- Cook pasta according to package directions. Drain; place in a large bowl. In a small skillet, cook sausage over medium heat until no longer pink; drain and cut into 1/2-in. slices., In a large saucepan, melt butter. Stir in the flour, 1 teaspoon salt and 1/4 teaspoon pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in 1/4 cup Parmesan cheese. Pour over pasta; toss to coat., In a small bowl, combine the egg, cottage cheese, parsley, and remaining Parmesan cheese, salt and pepper. Spoon half of the pasta mixture into a greased 2-1/2-qt. baking dish. Top with cottage cheese mixture. Add sausage to the remaining pasta mixture; spoon over the top. Sprinkle with mozzarella cheese and paprika. , Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 160°.

- Heat olive oil in heavy large pot over medium-high heat. Add pancetta and sauté until brown and crisp. Using slotted spoon, transfer pancetta to bowl. Sprinkle pork with salt and pepper. Add half of pork to drippings in pot; sauté until brown, about 7 minutes. Transfer to bowl with pancetta. Repeat with remaining pork. Add sausage to same pot. Sauté until no longer pink, breaking up with back of fork, about 5 minutes. Add onions, carrots, celery, thyme, garlic, bay leaves, and crushed red pepper. Reduce heat to medium-low; sauté until vegetables are tender, about 10 minutes. Add wine and bring to boil, scraping up browned bits. Add pancetta and pork with any accumulated juices; boil 2 minutes. Add tomatoes with juice. Cover and cook until pork is very tender, adjusting heat as needed to maintain gentle simmer and stirring occasionally, about 2 hours.
- Uncover pot; tilt to 1 side and spoon off fat from surface of ragù. Gently press pork pieces with back of fork to break up meat coarsely. Season ragù to taste with salt and pepper. (Can be made 2 days ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep refrigerated. Rewarm over low heat before continuing.)
- Preheat oven to 400°F. Butter 15x10x2-inch glass baking dish or other 4-quart baking dish. Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain pasta; mix into ragù. Season mixture to taste with salt and pepper; transfer to prepared dish. Sprinkle both cheeses over. Bake until heated through and golden, about 20 minutes.
- *Pancetta (Italian bacon cured in salt) is available at Italian markets and in the refrigerated deli case of many supermarkets.
BAKED ZITI WITH SAUSAGE MEATBALLS AND SPINACH
Baked ziti is meant to feed a crowd, and this one surely does. "Cheater" meatballs made with uncased Italian sausage are strewn throughout the sauce for heft, and baby spinach lends a pop of color. Because ricotta has a tendency to dry out when baked, crème fraîche is added to ensure a more velvety texture, but sour cream thinned out with a little heavy cream works just as well. The whole dish can be assembled and baked ahead the day before. Bring it to room temperature before warming, then broil right before serving for crisp edges.

- Using your hands, shape the sausage into about 35 (1-inch) meatballs.
- In a deep 12-inch skillet or a Dutch oven, heat the oil over medium. Working in two batches, fry the meatballs until golden all over, about 2 minutes per side, then transfer to a paper towel-lined sheet pan or platter. Cook the onion until softened, scraping up any browned bits from the bottom of the pan, 3 to 4 minutes. Add the garlic, oregano and red-pepper flakes, if using, and cook until the garlic is fragrant, about 2 minutes.
- Add the tomatoes and their juices to the skillet, gently crushing them. Stir in the meatballs, bring to a simmer and cook, 20 minutes. Gently fold in the spinach, tossing until it wilts. Season with salt and pepper.
- Meanwhile, heat the oven to 400 degrees. Bring a large pot of salted water to a boil, add pasta and cook until 2 to 3 minutes short of al dente (it will finish cooking in the oven). Drain pasta.
- In a large bowl, combine the ricotta, crème fraîche and half the pecorino. Season with salt and pepper. Stir half the meatball sauce into the ricotta mixture. Add pasta and toss together to coat. Pour into a 9-by-13-inch baking dish that's at least 2 1/2 inches deep. Top with the remaining meatball sauce, the mozzarella and the remaining pecorino. Place uncovered baking dish on a sheet tray and bake until the cheese is melty and bubbly, 20 to 25 minutes.
- Turn heat to broil and cook until the cheese and pasta brown in spots, 1 to 2 minutes. (Don't walk away; the cheese can burn very quickly!) Remove from oven and let rest for 5 to 10 minutes before serving.

- Set oven to 350 degrees.
- Grease a 3-quart baking dish.
- Cook the pasta in a large pot of boiling water until JUST tender (do not over-cook the pasta as it will cook more in the oven!).
- Place the cooked pasta in a large bowl.
- Heat oil; add in the sausage meat and cook until browned, remove to a plate.
- For the white sauce; melt butter in a medium saucepan; add the onion, garlic and cayenne pepper if using) saute for about 3-4 minutes.
- Add in flour and whisk for 1 minute.
- Slowly add in half and half cream; bring to a simmer, whisking constantly until thickened.
- Remove from heat; add in 1/3 cup Parmesan cheese, then season with seasoned salt (or white salt) and pepper to taste.
- Pour the cheese sauce over the cooked pasta in the bowl; mix with a wooden spoon.
- In a medium bowl mix together the cottage cheese with 1/4 cup Parmesan cheese, egg and chopped parsley, then season with salt and lots of pepper.
- Spoon HALF of the creamed ziti mixture into the prepared baking dish, then spread the cottage cheese mixture on top, then spoon the remaining pasta mixture on top of the cottage cheese mixture.
- Sprinkle the cooked sausage meat on the top.
- Top with mozzarella cheese, then sprinkle paprika on top.
- Bake uncovered for about 30-35 minutes or until bubbly and hot.
- Let stand about 5 or more minutes before serving.

- Preheat oven to 425 degrees Fahrenheit.
- Lightly oil a large, shallow baking dish.
- Bring a large pot of salted water to a boil.
- In a large skillet, heat about 2 tablespoons olive oil over medium heat.
- Add the onion and saute until soft, about 5 minutes.
- Add the garlic and crumbled sausage; saute until the sausage begins to brown.
- Season with salt and pepper.
- If the sausage renders a lot of fat, pour most of it off leaving a little to add flavor to the sauce.
- Add the red wine; boil until it is almost gone.
- Add the tomatoes with all of their juices and cook, uncovered, at a lively simmer for about 10 minutes. The sauce will thicken slightly.
- Add the marjoram or oregano and taste for seasoning.
- In a large mixing bowl, mix together ricotta, about half the grated pecorino, the nutmeg, and the parsley. Season with salt and pepper.
- Meanwhile, cook the pasta until al dente.
- Drain well and toss it with the ricotta mixture until well coated.
- Add the sausage and sauce and mix again.
- Add the mozzarella and toss gently.
- Pour everything into the baking dish and sprinkle the remaining Pecorino on top.

- In a deep nonstick 12" skillet, cook sausage over medium-high heat, stirring occasionally, until browned on all sides, about 5 minute.

ROUND 2 RECIPE - SAUSAGE AND PEPPER BAKED ZITI

- Heat the oven to 375 degrees F.
- Coat a 9 by 13-inch baking pan lightly with cooking spray.
- Bring a large pot of water to a boil over medium heat. Add the pasta and cook for about 6 minutes. It should be a little less than al dente; it will finish cooking in the oven.
- While the pasta is cooking, heat the canola oil in a large skillet over medium-high heat, add the onion and garlic and saute until slightly tender, about 3 minutes. Add the tomatoes and Italian seasoning and cook for another 5 minutes. Chop the reserved sausage and peppers and add them to the skillet to heat through. Taste and adjust the seasoning with salt and pepper, to taste.
- Drain the pasta and add it to the prepared baking pan. Pour the tomato sauce over the pasta and sprinkle with the cheese. Bake until the cheese is melted and lightly browned, about 30 minutes. Remove from the oven and serve.
PERFECT POTLUCK DISH SAUSAGE AND PEPPER BAKED ZITI
Both kids and adults will dive into this new twist on baked ziti. If you like, assemble it up to one day ahead, refrigerate and bake just before serving. - Cook the ziti according to the package directions. Drain well and set aside.
- Cook the sausage links in oil in a large skillet for 15 minutes or until browned over medium heat; reduce heat if necessary to keep them from burning. Drain well on paper towels. Slice the sausage diagonally and set aside.
- Melt the butter in a heavy saucepan over low heat; add the flour, stirring until smooth. Cook for 1 minute, stirring constantly. Gradually add the milk; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Stir in 1/4 cup Parmesan cheese, 1 tsp salt, and 1/2 tsp pepper. Add the ziti; stir well, and set aside.
- Combine the remaining 1/4 cup Parmesan cheese, ricotta (or cottage cheese), egg, parsley, 1 tsp salt, and 1/8 tsp pepper. Stir well.

- Transfer whole peeled tomatoes (with their juices) to a large bowl and squeeze with your hands to break up; set aside. Heat oil in a pot over medium-high. Add sausage and cook, breaking up with the back of a spoon, until browned in places and cooked through, about 8 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute.
- Add reserved crushed tomatoes to pot along with can of tomato sauce and 1/2 cup water (pour water into sauce can and swirl to catch any left inside). Season generously with salt and pepper; let simmer until flavors meld, skimming fat as needed, about 20 minutes.
- Meanwhile, preheat oven to 425°F. Cook pasta in a pot of salted boiling water about 5 minutes less than package instructions (so it still has some bite in the center and won't overcook in the oven). Reserve 1 cup pasta water, then drain and rinse noodles under cool water to stop cooking.
- In now-empty pot, melt butter over medium heat. Add flour and whisk until combined and lightly toasted, 2 to 3 minutes. Slowly whisk in milk. Bring to a boil, then reduce heat and simmer, stirring often, until consistency is like slightly thickened cream, 10 to 15 minutes. Remove from heat. Season with salt, nutmeg, and 1/3 cup Parmigiano. Press plastic wrap directly on surface to prevent a skin from forming.
- In a large bowl, toss pasta with 3 cups tomato sauce, 1/2 cup Parmigiano, 1/2 cup reserved pasta water (or up to 1 cup, if sauce is very thick), and basil. Season with salt and pepper.
- Spread half of bechamel in the bottom of a 3-to-3 1/2-quart baking dish. Top with half of pasta mixture, 1 cup tomato sauce, half of mozzarella, and 1/2 cup Parmigiano. Layer with remaining pasta and 1 cup tomato sauce.
- Spoon the last of the bechamel evenly on top, followed by remaining mozzarella and 1/2 cup Parmigiano; top with a few spoons of tomato sauce. Sprinkle with more Parmigiano. Place dish on a rimmed baking sheet lined with parchment (to catch spills).
- Bake, uncovered, until browned in places and bubbly, about 30 minutes. Let cool 20 minutes, top with more basil leaves, and serve.

- 1. Bake sausage in oven on 350 until completely cooked thru. Then slice each link on the diagonal into bite size pieces
- 2. In large pot on stove top add all sauces and bring to a boil. Once at a boil lower heat to a simmer.
- 3. Add mozzerella cheese and parmesan cheese and seasonings
- 4. Cut peppers into 1/2 inch strips and add to sauce
- 5. Cut onions into medium sized chunks and add to sauce
- 6. Add sausage to sauce. Continue to simmer sauce several hours until all flavors blend together well
- 7. In a seperate large pot boil enough water for the pasta. add oil to boil water and then add pasta. stir well and cook to al dente only
- 8. Drain pasta and ladle out some of the sauce into the bottom of a large baking pan Dont put sausage in ). Add some pasta and toss in sauce, continue this till all pasta has been added using additinal sauce when needed.
- 9. Sprinkle parmesan cheese over entire top of pasta and then sprinkle mozzerella on top to completely cover. Cover pan with tin foil making tent in center.
- 10. Bake in preheated 350 degree oven till heated thru and cheese is melted.
- 11. Serve pasta topped with additional sauce, sausge and peppers and onions.
- 12. Add a salad and some homemade garlic parmesan rolls for a perfect meal

- Heat oven to 400*F Cook pasta in a large pot of lightly salted water as package directs for al dente or firm texture. Meanwhile, heat oil in large nonstick skillet over medium heat. Add peppers, onion and sausage;cook 6 minutes or until sausage is browned. Remove from heat; cut sausage into 1/4-inch slices. Mix ricotta, 1 cup mozzarella, 3 Tbsp Parmesan and the parsley in a large bowl.Drain pasta, toss with cheese mixture, sausage mixture and 1 cup marinara sauce. - Preheat oven to 375 degrees F. Lightly grease a 9 by 13-inch casserole dish.
- In a large skillet over medium-high heat, heat 1/4 cup of the oil.
- Add the eggplant in batches, seasoning on both sides with salt and pepper, and cook until golden, adding more oil as needed.
- Transfer to a plate when each batch is done.
- Heat 2 tablespoons of the remaining olive oil in a large skillet over medium-high heat. When hot but not smoking, add the onion and sausage.

BAKED ZITI RECIPE WITH GROUND BEEF AND SAUSAGE

- Sauté ground beef & sausage, onion, and green bell pepper in a large skillet until onion is tender and beef is lightly browned. Drain off excess fat; add tomatoes, tomato sauce, basil, oregano, garlic powder, salt, and pepper. Stir well; stir in ziti or elbow macaroni and 1 cup of the cheese; transfer to a 2 1/2-quart casserole. Top with the remaining cup of cheese. Steps:
- Heat the oil over medium heat in a large skillet or saucepan.

- Preheat oven to 350 degrees. In a large frying pan, sauté the pepperoni over moderate heat until lightly browned, about 3 minutes. Transfer to paper towels to drain. Pour off the fat from the pan and wipe the pan clean. In the same pan, heat the oil over moderately low heat. Add the onion and cook, stirring occasionally, until soft, about 10 minutes. Add the garlic and cook, stirring, for 30 seconds. Stir in the sausage and cook until no longer pink. Stir in the tomatoes with their juice, breaking them up. Add the salt,oregano, and basil, cover, and simmer over low heat for 10 minutes. In a large pot of boiling, salted water, cook the ziti until just done, about 13 minutes. Drain and toss with the sauce, the pepperoni, and the parsley. Top with the mozzarella and finish with the parmesan. Cover and bake about 30 minutes or until cheeses are melted and bubbly.

- Preheat oven to 375 degrees F. Heat a large stockpot full of well-salted water for the pasta.
- In a (separate) large skillet, saute the Italian sausage over medium-high heat until browned (about 8-10 minutes), breaking the sausage up with a spoon into bite-sized pieces while cooking. When the sausage has browned, add in the minced garlic and saute for 1-2 additional minutes or until the garlic is fragrant. Remove pan from heat and set aside.
- While the sausage is browning, cook the pasta al dente in the stockpot of boiling water according to package instructions. Drain.
- Return pasta to the stockpot and add the sausage, garlic and kale. Gently toss to combine until the kale is dark green and slightly wilted.
- Pour half of the pasta into a greased 11x7-inch or 9x13-inch baking dish. Sprinkle evenly with 1 cup of cheese. Layer the remaining half of the pasta evenly on top. Sprinkle evenly with the remaining 1 cup of cheese.
- Bake for 20-25 minutes until the cheese is melted and just barely starts to turn golden. Remove and serve immediately, sprinkled with additional toppings if desired.

- Preheat oven to 375.
- Boil water and cook the pasta as directed on the package.
- Coat a medium sized frying pan with the olive oil.
- Cut the sausage into meatball sized slices and place in the medium sized frying pan.
- Fry the sausage on medium-low heat until cooked 3/4 of the way through.
- Slice up the onion into small pieces and add into the frying pan, cook until the sausage is done.
- Transfer the onion and sausage into a medium sized pot, add the spaghetti sauce and the garlic.
- Cover the sauce and heat until it's warm.
- Drain the pasta and stir in the sauce mix.
- Transfer everything into a large casserole dish
- Get your cheeses, place the slices of Havarti on top of the pasta in one or two layers.
- Sprinkle the remaining cheeses evenly on top.
- Sprinkle the parsley evenly over the cheeses.
