ULTIMATE SPINACH PIZZA



Ultimate Spinach Pizza image

Get your greens and pizza fix all at once with this spinach pizza! Ricotta, mozzarella and Parmesan cheese make for a creamy pie everyone will love.

1 ball Best Pizza Dough (or Thin Crust Dough)
8 ounces frozen spinach
1/8 teaspoon garlic powder
1/4 teaspoon dried oregano
1/2 cup whole milk ricotta cheese
Kosher salt
Fresh ground black pepper
1 handful sliced red onion
1/2 jarred roasted red pepper (or fresh red bell pepper), diced
1/2 small garlic clove (1/4 teaspoon minced)
1/2 cup shredded mozzarella cheese
1/4 cup shredded Parmesan cheese

Steps:

  • Follow the Best Pizza Dough or Thin Crust Dough recipe to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
  • Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (here's the pizza oven we use).
  • Run the spinach under warm water in a strainer, then squeeze out as much water as possible so that it has a dry, crumbly texture. Mix it in a bowl with 1/8 teaspoon kosher salt, the garlic powder and the oregano.
  • Mince the garlic. In a small bowl, mix the ricotta with the kosher salt, fresh ground pepper and minced garlic. Thinly slice the red onion, and dice the roasted red pepper.
  • When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don't have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel.
  • Spread the seasoned ricotta onto the dough. Top with the mozzarella cheese, Parmesan cheese, spinach, red onion, and red pepper.
  • Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Bake the pizza until the cheese and crust are nicely browned, about 5 to 7 minutes in the oven (or 1 minute in a pizza oven). Slice into pieces and serve immediately.

Top this simple spinach pizza with the sweetness of lightly marinated grape tomatoes and pearls of fresh mozzarella cheese.

1 cup grape tomatoes, halved
1/4 cup reduced-fat balsamic vinaigrette
1 box (9 oz) frozen chopped spinach
1 package (10 oz) prebaked whole wheat pizza crust
1/4 teaspoon black pepper
3/4 cup fresh mozzarella pearls (5 oz)
2 tablespoons thinly sliced fresh basil leaves

Steps:

  • Heat oven to 425°F. In medium bowl, place grape tomatoes and vinaigrette; stir to coat. Set aside.
  • Cook spinach as directed on box. Squeeze to drain well.
  • On ungreased cookie sheet, place pizza crust. Spread spinach evenly over crust; sprinkle with pepper. With slotted spoon, remove tomatoes from vinaigrette; arrange tomatoes over spinach. Top evenly with mozzarella cheese.
  • Bake 8 to 10 minutes or until cheese is melted and bubbly. Sprinkle with basil.

2 packages (10 ounces each) fresh spinach
3/4 cup shredded part-skim mozzarella cheese, divided
1/2 cup fat-free cottage cheese
1/3 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper
1 prebaked 12-inch thin pizza crust
1 medium tomato, chopped
1/4 cup chopped green onions
1/4 cup sliced ripe olives
1 teaspoon minced fresh basil
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1 garlic clove, minced
1/2 cup crumbled feta cheese

Steps:

  • In a large nonstick skillet coated with cooking spray, saute spinach for 2-3 minutes or until wilted; remove from the skillet. Cool slightly; chop. , In a large bowl, combine 1/4 cup mozzarella cheese, cottage cheese and Parmesan cheese. Stir in the spinach, salt and pepper. Spread over crust to within 1/2 in. of edge., In a large bowl, combine the tomato, onions, olives, basil, oil, vinegar and garlic; sprinkle over spinach mixture. , Top with the feta cheese and remaining mozzarella cheese. Bake at 400° for 12-14 minutes or until cheese softens and is lightly browned.

SPINACH-ARTICHOKE FLATBREAD PIZZAS



Spinach-Artichoke Flatbread Pizzas image

Using flatbread as the foundation for these pizzas ensures a crispy crust that you can feel good about devouring. In this recipe, I finish the pizzas with a balsamic reduction: Balsamic vinegar cooked down to a sweet, gooey glaze to drizzle over your flatbread toppings. It's like the "icing on the pizza"!

1 cup balsamic vinegar
6 Flatout Light Italian Herb flatbreads
3/4 cup Prego Light Homestyle Alfredo sauce
6 cups baby spinach
3 cups grape tomatoes, halved
1 (15-ounce) can quartered artichoke hearts, drained and chopped
3/4 cup shredded reduced-fat mozzarella cheese (I like Sargento)

Steps:

  • Preheat the oven to 350˚F. Line 2 baking sheets with foil.
  • In a small saucepan, bring the balsamic vinegar to a boil over medium heat. Reduce the heat to medium-low and simmer until the balsamic vinegar starts to thicken and has reduced by half, 20 to 25 minutes.
  • Meanwhile, lay out the flatbreads on the prepared baking sheets and coat with cooking spray. Bake for 5 to 6 minutes. Remove from the oven but leave the oven on.
  • Spread 2 tablespoons Alfredo sauce evenly onto each flatbread. Top each with 1 cup spinach, 1/2 cup grape tomatoes, 1/4 cup artichokes, and 2 tablespoons mozzarella.
  • Return to the oven and bake until the cheese is melted, 7 to 9 minutes. Remove from the oven and drizzle the balsamic reduction evenly over each pizza.

Spinach is one of my favorite vegetables. When I found this in a food magazine (one of the free magazines you get here at the supermarket) I immediately had to try it.

2 lbs fresh spinach, washed
1/2 tablespoon butter or 1/2 tablespoon margarine, melted
2 teaspoons balsamic vinegar (dark or white)
salt and pepper

Steps:

  • Cook spinach with water that clings to it 3-5 minutes or until leaves begin to wilt.
  • Remove from heat and drain thoroughly.
  • Season with salt and pepper to taste.
  • Combine melted butter (margarine) and vinegar.
  • Mix in butter and vinegar just before serving.
