4 boneless pork loin chops (6 ounces each)
3/4 teaspoon salt, divided
1/2 teaspoon pepper
3 tablespoons butter, divided
1 large red onion, halved and thinly sliced
2/3 cup balsamic vinegar
2 teaspoons brown sugar
1/2 teaspoon dried rosemary, crushed

Steps:

  • Sprinkle pork chops with 1/2 teaspoon salt and pepper. In a large skillet, brown chops in 1 tablespoon butter. Remove and keep warm., In the same skillet, saute onion in 1 tablespoon butter until tender. Stir in the vinegar, brown sugar, rosemary and remaining salt. Bring to a boil; cook until liquid is reduced by half., Return chops to the pan; cook, uncovered, over medium heat for 4-6 minutes on each side or until a thermometer reads 145°. Remove chops to a serving plate and let stand for 5 minutes before serving. Stir remaining butter into skillet until melted. Serve with pork chops.

4 pork chops, center cut
1 can(s) jellied cranberry sauce, 14 oz
1 Tbsp dried, grated orange peel
1 Tbsp balsamic vinegar
3 Tbsp olive oil, extra virgin
salt and pepper, to taste

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Bring pork chops to room temp, pat dry, and season with salt and pepper (on both sides) before cooking.
  • 3. Pour oil in large, heavy skillet. Heat over medium-high heat until really hot (sorry, I didn't measure temp but it was searingly hot).
  • 4. In bowl, combine cranberry sauce and orange peel. Stir until well blended. You'll only need about half of this mixture, So, put 1/2 of this cranberry/orange mixture in sealed plastic container, refrigerate and save for later (it makes a TOTALLY yummy spread for your toast).
  • 5. To the remaining half of cranberry/orange mix, add balsamic vinegar and stir until blended.
  • 6. Arrange pork chops in hot skillet and sear just until browned then flip over and sear other side (about 2 min per side). **NOTE** This stuff splatters so be careful not to get burned!
  • 7. Transfer seared pork chops to 8x8 baking dish. Add 2-3 Tbsp of water in the bottom of the pan. Spread pork chops, generously, with cranberry mixture.
  • 8. Place on middle rack of preheated oven and bake for 10 minutes.
  • 9. At the very end of baking time, switch oven to broil to "caramelize" cranberry glaze. Watch it closely... this only takes a minute or so.
  • 10. Remove from oven, let rest 5 minutes before serving.

4 (3/4-inch-thick) center-cut pork chops (about 2 lb total)
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
6 oz small shallots (about 8), quartered and peeled, leaving root ends intact
2/3 cup balsamic vinegar
1 1/2 teaspoons sugar

Steps:

  • Pat pork dry and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook pork (in 2 batches if necessary) along with shallots, turning pork over once and stirring shallots occasionally, until pork is browned and shallots are golden brown and tender, about 5 minutes total. Transfer pork with tongs to a plate and add vinegar, sugar, and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper to shallots in skillet. Cook, stirring until sugar is dissolved and liquid is thickened slightly, about 1 minute.
  • Reduce heat to moderate, then return pork along with any juices accumulated on plate to skillet and turn 2 or 3 times to coat with sauce. Cook, turning over once, until pork is just cooked through, about 3 minutes total. Transfer pork to a platter and boil sauce until thickened and syrupy, 1 to 2 minutes. Pour sauce over pork.

  • Place pork in a shallow dish, and season with salt and pepper. Pour vinaigrette over pork, and turn to coat. Cover, and refrigerate at least 1 hour (or up to 1 day).
  • Heat broiler, with rack set 4 inches from heat. Remove pork from marinade (letting excess drip off); place on a foil-lined rimmed baking sheet. Broil, without turning, until opaque throughout, 8 to 10 minutes (if chops are browning too quickly, turn them). Let rest 5 minutes before serving.

1 1/2 cups wood chips (hickory or applewood or mesquite), soaked in cold water for at least 30 minutes
4 (1-inch) bone-in center cut pork chops
1 cup balsamic vinegar
1/4 cup maple syrup
Pinch allspice
Salt and freshly ground black pepper
Canola oil

Steps:

  • Preheat the oven to 400 degrees F. Remove the wood chips from the water and spread evenly in the bottom of a roasting pan. Cover the top tightly with aluminum foil. Put in the oven until the chips get hot and begin to smoke, about 15 minutes.
  • Remove the pan from the oven and remove the foil from the pan. Put a baking rack inside the pan and arrange the chops on top of the rack, leaving a few inches of space between each one. Quickly cover with the foil again and let sit on your kitchen counter for 10 to 15 minutes.
  • While the pork chops are smoking, put the vinegar in a small pan over high heat and cook until reduced to 1/4 cup, about 5 minutes. Remove from the heat and whisk in the maple syrup, allspice, and salt and pepper, to taste. Let cool slightly.
  • Heat a grill pan over medium-high heat. Brush the ridges with some of the canola oil. Brush the chops on both sides with some of the glaze and season with salt and pepper. Grill on both sides, brushing with more of the glaze, until golden brown and slightly charred and cooked to medium doneness, about 7 minutes per side. Remove from the grill, loosely tent and let rest for 5 minutes. Transfer to a serving platter and serve.

1 small onion, chopped
1 tablespoon fresh thyme, chopped

2 tablespoons honey
1 cup chicken stock

Steps:

  • Heat a large skillet over medium-high. Add 2 tablespoons of olive oil. Season the chops with salt and pepper, then add to the hot skillet. Cook 5 minutes on each side.
  • Transfer the chops to a platter and cover with foil. Return the pan to the heat and add the remaining tablespoon of olive oil and the onions, thyme, rosemary and garlic. Sauté for 4-5 minutes.

Bell Pepper (I tend to use red)
Basil (preferably fresh)
Oregano (preferably fresh)

Olive Oil
Rum
Jarred Pasta Sauce (or tomato paste)

Steps:

  • Firstly, heat a deep pan and add olive oil. Once oil is up to temperature, add chopped bell pepper, garlic, and a dash of salt. Begin boiling the pasta. Roast peppers until they begin to brown. Add a dash or two of sugar, balsamic vinegar, oregano, basil, and rum. Once the mix has formed a glaze on the peppers, trim the fat from the pork chops and place them in this pan. Add black pepper and a dash more balsamic vinegar. Cook the chops until done through and add pasta sauce and salsa. Heat until boiling, simmer, and add strained pasta. Mix and serve.

3 tablespoons cold unsalted butter
1 (6 ounce) box rice pilaf mix, such as Near East brand
3 tablespoons extra virgin olive oil
4 center-cut pork loin chops (1-inch-thick)
salt & freshly ground black pepper
1 small onion, chopped
1 tablespoon fresh thyme leave, chopped
1 sprig fresh rosemary, chopped
3 garlic cloves, chopped
1/4 cup balsamic vinegar
2 tablespoons honey
1 cup chicken stock or 1 cup broth
2 cups trimmed and chopped arugula
15 -20 fresh basil leaves, shredded

Steps:

  • In a medium pot over high heat, combine 1 tablespoon of the butter and 1 and 3⁄4 cups water. Cover and bring to a simmer. Add the rice and flavor packet to the water. Stir to combine, reduce the heat, and cook for 18 minutes, covered.
  • While the rice is cooking, heat a large skillet over medium-high heat for the chops. Add 2 tablespoons of the EVOO (twice around the pan). Season the chops with salt and pepper, then add to the hot skillet. Cook the chops for 5 minutes on each side.
  • Transfer the chops to a platter and cover with foil. Return the pan to the heat and add the remaining tablespoon of EVOO and the onions, thyme, rosemary, and garlic, then sauté for 4 to 5 minutes. Add the balsamic vinegar, honey, and chicken stock. Cook until the liquids have reduced by half.
  • While the glaze is reducing, finish the rice pilaf. Add the arugula and basil to the cooked rice, stirring with a fork to fluff the rice and combine the greens at the same time.
  • Once the balsamic glaze has reduced by half, turn off the heat and add the remaining 2 tablespoons of cold butter. Stir and shake the pan until the butter melts. Add the chops to the pan and coat them in the balsamic glaze. Serve the glazed chops alongside the arugula-basil rice pilaf.
  • The chicken with tomato, basil, and smoked mozzarella can be served cold as well, making this dish perfect for lunch or dinner buffet entertaining.
