GLAZE:
3 brown bananas (1 cup mashed)
2 eggs
1 cup sugar
1 cup all-purpose flour*
1/2 teaspoon salt
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 cup vegetable oil
1 teaspoon vanilla
1/2 cup powdered sugar
1 tablespoon milk or lemon juice

Steps:

  • Preheat oven to 375ºF. Get out a 1/2 measuring cup and a 1/4 teaspoon (these will be all you need to measure your ingredients). In a large Ziploc bag, mash the bananas. Add the eggs, seal the bag, and shake and squish until combined. Add the sugar and mix well. Dump in the flour, salt, baking soda, baking powder, and cinnamon. Before zipping and mixing them all the way in, mix them together a little with your measuring spoon. Now add the oil** and vanilla and shake and squish until well combined. Snip the corner of the bag and squirt the batter into a lined muffin tin (if you don't want to clean the pan, line it with tin liners so the grease doesn't come through). Don't make the hole very big at all because the batter is very runny. Pinch the corner between each muffin. Bake for about 20 minutes or until a toothpick comes out clean. To make the glaze, just mix together the powdered sugar and milk or lemon juice and spread over cooled muffins.

2 c ripe bananas mashed (3-5)
1 stick softened butter
2 large eggs
1/2 c buttermilk
1 c white sugar
1/2 c dark brown sugar packed
2 Tbsp molasses
1 Tbsp pure vanilla extract
2 1/2 c flour
1 tsp salt
1 tsp baking soda
1/2 c chopped pecans toasted

Steps:

  • 1. Preheat oven to 325, ensuring rack is in the middle of the oven. Prepare a large loaf pan by greasing with butter or non stick spray.
  • 2. Measure flour, salt and soda into a medium bowl. Whisk to combine. Set aside.
  • 3. Using a whisk, cream the butter in a large bowl. Add in the sugars, whisking until incorporated. Whisking, add in eggs, vanilla, molasses and buttermilk. Stir in mashed banana.
  • 4. Stir dry ingredients into the wet ingredients. Stir just until thoroughly incorporated. Stir in pecans if using.
  • 5. Pour into greased loaf pan. Bake in center of oven for 90 minutes. Test doneness with a toothpick inserted into center of loaf. If it remains dry, with some crumbs it is done. Let cool 20 minutes on a rack. Run a knife along sides and turn out onto cooling rack to cool to room temperature.

1/2 cup butter or margarine, softened
2 eggs
1 1/2 cups mashed very ripe bananas (3-4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts (optional)

Steps:

  • Heat an oven to 350 degrees F. Grease bottoms of two 8 x 4 inches loaf pans. In large bowl, mix sugar and butter. Add eggs, bananas (increase recipe by one banana), buttermilk and vanilla; beat with an electric mixer on medium speed until smooth. Stir in flour, baking soda, salt and nuts (if using) until the mixture becomes moistened. Distribute the batter evenly into the two pans. Bake for one hour or until a toothpick inserted in center comes out clean. Cool for 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling rack. Let the bread cool for about an hour before slicing.

However, I love Lotus because it has a caramel taste to it.

1 cup white sugar
½ cup butter, softened
6 ripe bananas, mashed
2 eggs, beaten
1 ½ cups cake flour
3 tablespoons cake flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon vanilla extract
½ cup European cookie spread (such as Biscoff®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with cooking spray.
  • Combine sugar and butter in a large bowl; beat with an electric mixer until creamy. Beat in bananas and eggs.
  • Mix 1 1/2 cup plus 3 tablespoons cake flour, baking soda, and salt together in a bowl. Mix into the banana mixture. Stir in vanilla extract. Pour half of the batter into the prepared pan.
