This is the perfect breakfast for those days when you really want a muffin but need something hearty and healthy like oatmeal. For the best flavor use a very ripe banana. Any fruit can be substituted for the banana, including dried fruit (cranberries!) and nuts. The bars are great the next day, too. Once cool, put the bars into the fridge, then pop them in the microwave for a few seconds before eating.

½ cup unsweetened applesauce
½ cup white sugar
3 cups old-fashioned oats
1 ¼ cups 2% milk
2 large eggs, beaten
1 teaspoon baking powder
½ teaspoon salt
1 over-ripe banana, mashed
2 teaspoons packed brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.
  • Beat applesauce and white sugar together in a bowl. Add oats, milk, eggs, baking powder, and salt to applesauce mixture; beat until evenly mixed. Stir banana into oat mixture. Pour batter into prepared baking dish.
  • Stir brown sugar and cinnamon together in a small bowl; sprinkle mixture over banana batter.
  • Bake in the preheated oven until firm, 30 to 35 minutes. Cool for 5 minutes before slicing into bars.

BANANA BREAD BARS
1 1/2 c sugar
1 c sour cream
2 eggs
1/2 c butter, softened
1 3/4 c mashed ripe bananas (3-4 bananas)
2 tsp vanilla extract
2 c all purpose flour
1 tsp baking soda
3/4 tsp salt
1/2 c chopped walnuts (optional)
BROWN BUTTER FROSTING
1/2 c butter
4 c powdered sugar
1 1/2 tsp vanilla extract
3 Tbsp milk

Steps:

  • 1. 1. Heat oven to 375F. Grease and flour 15x10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.
  • 2. 2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.
  • 3. 3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.
  • 4. 4. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).

½ cup butter, softened

1 ¾ cups mashed ripe bananas

2 cups all-purpose flour

½ cup butter
4 cups confectioners' sugar
3 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 15x10-inch jelly roll pan.
  • Beat white sugar, sour cream, 1/2 cup softened butter, and eggs in a bowl with an electric mixer until creamy. Beat in bananas and 2 teaspoons vanilla extract. Add flour, baking soda, and salt; mix for 1 minute. Stir walnuts into batter until evenly incorporated. Spread batter in prepared pan.

1/2 c butter, softened
2 c sugar
3 eggs
1 1/2 c ripe mashed bananas
1 tsp vanilla
2 c flour
1 tsp baking soda
1 pinch salt

Steps:

  • 1. Cream butter and sugar, add eggs and mix well, add mashed bananas and mix well, add vanilla and mix well.
  • 2. In a separate bowl mix flour, baking soda and salt. Mix well and add to first mixture and mix well.
  • 3. Pour into a greased 15X10 Jelly Roll pan or use a cake pan and a small pan so the batter isn't so thick or it won't cook in the middle.
  • 4. Bake 350 degrees for 25 min or until it tests done.
  • 5. Cream Cheese Frosting 1/2 C butter 1 pkg cream cheese 4 Cups powdered sugar 2 teaspoons vanilla mix well and spread over cooled banana bars. Refrigerate to set Can refrigerate or leave out.
