⅛ teaspoon ground black pepper
½ cup Italian-seasoned bread crumbs
1 tablespoon Parmesan cheese
1 teaspoon dried parsley

4 cups (1/2-inch-thick) sliced zucchini

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a dark baking sheet with cooking spray.
  • Mix egg, water, and pepper together in a bowl. Combine bread crumbs, Parmesan cheese, parsley, garlic powder, and onion powder in a separate bowl.
  • Dip zucchini sticks in egg mixture, allowing excess liquid to drip back into the bowl. Press coated sticks into the bread crumb mixture until fully coated. Arrange coated sticks on the prepared baking sheet in a single layer. Spray sticks with cooking spray.
  • Bake in the preheated oven for 15 minutes. Carefully flip sticks, trying not to break the coating from the zucchini, and continue baking until lightly browned, about 10 minutes more. If not brown enough, turn on the oven's broiler and broil for 2 to 3 minutes.

1/4 cup freshly grated parmesan cheese
1 tablespoon chopped fresh oregano (or 1 tsp dried)
1/2 teaspoon fresh ground pepper
1/2 teaspoon garlic powder
1/4 teaspoon salt (sometimes use celery salt)
1 tablespoon extra virgin olive oil
horseradish cream, dip Creamy Horseradish Dip

Steps:

  • Preheat oven to 450 F.
  • Spray large baking sheet with oil cooking spray.
  • Cut zucchini into slices, (about 1 1/2 inches by 3/4 inch).
  • Toss zucchini in a bowl with the olive oil.
  • Mix dry ingredients in a plastic bag.
  • Place zucchini, a handful at a time, in the plastic bag, and shake to coat.
  • Bake 20 minutes.

3 medium zucchini
1/2 teaspoon salt
1/2 teaspoon pepper
2 eggs
1/2 cup grated parmesan cheese
1/3 cup Italian breadcrumbs
1/2 teaspoon salt and black pepper

Steps:

  • Heat oven to 400 degrees F. Cover a large baking sheet with foil for easy clean-up.
  • Wash zucchini and dry thoroughly. Trim ends from zucchini and cut in half crosswise. Cut each half lengthwise into thirds to make wedges.
  • Beat eggs in a shallow bowl. Combine Parmesan, breadcrumbs, salt and pepper on a plate.

A recipe that goes back years and a great way to use up all that zucchini left over from summers crop, you may adjust all seasonings to taste --- if you are a garlic lover then you may increase to 1 teaspoon, I also add in a pinch of cayenne pepper for a little heat --- use only dry breadcrumbs for this --- if your seasoned breadcrumbs already have salt added then omit the 1/4 teaspoon salt --- as one reviewer mentioned that she dipped the sticks into Ranch dressing so you might want to give that a try using a low fat dressing or dip :)

dip:
1 Tbs butter
1 medium sweet onion (about 1/2 lb), sliced
2 tablespoons cider vinegar
2 tablespoons honey
1 tablespoon prepared mustard
1 cup mayonnaise
Breading/Coating:
1 cup Panko bread crumbs
scant 1/2 cup freshly grated Parmesan cheese
1 tablespoon Pizza Seasoning or mixed Italian herbs
2 large eggs

Steps:

  • Cut each zucchini into 3″ sticks about the diameter of your finger. Place the zucchini sticks in a colander over a bowl, and sprinkle with 1 tablespoon of salt. Let them drain for 1 hour or longer. Dip: First, melt butter in a medium-sized frying pan over moderate heat, and add onion Cook at medium-low heat, stirring occasionally, until the onion softens, then caramelizes. (20 and 25 minutes). (Note: The lower the heat, the longer it takes, but the less likely you are to burn the onions.) When the onions are medium brown, remove them from the heat. Place the following in a small food processor or blender: caramelized onions, cider vinegar, honey, prepared mustard Process until fairly smooth. Remove from the processor, and stir in mayo. (The resulting 1 1/2 cups dip can be used not only for these zucchini sticks, but as a tasty sandwich condiment.) Rinse zucchini sticks thoroughly to get rid of any excess salt. Pat dry with paper towels. Preheat oven to 425°F. Line a baking sheet with parchment, and spray the parchment with olive oil. Breading/coating. Combine the following: Panko bread crumbs, freshly grated Parmesan cheese and Pizza Seasoning or mixed Italian herbs Mix until thoroughly combined. Beat 2 large eggs; or pour 1/2 cup egg substitute into a dish. Dip each zucchini stick in the egg and then roll it in the crumbs. Place the sticks on the prepared baking sheet. Bake for +/- 12 minutes, until they're starting to brown. Remove from oven, turn. Bake for an additional 12 to 16 minutes or so, until golden brown and crisp, looking for a speckled golden brown appearance. Any leftover sticks can be wrapped and stored in the fridge. Reheat at 350°F for about 10 to 15 minutes, if desired.

1 Tbsp butter
1 medium onion, peeled and sliced
2 Tbsp apple cider vinegar
2 Tbsp honey
1 Tbsp prepared mustard
1 c mayonnaise
salt and pepper to taste
zucchini sticks:
3 medium zucchini, unpeeled, cut int 3 inch long sticks
1 Tbsp salt
1 c of your favorite bread crumbs
1/2 c parmesan cheese
1 Tbsp mixed italian herbs or pizza seasoning mix
1/2 c egg substitute, or 3 egg whites or 2 large eggs, lightly beaten

Steps:

  • 1. Preheat oven to 425.
  • 2. Melt butter in a frying pan over medium heat and add sliced onions.
  • 3. Cook stirring occasionally until the onions are soften and caramelized.
  • 4. Remove onions from the heat and add vinegar.
  • 5. Place the onions and vinegar into a food processor.
  • 6. Add the honey and mustard, and process until smooth.
  • 7. Add mayonnaise and salt and pepper to taste, process to combine all together.
  • 8. Makes 1 1/2 cups of dip.
  • 9. Pour mixture into a bowl, cover and refrigerate until ready to serve.
  • 10. Cut your zucchini into 3 inch sticks and place them in a colander over a bowl and sprinkle on 1 tablespoon of salt.
  • 11. Let zucchini drain for an hour or longer; rince and pat dry with papper towels.
  • 12. Combine bread crumbs, parmesan cheese and seasoning of choice and set aside.
  • 13. Line a baking sheet with parchment paper or non-stick foil and spray it with olive oil.
  • 14. Dredge sticks a few at a time in the egg, then roll in brumb mixture.
  • 15. Place on prepared baking sheet.
  • 16. Place in pre-heated oven and bake for 12 minutes and turn over and bake for an addition 8 minutes or until brown and crisp.
  • 17. Remove from oven and serve immediately with the sweet onion dip.

  • Preheat the oven to 425°F. Spray 2 large baking sheets with oil. Cut each zucchini into 16 sticks about 4 inches long and about 1⁄2 inch thick for a total of 64 sticks and put them on paper towels to blot excess moisture. Spray baking sheet with cooking spray and set aside. Combine bread crumbs and parmesan cheese in a shallow dish. Combine egg white and milk in another dish and beat with a fork until well blended. Dip each zucchini stick first into the crumb mixture, then into the egg white mixture, allowing excess to drip back into the dish. Roll again in the crumb mixture to coat. Place zucchini sticks on prepared baking sheet; spray with cooking spray. Bake 15 to 18 minutes or until golden brown. Serve with pasta sauce and enjoy!

Nat's Oven Baked Zucchini Sticks image

I love zucchini sticks, and these baked ones are better than any fried version.

Number Of Ingredients 9

3 medium zucchini
3/4 cup whole wheat breadcrumbs (any kind will do)
1/4 cup freshly grated parmesan cheese
1 tablespoon chopped fresh oregano (or 1 tsp dried)
1/2 teaspoon fresh ground pepper
1/2 teaspoon garlic powder
1/4 teaspoon salt (sometimes use celery salt)
1 tablespoon extra virgin olive oil
horseradish cream, dip Creamy Horseradish Dip

Steps:

  • Preheat oven to 450 F.
  • Spray large baking sheet with oil cooking spray.
  • Cut zucchini into slices, (about 1 1/2 inches by 3/4 inch).
  • Toss zucchini in a bowl with the olive oil.
  • Mix dry ingredients in a plastic bag.
  • Place zucchini, a handful at a time, in the plastic bag, and shake to coat.
  • Bake 20 minutes.
  • Turn zucchini, bake another 10 to 15 minutes, or until golden brown.
  • Serve with Creamy Horseradish Dip Creamy Horseradish Dip or your favorite dip.
