1 large egg, beaten
½ cup light brown sugar
¼ cup granulated sugar
½ cup butter, softened
¼ cup sour cream, greek yogurt may be substituted
1 teaspoon vanilla extract
2 ripe bananas
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
1 large egg
4 oz cream cheese, softened
¼ cup granulated sugar
3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350F (180C).
  • To prepare the bread, combine egg, sugars, butter, sour cream and vanilla in a large mixing bowl. Whisk together. Add the bananas and mash together.
  • Add flour, baking powder, baking soda and mix lightly to combine. Set aside.
  • To prepare the cream cheese filling, mix egg, cream cheese, sugar, and flour in a small bowl.
  • To assemble the muffins, spoon a layer of bread batter into a greased muffin tin. Then spoon a layer of cream cheese filling, then top off with another layer of bread batter.
  • Bake for 20-25 minutes. Baking times may vary. Muffins are done when a tooth pick inserted in the center comes out clean.
  • Allow muffins to cool for 15 mins.

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1/2 cup butter, room temperature

1 cup sugar
4 ripe bananas, mashed (preferably black-skinned)
1/2 cup roughly crushed walnuts
1/2 cup chocolate chips

Steps:

  • Sift the flour, baking soda and salt into a bowl. Set aside.
  • Whisk the eggs and the vanilla together. Set aside.
  • Preheat oven to 350°F.
  • Cream together the butter and sugar until light and fluffy (I use a Kitchen Aid stand mixer for this).
  • Gradually pour the egg mixture into the butter while mixing until incorporated.
  • Add the bananas and stir until incorporated.
  • Mix in the flour mixture until just incorporated with a spatula.
  • Pour in the walnuts and chocolate chips and gently fold into mixture.
  • Place mixture in a paper-line muffin tray and bake for about 20 minutes or until a toothpick comes out clean. (All tray sizes and ovens are different so keep an eye on them).

Steps:

  • Preheat the oven to 425 degrees F.
  • Lightly brush a 12-muffin tin with butter and set aside.
  • Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.
  • Whisk the banana, oil, milk, eggs, salt, and vanilla in a large measuring cup with a spout or another bowl.
  • Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not overmix the batter or your muffins will come out dense. Gently stir in the nuts. Divide the batter evenly into the muffin tin.
  • Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes.   • Once creamed, add Baking Soda, Salt, and flour. Mix well.

  • 1. Full directions are on the box of whole wheat pancake mix, by A.J. THESE ARE WONDERFUL RECIPES, WHICH I WILL USE MANY TIMES. THEY ARE QUICK, EASY AND PERFECT.
  • 2. The Apple-Walnut Muffins are made in several steps: First you measure the dry ingredients into a large bowl, and set aside.
  • 3. In a medium sized bowl, mix one egg, one cup milk, one tablespoon oil, one small or individual-size serving of "Natural" apple sauce (unsweetened); and blend together.
  • 4. Measure out one and one/half cups of POST Raisin Bran Cereal, and stir into the liquid ingredients.
  • 5. The Granny Smith apple needs to be cored, peeled and shredded. I prefer to use one large G.S. Apple. I also use 1 cup of chopped walnuts, coarsely chopped.
  • 6. Combine the wet ingredients with the dry ingredients in the large bowl and stir in the apple and walnuts.
  • 7. Have a twelve-cup Medium-size muffin pan sprayed with oil, and an ice-cream scoop also sprayed with oil ready. The oven should be preheated to 425 degrees.
  • 8. Scoop the batter into the muffin tin and bake for at least 25 minutes. Remove tin and let rest on the counter on a cake rack for a few minutes, then loosen muffins. Enjoy one (or two) while warm with a nice hot cup of coffee for breakfast each morning! We do!

I bought a 20lb bag of bananas at Krogers for $1.00 and have been trying to use them all up. This is one of the recipes I made in the process. It was by far the most scrumptious recipe that I made. It could also be made into a bread, but I made muffins. This is definitely my new default banana bread recipe! Imade a double batch and ended up with 39 muffins. I made half with the called for maple syrup/pecan topping and half with a cream cheese topping. To make the cream cheese topping, I whipped 6oz cream cheese with 1/4 cup brown sugar and 1/4 cup maple syrup. These were absolutely heavenly fresh out of the oven. *For the gluten free flour, I used Bette Hagman's mix: 2 parts garfava bean flour, 1 part sorghum flour, 3 parts cornstarch, and 3 parts tapioca flour.

Add the eggs, seal the bag, and shake and squish until combined. Add the sugar and mix well. Dump in the flour, salt, baking soda, baking powder, and cinnamon. Before zipping and mixing them all the way in, mix them together a little with your measuring spoon. Now add the oil** and vanilla and shake and squish until well combined. Snip the corner of the bag and squirt the batter into a lined muffin tin (if you don't want to clean the pan, line it with tin liners so the grease doesn't come through). Don't make the hole very big at all because the batter is very runny. Pinch the corner between each muffin. Bake for about 20 minutes or until a toothpick comes out clean. To make the glaze, just mix together the powdered sugar and milk or lemon juice and spread over cooled muffins.

I just made these thought I would try something and it turned out good. Even my husband who doesn't have special dietary needs said they tasted good. Even if sugar isn't not a worry for you just swap out the Spenda for regular sugar. I was impressed with the almond flour, I added extra baking soda because all of the reading on almond flour said it does not raise well and my muffins did well.

8 ounces bananas
1 egg
3/4 cup Splenda granular
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 cup all-purpose flour
1 cup almond flour

Steps:

  • Mash banana add egg, Splenda, unsweetened applesauce, vanilla, cinnamon, baking soda, baking powder, mix well.
  • Add in almond flour 1/2 a cup at a time mix well then add the all purpose flour.
  • Take muffin pan put in liners or spray with non stick spray spoon in 1/4 cup mixture into each muffin slot. Bake at 350°F for 25 to 30 minutes. Enjoy.

4 over ripe bananas
180g caster Sugar
1 egg
200g Plain Flour
1.5 teaspoons baking powder
75g melted butter
4 over ripe bananas

400g Icing Sugar
30g melted butter
150g cream cheese
Juice from 1/4 of a small lime (or lemon)
1 teaspoon of vanilla extract
Sprinkles (optional)

Steps:

  • Preheat the oven to 180 C/ Gas 4
  • Mash the bananas and combine with the sugar, egg and melted butter.
  • Sieve in the flour and baking powder, mixing in as you go.
  • Pour into a banana bread case and place in the oven for 30 minutes, check the banana bread and remove once golden and risen.
  • Alternatively spoon into muffin cases and bake for 25 minutes, check on muffins and remove once golden and spongy.
  • Whilst the banana bread/muffins are cooling down. Begin to make the icing.
  • Whip together the melted butter and cream cheese. Then add 300g of the icing sugar and mix well.
  • Then add the lime juice and vanilla extract to the mixture. After this slowly add as much as required of the the rest of the icing sugar until the icing is sweet enough and you will know the texture is ready when a flattened tea spoon of icing is turned side ways it doesn't drip off.
  • Ice your Banana bread or Muffins once they have cooled down and add sprinkles (optional).

1 teaspoon baking powder
1 teaspoon Ener-G Egg Substitute
1 teaspoon salt
1 cup chopped nuts (optional)
1 1/4 cups sugar
1/2 cup Butter Flavor Crisco
1 large very ripe banana, mashed
1/2 cup lactade lactose-free milk (or dairy free sub)
1 teaspoon vanilla
1/2 cup cold water
2 teaspoons ground flax seed meal
2 cups rice flour
2/3 cup potato starch
1/3 cup tapioca starch
3 teaspoons xanthan gum

Steps:

  • In a medium bowl sift together all dry ingredients except nuts and set aside.
  • In a large bowl mash the banana. Add the sugar, Crisco, flaxmeal egg replacer, milk (or sub) and vanilla. Mix well.
  • Mix dry ingredients into large bowl with wet ingredients and mix well. Fold in nuts.
  • Spoon into greased mini muffin tins and bake 10-12 minutes. Cool on wire rack.
  • Mini muffin tins are the only way I've tried so far but I'm sure this could be bread or regular sized muffins as well.
  • Flaxmeal Egg Replacer:.
  • In a small container mix 1/2 cup cold water with 2 teaspoons ground flaxmeal and shake well.
  • GF flour mix:.
  • 2 cups rice flour.
  • 2/3 cup potato starch.
  • 1/3 cup tapioca starch.
  • 3 teaspoons xanthan gum.
