1 Vidalia onion
1 vegetable, chicken, or beef bouillon cube
1-2 Tbsp. butter

Steps:

  • Preheat your oven to 350°F. Peel your onion, leaving the root intact. If your onion sits level, you can leave it alone. If not, cut a thin slice off the root to create a flat bottom.
  • Use a paring knife to cut a 1 inch deep cone into the top of the onion.
  • Insert a vegetable, chicken or beef bouillon cube into the hole.
  • Fill the rest of the hole with butter, about 1-2 tablespoons. Season with salt and pepper.
  • Place the filled onion on a sheet of foil large enough to encase it.
  • Wrap the onion in foil, bringing the edges up in the center. Twist the foil together to seal the onion in. Place the foil-wrapped onion on a baking sheet.
  • Bake for 45-60 minutes, until the onion is tender. Serve warm.

4 medium red onions
4 small sprigs rosemary
knob of butter
1 tbsp balsamic vinegar
2 tbsp grainy mustard
1 tbsp soft brown sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Slice the root off each onion to create a flat bottom, then carefully peel, leaving the onion whole. Cut a deep cross in the top of each, then poke in a sprig of rosemary, dot with butter and place in a roasting tray. Pour a little of the balsamic vinegar over each one and season. Wrap the tray in foil and bake in the oven for 30 mins. Meanwhile, mix together the mustard and sugar and set aside.
  • Remove the tray from the oven, take off the foil and spoon a little of the mustard mixture onto each onion. Return to the oven for 15 mins, uncovered, to caramelise.

3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon Worcestershire sauce
1 lb onion, sliced (or chopped)
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 350°.
  • In a saucepan, melt butter. Whisk in flour and cook, whisking constantly, until thick, smooth and golden. Continue whisking while gradually adding milk.
  • Cook until thickened.
  • Remove from heat and stir in salt, pepper and Worcestershire.
  • Wilt onions in the microwave. Layer onions and cheese in greased 2-quart casserole dish. Pour sauce over.
  • Bake until bubbly golden, about 30 minutes. Serve hot.

  • Slice onion and separate into rings; place in a greased 1-qt. baking dish and set aside. In a small saucepan over low heat, melt the butter. Stir in the flour and salt until smooth. 4 large onions, peeled and left whole
4 cloves
1 bay leaf
1 1/4 cups milk
1 ounce butter
2/3 cup heavy cream
2 tablespoons plain flour
2 1/2 ounces sharp cheddar cheese, grated
2 teaspoons coarse grain mustard
salt & freshly ground black pepper

Steps:

  • Preheat the oven to 350°F
  • Stud each onion with a clove. Put the onions into a lidded ovenware dish and add in the bay leaf. Pour over the milk and dot over the butter.
  • Cover the onions and bake for 45 minutes or until the onions are tender, but not falling apart.
  • Once cooked, remove the onions and keep warm. Keep the oven on at 350°F
  • Transfer the milk to a saucepan and add the cream and flour. Stirring, gently bring to the boil and simmer until thickened.
  • Add the cheese and mustard and season with salt and freshly ground pepper.

2 red onions
1 yellow onion
2 tablespoons freshly squeezed lemon juice
1 teaspoon Dijon mustard
1 teaspoon minced garlic
1/2 tablespoon minced fresh thyme leaves
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup good olive oil
1/2 tablespoon minced fresh parsley leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Remove the stem end of each onion and carefully slice off the brown part of the root end, leaving the root intact. Peel the onion. Stand each onion root end up on a cutting board and cut the onion in wedges through the root. Place the wedges in a bowl.
  • For the dressing, combine the lemon juice, mustard, garlic, thyme, salt, and pepper in a large bowl. Slowly whisk in the olive oil. Pour the dressing over the onions and toss well.
  • With a slotted spoon, transfer the onions to a sheet pan, reserving the vinaigrette that remains in the bowl. Bake the onions for 30 to 45 minutes, until tender and browned. Toss the onions once during cooking. Remove from the oven, and drizzle with the reserved dressing. Sprinkle with parsley, season to taste and serve warm or at room temperature.

2 pound white pearl onions
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
3 tablespoons cream Sherry
1 tablespoon grainy mustard
1 tablespoon Dijon mustard
1/4 teaspoon grated nutmeg
1/2 cup grated Parmigiano-Reggiano
Equipment: a 2-qt shallow gratin or other flameproof baking dish (2 inches deep)

Steps:

  • Cook onions in a large heavy pot of boiling salted water (2 teaspoons salt for 4 quarts water) until just tender, 25 to 30 minutes. Reserve 1 cup cooking water, then drain (reserve pot). Cool onions to warm, then peel.
  • Melt butter in dry pot over medium heat. Add flour and cook, stirring, 2 minutes. Whisk in reserved cooking water, milk, and Sherry and cook, whisking frequently, until mixture is thickened, about 8 minutes. Whisk in mustards, nutmeg, and 1/2 teaspoon each of salt and pepper. Add onions to sauce and simmer 5 minutes.
  • Preheat broiler.
  • Transfer creamed onions to baking dish and sprinkle evenly with cheese. Broil 4 to 5 inches from heat until top is golden brown and bubbling, about 3 minutes.

4 -6 medium yellow onions
2 -3 cups chicken broth
4 tablespoons butter, melted
paprika
breadcrumbs

Steps:

  • Pre-heat oven to 375°F.
  • Skin the onions, and in a medium sauce pan simmer them in enough chicken broth to cover for 30 minutes.
  • Remove, and place in a buttered baking pan.
  • Mix melted butter with a little paprika, and brush the onions with this mixture. Sprinkle the tops of the onions with bread crumbs, and add the remaining butter mixture to the backing pan.
  • Bake at 375°F for about 20 minutes, or until lightly browned.
