GERMAN BUTTER CAKE - BUTTERKUCHEN

Number Of Ingredients 13

1 cup heavy cream
1 cup sugar
4 eggs
1 tbsp. vanilla extract
1 tbsp. lemon juice
1 tsp. lemon extract
2 cups flour
4 tsp. baking powder
1 cup sugar
2 tsp. vanilla extract
9 tbsp. butter
4 tbsp. milk
2 cups sliced almonds

Steps:

  • Pre-heat the oven to 400 F. (If you use a dark baking pan, reduce the heat to 375 F)
  • Add all ingredient for the dough to a large bowl and mix until just combined. Make sure to don´t incorporated too much air. The air could cause a collapse during baking.
  • Grease a baking pan or casserole dish. I use a clear casserole dish 9x13.
  • Pour the dough into the pan and spread out evenly.
  • Add butter and milk into a small sauce pan and melt on low heat.
  • Add the sugar and stir until the sugar is completely dissolved.
  • Add the vanilla extract and the almond slices to the sauce pan and combine well.
  • Carefully top the dough with the mixture and spread out evenly.
  • Bake for about 20 - 25 min. at 400 F. (If you use a dark baking pan, reduce the heat to 375 F)
  • Remove the cake from the oven and allow to cool completely in the pan.
  • Sprinkle with powdered sugar. (optional)

Everyone has their favorite butter cake recipe. This one is mine. Found it in old recipe file that belonged to my mother-in-law.

3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups sugar
1 cup butter, softened
4 eggs
2 teaspoons vanilla
1 cup milk
1/2 cup butter, softened
3 (1 ounce) unsweetened chocolate squares, melted, cooled
4 cups powdered sugar
1/4 cup milk
2 teaspoons vanilla

Steps:

  • Heat oven to 350°F Combine flour, baking powder and salt in medium bowl. Set aside.
  • Beat sugar and 1 cup butter in large bowl at medium speed, scraping bowl occasionally, until creamy. Add eggs, two at a time, beating well after each addition. Add 2 teaspoons vanilla. Reduce speed to low; add flour mixture alternately with 1 cup milk, beating well after each addition.
  • Pour batter into greased 13x9-inch baking pan. Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • Meanwhile, beat 1/2 cup butter and cooled chocolate in large bowl at medium speed until creamy. Gradually add powdered sugar, alternately with 1/4 cup milk and 2 teaspoons vanilla and scraping bowl occasionally, until well mixed. Frost cooled cake. Sprinkle with decorator sprinkles, if desired.
  • TIP: Add 1 to 2 tablespoons additional milk to frosting for desired spreading consistency.
  • TIP: This cake is very versatile. Frost the cake or, leave unfrosted and top each serving with sliced strawberries and whipped cream.

The President's own White House Cookbook by Jones. this is a great cake i ground a cup of almonds in food processor and used 11/2 cups egg beaters egg whites (ACTUALLY IT was closer to 2 cups )this is a moist really good tasting cake and used the 1/4 c flaked almonds on top

6 large egg whites
2 cups sugar, divided
1 1/4 cups blanched almonds, toasted
1 cup butter
3 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 cup buttermilk
1 1/2 teaspoons vanilla
1 teaspoon almond extract

Steps:

  • Beat egg whites until frothy.
  • Add 1 cup sugar gradually until egg whites are stiff peaks.
  • Finely chop almonds.
  • Cream the butter and remaining 1 cup sugar until light and fluffy.
  • Sift flour, baking powder, and salt together.
  • Add vanilla extract and almond extract to buttermilk.
  • Combine nuts with flour mixture.
  • Add wet to dry by thirds.
  • Fold beaten egg whites into batter.
  • Place greased wax paper in tube pan.( i didnt do this but i wasnt flipping it out either ).
  • Turn batter into a 10-inch tube pan.
  • Bake at 350 degrees Fahrenheit for about 1 hour or until cake tests done.
  • Frost with boiled icing.

½ teaspoon salt
2 teaspoons baking powder
½ cup butter, room temperature
1 cup white sugar
2 eggs, room temperature
1 teaspoon vanilla extract
¾ cup milk, room temperature

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking pan. Line bottom with parchment or wax paper, or dust lightly with flour.
  • Sift together the flour, salt, and baking powder.
  • Beat butter and white sugar until fluffy and light in color. Gradually add eggs, beating well after each addition; stir in vanilla. This is an easy one-bowl recipe! If you prefer more sauce on the cake, then the butter sauce can easily be doubled.

1 teaspoon salt
1 1/4 teaspoons baking powder

1 cup buttermilk
1 cup butter, room temperature (no substitutions)
1 tablespoon vanilla
4 large eggs
3/4 cup sugar
1/3 cup butter (no substitutions)
3 tablespoons water
2 teaspoons vanilla

Steps:

  • Preheat oven to 325 degrees.
  • Grease and flour a 10-inch tube pan or a 12-cup bundt pan.
  • In a large bowl combine all cake ingredients; beat on low speed until moistened, then beat for another 3 minutes at medium speed.

2 1/2 cups sifted flour
1 cup sour milk
1 teaspoon baking soda
2/3 cup cocoa, dissolved in
1/2 cup boiling water

1/4 teaspoon vanilla extract
