Baked sweet potato slices in the oven makes a delicious, simple, easy and healthy side or snack. This is a vegan vegetable dish and its kid friendly too!

2 medium sized sweet potatoes
salt (as needed)
2 tablespoons oil
1 teaspoon garlic powder
1 teaspoon black pepper powder

Steps:

  • Wash the sweet potatoes very well in water and slice the sweet potatoes in round slices (you may peel the sweet potatoes if you wish). Make sure to slice them evenly and keep the slices slightly thick like 1/2 inch thickness.
  • Transfer the sliced sweet potatoes to a bowl and add the salt, oil, garlic powder and black pepper powder also to the bowl. Toss very well with your hands so the spices will blend well with the sliced sweet potatoes.
  • Preheat the oven to 400 degree Fahrenheit.
  • Layer a baking sheet with foil (greased with little oil) or non slip baking mat and place the sweet potato slices in a single layer (in case there is more slices you can always do in a second batch, but make sure to layer them in a single layer so as not to overcrowd the baking sheet).
  • Bake in the preheated oven for about 35 to 40 minutes or until the top begins to lightly brown.
  • To make it more crunchy, crispy and delicious, increase the oven temperature to 450 degree Fahrenheit (flip the slices very carefully if you can) and bake for another 6 to 7 minutes. Always watch them during the final minutes of baking to avoid burning of the sweet potatoes. Once they are baked enough to your liking, immediately transfer from the hot oven, allow them to cool down slightly and enjoy!

3 medium sweet potatoes
2 tablespoons olive oil
1 pinch salt and pepper
Optional spices: paprika, cumin, cayenne, cinnamon, garlic, etc.

Steps:

  • Preheat oven: Preheat oven to 425 degrees F (230 degrees C).
  • Prep potatoes: Wash sweet potatoes and remove any growths or blemishes, but do not peel. Cut potatoes into 1/3 inch (10 mm) round slices.
  • Season potatoes: Drizzle olive oil onto large sheet pan and spread until even on baking sheet. Add potato rounds to pan with one side facing down to cover with oil, then flip all potato medallions to make sure each side is lightly oiled. Sprinkle with salt, pepper, and any additional desired spices.
  • Bake until golden brown: Bake in oven for a total of 40-45 minutes, flipping once about halfway through and until both sides are lightly browned and crispy on the edges.

1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1 1/2 pounds (about 3) medium sweet potatoes, scrubbed
2 tablespoons olive oil

Steps:

  • Heat the oven (with oven rack in the middle) to 425°F. In small bowl, combine the brown sugar, salt, cumin and pepper (12 turns on pepper mill). Cut the potatoes into ½-inch thick rounds and transfer to a rimmed sheet pan. Drizzle with the oil, sprinkle with the brown sugar mixture and, using your hands, toss to coat. Arrange in a single layer without overlapping and roast until the potatoes are tender, 25 to 30 minutes. ......................... 3 sweet potatoes (4- to 5-inches-long by 2- to 2 1/2-inches diameter) cut into 3/4-inch coins
Vegetable oil, for roasting
Salt and pepper
1/4 cup dried sweetened cranberries
2 tablespoons sugar
1 tablespoon bourbon
1 teaspoon red wine vinegar
1/2 teaspoon pumpkin pie spice
1/2 teaspoon orange zest
1/4 teaspoon ground cardamom
4 ounces Port Salut cheese
25 marcona almonds, chopped
3 fresh chives, chopped

Steps:

  • Preheat the oven to 450 degrees F.
  • Brush the sweet potatoes with the vegetable oil and sprinkle both sides with salt and pepper.
  • Place on a baking sheet and roast until tender and golden, 12 to 15 minutes.
  • Meanwhile, add the cranberries, sugar, bourbon, red wine vinegar, pumpkin pie spice, orange zest and cardamom to a small saucepan. Stir and add 1/4 cup water. Bring to a simmer and cook until the liquid has reduced to a thick syrup, 3 to 4 minutes. Remove from the heat and cool.
  • Divide the Port Salut evenly over the sweet potato coins. Top with spiced cranberries, chopped almonds and chives.
