I grew up eating taco burgers at a local fast food restaurant. They no longer make the burger so I decided to make my own but wanted a smaller slider version. A "funeral sandwich" recipe was my inspiration in developing this slider.

3 pound(s) ground beef
1 medium onion, finely diced
3/4 cup(s) taco seasoning mix
2 cup(s) water
1 jar(s) mild taco sauce
8 ounce(s) cheddar cheese, finely shredded
24 - dinner rolls
1/2 cup(s) butter, melted

Steps:

  • In a Dutch oven boil ground beef, in enough water to cover, until no longer pink. Break beef up into very small pieces as it is cooking. Drain and discard water.
  • Return ground beef to pan and add the diced onion, taco seasoning mix, and 2 c. water. Mix thoroughly then simmer until all liquid is absorbed.
  • Grease a large cookie sheet. Split all the rolls in half and spread a thin layer of taco sauce on each half. Lay the bottom halves on the cookie sheet.
  • Layer the tops of the bottom halves in the following order: 1 tablespoon of grated cheddar, 2 tablespoons of taco meat, 1 tablespoon of grated cheddar, top bun.
  • Once all 24 rolls are assembled, brush the top of each roll with the melted butter.
  • Cover the rolls with aluminum foil. Bake in 350 degree oven for 10 minutes. Remove the foil and bake another 10 minutes.

Assorted toppings like sliced avocado, shredded cheese, crema Mexicana, black olives, and jalapeño elevate this shredded beef to a perfect slider suitable for the big game day.

1 tablespoon unsalted butter
1 tablespoon grapeseed oil
1 (2 1/2 pound) chuck roast, or more to taste
2 tablespoons taco seasoning mix, or more to taste
1 cup salsa, divided
4 (15 ounce) packages slider-size burger buns
2 medium (blank)s avocados, diced
½ cup sliced black olives
3 medium jalapeno peppers, sliced
½ cup Mexican crema, or to taste
1 (8 ounce) package shredded Mexican cheese blend, or to taste

Steps:

  • Melt butter and grapeseed oil in a stockpot over medium-high heat. Cut roast into 3 equal pieces and season with taco seasoning. Sear roast on all sides, 8 to 10 minutes.
  • Pour 1/2 cup salsa in the bottom of a slow cooker. Transfer roast to slow cooker and top with remaining salsa.
  • Cook until meat is fork-tender, 8 hours on Low or 6 hours on High. Remove from slow cooker and shred beef with 2 forks.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Toast slider buns under the broiler for 1 to 2 minutes, making sure not to burn them.
  • Place about 1/4 cup shredded beef onto each slider bun and top with avocados, olives, jalapenos, crema, and cheese.

These easy taco sliders are flavored with Old El Paso™ taco seasoning mix and green chiles, and baked in the oven, making them easy and ready to top with all your favorite taco toppings!

1 lb lean (at least 80%) ground beef
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 can (4.5 oz) Old El Paso™ chopped green chiles
4 slices (0.8 oz each) Cheddar cheese, cut in half
8 slider buns, split (from 12-count bag)
8 small lettuce leaves
1/2 cup Old El Paso™ mild or medium salsa (from 16-oz jar)

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil. In medium bowl, mix beef, taco seasoning mix and green chiles. Shape into 8 (3-inch) patties. Place in pan.
  • Bake 10 minutes; turn patties over, and bake 5 to 10 minutes longer or until meat thermometer inserted in center of patties reads 160°F. Top each patty with piece of cheese. Bake 1 to 2 minutes longer or until cheese is melted.
  • Place one patty on top of each slider bun bottom. Top each patty with lettuce and salsa, and place top of bun on each to serve.
