Wheat flour - 1/2 cup
All-purpose-flour - 1/2 cup
Baking Soda- 1/2 tsp
Baking powder - 1 tsp
Kellogg All bran - 1 cup
Banana - 1 cup (mashed)
Eggs - 2
Vanilla - 1 tsp
Butter - 1/4 cup (soften)
Sugar - 1/2 cup
Sliced roasted almonds - 1/2 cup

Steps:

  • Preheat the oven to 350 degree Fahrenheit. Place a parchment paper on loaf pan and Grease the loaf pan with spray/butter
  • In a wide bowl add wheat flour, all-purpose-flour, baking powder, baking soda and salt; mix well and set aside
  • In a separate bowl add cereal, banana, eggs and vanilla; mix well. Let the mixture sit for 5 minutes or till the cereal softens
  • In Separate bowl beat butter and sugar on medium speed till both are combined well
  • Add small quantity of flour, cereal mixture and mix well. Keep doing this till you add all the flour mixture and wet ingredients
  • Add the almonds and give a final mix. Transfer the mixture into a loaf pan and bake for 30 -32 minutes or till the fork/pick comes out clean
  • Remove from pan and serve it warm or cold

4 ripe bananas
1 egg
¼ cup yogurt
2 tbsp olive oil
2 tsp vanilla extract
1 cup oat bran
1 ½ cups whole wheat flour
¼ cup coconut sugar
2 ½ tsp baking powder
½ tsp baking soda
½ tsp salt

Steps:

  • Preheat the oven to 350 degrees. Lightly oil a loaf pan.
  • Place the banana into a blender or food processor. Pulse a few times until you get a banana puree. Add the egg, yogurt, oil, and vanilla extract. Pulse a few times to combine. Alternatively, you can mash the banana with a fork and then combine everything with a whisk or an electric mixer.
  • In a large bowl, combine the oat bran, flour, coconut sugar, baking powder, baking soda, and salt. Mix well.
  • Combine the wet and dry ingredients, stirring only until everything is moistened. Do not overmix.
  • Pour the batter into the loaf pan. Bake for 50 minutes to one hour or until the cake tester comes out clean.
  • Take the loaf pan out of the oven. Let the banana bread cool in the loaf pan for about 10 minutes and then carefully transfer it onto a cooling rack. Let it cool for at least 10 minutes before slicing.

3/4 cup wheat bran
1 cup all-purpose flour
3/4 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch salt
1 teaspoon cinnamon
1 cup buttermilk
3/4 cup brown sugar
1/3 cup melted butter
2 eggs
3 ripe bananas
2 tablespoons orange juice
1 tablespoon grated orange rind
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)

Steps:

  • To make buttermilk if fresh is not available, combine 1 tbsp (15 ml) of white vinegar with milk.
  • Preheat oven to 350 °F (180 °C).
  • In a large bowl, stir together bran, both flours, baking powder, baking soda, salt and cinnamon; set aside.
  • In a medium bowl, beat together buttermilk, brown sugar, butter, eggs, bananas, orange juice and peel.
  • Fold into dry ingredients just until moistened.
  • Stir in raisins and walnuts and spoon batter into a buttered 9"x 5" (23 x 13 cm) loaf pan.
  • Bake for 55 to 60 minutes or until a toothpick inserted in the centre comes out clean.
  • For the adventurous:Add dried cranberries instead of raisins.

1 cup low-fat milk
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 teaspoon baking soda
1/2 cup sugar
1/2 cup golden raisin
1/2 cup chopped walnuts
1/2 cup wheat germ
3 bananas, mashed
2 eggs
2 tablespoons powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Place the bran flakes in a bowl, cover with the milk, and allow to stand for 10 to 15 minutes.
  • In a large bowl, combine the flour, baking soda, sugar, raisins, walnuts, and wheat germ. Stir well.
  • Mash the bananas thoroughly, break in the eggs, and stir to combine.
