BAKED SWISS STEAK
This dish is one of my husband's favorites, so I make it often. Baking steak might seem strange at first, but the meat becomes very tender, and the vegetables add delicious flavor. -Dolores Wynne, Clearwater, Florida

Steps:
- Cut meat into two portions; pound to 1/4-in. thickness. Combine 1 tablespoon flour and salt; coat meat on both sides. In a skillet, brown meat in oil. Transfer meat to a greased shallow 2-qt. baking dish; set aside. , To pan drippings, add tomatoes, carrot, celery, onion, Worcestershire sauce and remaining flour. Bring to a boil over medium heat; cook and stir for 2 minutes. Pour over meat. Cover and bake at 350° for 1-1/2 hours or until the meat is tender. Sprinkle with cheese; return to the oven until cheese is melted.

AL'S BAKED SWISS STEAK
This is a variation on another recipe, which is great as is, but I couldn't make Swiss steak without green peppers or garlic. I also season the meat instead of the flour; it gets a more intense taste that way.

- Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
- Cut steak into four portions and pound to 1/4-inch thickness; season with salt, pepper, and seasoned salt. Coat meat evenly with about 1 tablespoon flour.
- Heat oil in a skillet over medium heat. Cook beef in hot oil until browned completely, 3 to 5 minutes per side; transfer to prepared baking dish reserving drippings in the skillet.
- To the drippings, add tomatoes, onion, green bell pepper, beef broth, carrots, celery, garlic, 1 tablespoon flour, and Worcestershire sauce. Bring the tomato mixture to a boil; cook and stir for 2 minutes. Pour the mixture over the meat in the baking dish. Cover dish with aluminum foil.
- Bake until beef is completely tender, about 90 minutes. Sprinkle cheese over beef and return to oven uncovered until cheese is melted, 3 to 5 minutes.

OVEN BAKED SOUR CREAM SWISS STEAK
Make certain that you have a large oven-proof skillet for this recipe, or you can use a large electric frypan. You can also make this recipe using thin boneless pork chops or chicken breasts.

Steps:
- Set oven to 300 degrees.
- Cut the steaks into serving-size pieces.
- Lightly dust the beef pieces with flour, then pound with a meat mallet until thin and flattened.
- In a small cup mix together salt, cayenne, black pepper (if using) paprika and dry mustard powder, then season the flattened beef with the spice mixture.
- Heat oil and butter in a large oven-proof skillet over medium heat.
- Add in the steaks and lighty brown/sear on one side, turn over and brown on the other side; transfer to a plate.
- Add in onions and garlic; saute for about 3 minutes, scraping up any browned bits on the bottom of the skillet with a wooden spoon.
- In a bowl mix together sour cream, water, soy sauce and brown sugar, then add to the skillet; mix to combine with the onion/garlic mixture.
- Return the steaks back to the skillet.
- Sprinkle lightly with Parmesan cheese.
- Cover the skillet and bake in oven at 325 degrees for about 30-45 minutes, or until tender.

- 1. Preheat oven to 400 degrees.
- 2. Cut steak into small steaks and coat in flour. Brown steaks in a little oil and salt and pepper them.
- 3. In a bowl combine remaining ingredients.
- 4. Place steaks into a large casserole dish or baking pan, and pour the sauce over it. Cover dish and bake for about an hour.
- 5. Its great served with rice or potatoes to pour the gravy over!!

- Preheat oven to 325°.
- Cut meat into 6 serving-size pieces'.
- Combine the flour & seasonings.
- Pound 2 T. of the flour mixture into the meat.
- Heat the shortening in an 10 in., oven-proof skillet.
- Brown the meat on both sides.
- Drain the excess fat from the skillet.
- Add the stewed tomatoes & the other vegetables.
- Sprinkle the worcestershire sauce on top.
- Cover & bake for 1 hour, 15 minutes.
- Remove the meat from skillet & keep warm.
- Skim excess fat from skillet.
- Combine ¼ cup water with the remaing flour mixture & stir into the sauce.
- Cook over medium-high heat, stirring constantly, for 2 miuntes or until thickened.
- Serve meat & sauce over hot rice or noodles.

Steps:
- 1. Trim fat from steak. Pound flour into both sides of steak.
- 2. Heat oil in skillet; brown steak on both sides, season with salt and pepper.
- 3. Place in baking dish; cover with onion slices. (I prefer to add other veggies and make a stew).
- 4. In the same skillet, heat tomatoes, loosening brown bits from the bottom of the skillet.
- 5. Add worcestershire sauce and season to taste with salt and pepper.
- 6. Pour over steak, cover with lid or foil and bake at 350 for 2-2 1/2 hours, until fork tender.
- 7. Serve over rice, buttered noodles or mashed potatoes.
