2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter
¾ cup brown sugar
2 eggs, beaten
2 ⅓ cups mashed overripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  • Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

A quick banana bread for the bread machine. Use the DOUGH setting for mixing, then BAKE with the control set to light.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¾ cup white sugar
3 tablespoons vegetable oil
2 eggs
2 bananas, peeled and halved lengthwise

Steps:

  • Place ingredients in the pan of the bread machine.
  • Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.
  • Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is batter on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to ensure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

This bread is inspired by the "Banana Man", a wildly eccentric character that supported himself by the sale of his bread off the back of his bicycle in Key West, Florida. It is by far the best recipe for a "special" banana bread treat.

1/3 cup pecans, toasted and coarsely chopped
1/3 cup cashews, toasted and coarsely chopped
2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup butter, softened (1 stick)
1 cup packed dark brown sugar
2 extra-large eggs
1 1/2 teaspoons vanilla extract
1/4 cup dark rum
2 cups mashed bananas (4 to 5 Medium banana)
1 1/2 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
3 tablespoons plain yogurt or 3 tablespoons sour cream
1/2 cup semi-sweet chocolate chips
1 cup pitted dates, chopped
1/3 cup dried cherries
1/3 cup diced dried papayas or 1/3 cup apricot

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease and flour an 8.5" - 4.5" loaf pan.
  • In a medium bowl, whisk together the flour and baking soda.
  • In a large bowl beat together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Add the bananas, vanilla extract, rum and spices. Beat until blended.
  • Alternately add the dry ingredients and the yogurt to the batter, beating until fluffy. Fold the remaining ingredients into the batter.
  • Spoon the batter into the pan; bake for 10 minutes. Reduce the temperature to 300 degrees and bake for 70 minutes until the bread pulls away slightly from the sides of the pan and a toothpick inserted comes away clean.
  • Let the bread cool in the pan on a wire rack for 10 minutes. Invert the loaf onto a rack, remove the pan, then turn the loaf right side up to cool completely.

1-3/4 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
2 medium ripe bananas, mashed (1 cup)
1/2 cup canola oil
1/4 cup plus 1 tablespoon buttermilk
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. , Pour into a greased or parchment-lined 9x5-in. loaf pan. If desired, sprinkle with additional walnuts. Bake until a toothpick comes out clean, 1-1/4 to 1-1/2 hours. Cool in pan for 15 minutes before removing to a wire rack.

Here is an easy way to use up the bananas on the countertop, or brown ones thrown in the back of the freezer. Don't overmix the ingredients, and make sure the bananas are very ripe.

Number Of Ingredients 10

1/4 pound cool butter (1 stick), more for greasing pan
3/4 cup dark brown sugar
2 eggs, at room temperature
2 1/3 cups very ripe bananas (about 5)
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons chopped walnuts or pecans
1 tablespoon granulated or coarse sugar
1/8 teaspoon cinnamon

Steps:

  • Heat oven to 350 degrees. Lightly grease a 9-by-5-inch loaf pan. Using electric mixer, cream butter until smooth and fluffy. Add sugar and cream together 2 minutes more. One at a time, mix in eggs. Mix in bananas until only small lumps remain.
  • Stir dry ingredients together and mix into banana mixture just until combined. Pour into prepared pan. If making topping, stir ingredients together and sprinkle over batter.
  • Bake about 55 to 65 minutes, until a toothpick inserted into center comes out clean. Let cool in pan 10 minutes, then turn out onto wire rack and let cool completely before wrapping tightly for storage.
