chips, and stir until melted. Set aside to cool for 5 minutes.
  • Lightly beat the egg in a medium bowl. Stir in the brown sugar, banana, vanilla, and salt. Pour the melted chocolate mixture into the banana mixture, and stir until well combined. Add the flour, stirring just until incorporated. Spread the batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted near the center comes out with moist crumbs, about 30 minutes. Don't over bake. Remove, and cool pan on wire rack before cutting.

175 g unsalted butter
180 g brown sugar
200 g dark chocolate
1 teaspoon vanilla
2 eggs, lightly beaten
2 bananas, ripe (large ones, or increase no. of bananas to 3)
100 g self-raising flour, sifted
2 tablespoons cocoa powder

Steps:

  • Preheat the oven to 180 degrees Celsius Line a 9-inch square baking tin with baking paper, with an extra 1cm on the sides.
  • Combine the butter, sugar and chocolate in a large pan over a gentle flame, stirring until melted and smooth. Remove pan from heat.
  • Stir in the combined eggs, bananas and vanilla until well-mixed.
  • Sift in the flour and cocoa powder.
  • Pour the mixture into the prepared tin and bake for 35 minutes (depending on how large your bananas are).
  • Allow the brownies to cool in the tin before cutting into 16 squares.
