BAKED HERB STUFFED SALMON

Sea salt and freshly ground black pepper
Extra-virgin olive oil
2 medium salmon fillets, about 2 1/2 pounds (1.1 kilograms) skin on, scaled and pin boned
2 lemons
Bunch fresh marjoram
Bunch fresh dill
Bunch fresh basil
Bunch flat-leaf parsley
Handful stoned black olives

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C/gas 6).
  • Cut 5 lengths of string and lay them out on the work surface next to each another, leaving gaps in between. Sprinkle salt and pepper over the work surface, and drizzle with olive oil. Lay 1 salmon fillet, skin side down, on top. Sprinkle salt and pepper over the salmon, then, using a fine grater, grate the zest of 1 lemon over the top. On top of that lay the marjoram, dill, and basil, broken up, and the olives.
  • Season the flesh side of the other salmon fillet with salt and pepper, and grate over the second lemon. Place 1 fillet on top of the other, thin end to thick, then tie them together and trim the string. Put the fish parcel on an oiled baking tray, and scatter over any remaining bits of herb. Thinly slice the 2 lemons and place on top of and round the salmon. Drizzle with olive oil, then roughly chop the parsley and sprinkle over the top.
  • Bake in the preheated oven for about 20 minutes.

Being from the North West, I think it's almost a requirement to like salmon which I certainly do. This is one of my favorite recipes for salmon, very easy to make.

1 (5 lb) salmon
1/2 cup flour
8 slices moist crumbed bread
1/4 cup butter
1 chopped sweet onion
3 tablespoons chopped fresh parsley
1/2 lb bacon (about 8 pieces)
1/2 lemon

Steps:

  • Preheat oven to 325°F.
  • Dredge the salmon in flour, using more as needed to ensure even coverage.
  • In a medium mixing bowl, combine crumbed bread, butter, onions, and the parsley and mix evenly.
  • Stuff the cavity of the salmon with bread mixture, then close with toothpicks.
  • In a baking dish large enough for the salmon to rest flat, lay half the bacon evenly on the bottom.
  • Place the salmon on top of the bacon, and then place remaining bacon evenly over the salmon.
  • Squeeze lemon juice evenly over the salmon.
  • Bake 1 hour to 1 1/2 hour, depending on size of salmon (5 lb about 1 hour and fifteen minutes).
  • Remove from oven and take out toothpicks.
  • Cut salmon crosswise into about 2 inch pieces.

BAKED SALMON STUFFED WITH MASCARPONE SPINACH

1 10-ounce bag fresh spinach leaves
1/2 cup cream cheese (about 4 ounces), room temperature
1/2 cup mascarpone cheese,* room temperature
Pinch of ground nutmeg
8 6- to 8-ounce salmon fillets with skin (each about 1 inch thick)
Olive oil
2 2/3 cups fresh breadcrumbs from French bread with crust
1/2 cup (1 stick) butter, melted
1/2 cup freshly grated Parmesan cheese

Steps:

  • Cook spinach in large pot of boiling water just until wilted, about 30 seconds. Drain; rinse with cold water. Squeeze spinach dry, then finely chop. Place in small bowl. Mix in cream cheese, mascarpone, and ground nutmeg. Season to taste with salt and pepper. Cut one 3/4-inch-deep, 2 1/2-inch-long slit down center of top side of each salmon fillet, forming pocket for spinach mixture. Fill each slit with spinach mixture, dividing equally among salmon fillets. (Can be made 4 hours ahead. Cover and chill.)
  • Preheat oven to 450°F. Brush rimmed baking sheet with olive oil. Sprinkle salmon fillets with salt and pepper. Mix breadcrumbs, melted butter, and Parmesan cheese in medium bowl. Top each salmon fillet with breadcrumb mixture, pressing to adhere. Place salmon fillets, skin side down, on prepared baking sheet. Bake salmon until opaque in center, about 12 minutes. Transfer to plates and serve.
  • Italian cream cheese sold at Italian markets and also at many supermarkets.

SALMON-STUFFED BAKED POTATOES

A healthier alternative to most stuffed potatoes. It came from a calendar I got at the grocery store a few years ago. A meal in a spud.

4 large baking potatoes
1 tablespoon butter
1 cup milk, heated
1 teaspoon Dijon mustard
1/4 teaspoon salt
fresh ground pepper
1 cup small broccoli floret
1/2 cup flaked canned salmon
1 teaspoon fresh lemon rind
2 teaspoons chopped fresh dill
1/2 cup crumbled feta cheese

Steps:

  • Wash the potatoes& poke with a fork so they don't explode.
  • Wrap in paper towels& cook for 10 minutes until soft.
  • If your microwave doesn't have a turntable inside it, turn the potatoes yourself a few times during cooking.
  • Preheat oven to 400 degrees.
  • Slice a bit off the top of each potato, and scoop out the flesh, leaving a bit of a wall near the skin.
  • Mash the potatoes with butter, milk, Dijon, salt& pepper until blended.
  • Mix in the salmon, broccoli, lemon rind, dill& Feta then stuff the potatoes gently, so as not to break the skins.
  • Put potatoes on a baking sheet& bake for 20 minutes, or until the top of the potatoes are golden brown.

BAKED TOMATOES STUFFED WITH SALMON, GARLIC, AND CAPERS



Baked Tomatoes Stuffed with Salmon, Garlic, and Capers image

Black pepper, freshly ground
2 large, ripe, firm tomatoes, weighing approximately 3/4 pound each
1 tablespoon capers, preferably packed in salt
1 pound salmon
3 1/2 tablespoons extra virgin olive oil
1 tablespoon chopped Italian flat-leaf parsley
1 teaspoon very finely chopped garlic
2 tablespoons fine, dry, unflavored bread crumbs

Steps:

  • Drain the capers if packed in vinegar. Soak, rinse, and drain if packed in salt, then chop fine. Preheat the oven to 400 degrees. Remove the salmon's skin, any loose membranes, and carefully pick out all the bones. Dice the fish finely and put it in a bowl, together with 2 1/2 tablespoons of olive oil, the chopped parsley, garlic, capers, 1 tablespoon of bread crumbs, salt, and several grindings of black pepper. Toss thoroughly. Wash the tomatoes, cut them horizontally in half, and scoop out all the seeds and the centers to make a cup-like hollow. Pat the insides of the tomatoes with paper towels to soak up excess juice, then stuff the tomatoes with the salmon mixture, pressing it down lightly as you do so. There should be enough to form a mound. Sprinkle the tops with the remaining bread crumbs and drizzle with the remaining olive oil, holding back a few drops of the oil to smear the bottom of a baking pan. Place the tomatoes in the oiled baking pan and bake in the upper level of the preheated oven for 35 minutes or until the salmon stuffing has formed a light golden crust. Serve not piping hot, but lukewarm. The dish is also good later, not reheated but at room temperature.;

SALMON WITH BEURRE ROUGE AND SMOKED-SALMON-STUFFED BAKED POTATO

1/2 cup dry red wine
1/4 cup minced shallots
1/2 teaspoon red wine vinegar
2 8-ounce Yukon Gold potatoes
Fine sea salt
10 tablespoons (1 1/4 sticks) chilled unsalted butter, divided
2 tablespoons whole milk
1/2 cup sour cream
4 tablespoons chopped green onion tops, divided
4 ounces smoked salmon, chopped
1/4 cup water
4 7- to 8-ounce skinless salmon fillets, each cut lengthwise into 2 strips
Cracked black peppercorns
Chopped fresh chives

Steps:

  • Bring wine, shallots, and vinegar to boil in heavy small saucepan. Reduce heat to low and simmer until liquid is reduced to 2 tablespoons, about 5 minutes. Remove pan from heat and cover.
  • Do ahead: Can be made 4 hours ahead. Let stand at room temperature.
  • Preheat oven to 400°F. Place each potato on separate sheet of foil, sprinkle with sea salt, and wrap tightly. Bake until tender, about 1 hour. Remove foil; cool to just warm, about 20 minutes. Cut lengthwise in half. Scoop flesh into medium microwave-safe bowl, leaving 1/4-inch-thick potato shell. Add 2 tablespoons butter and milk to potatoes in bowl; mash well. Stir in sour cream and 3 tablespoons green onion tops. Season to taste with salt and pepper.
  • Do ahead: Can be made 2 hours ahead. Loosely cover shells and filling separately and let stand at room temperature.
  • Rewarm potato shells, then filling, in microwave at 20-second intervals until heated through. Stir smoked salmon into filling; season with sea salt and pepper. Mound filling in shells.
  • Place 1/4 cup water and salmon fillets in heavy large skillet; sprinkle with salt and pepper. Cover; steam over medium-high heat until salmon is just opaque in center, about 3 minutes.
  • Meanwhile, rewarm wine-shallot reduction over medium-low heat. Add remaining 8 tablespoons butter, 1 tablespoon at a time, whisking until each is melted before adding next; continue whisking until beurre rouge is thick (do not overheat or sauce may separate). Season with salt and pepper.
  • Spoon sauce onto 4 plates. Place potatoes on 1 side; sprinkle with remaining green onions. Arrange 2 salmon strips atop sauce on each plate; sprinkle with peppercorns and chives.

I was looking for different recipes to use all the tomatoes this year from my garden and found this one. It's great but they are not good reheated.

1 tablespoon capers, preferably packed in salt
1 lb salmon
3 1/2 tablespoons extra virgin olive oil
1 tablespoon chopped flat-leaf Italian parsley
1 teaspoon very finely chopped garlic or 1 teaspoon pressed garlic
2 tablespoons unflavored fine dry breadcrumbs
salt
black pepper, ground fresh
2 large firm ripe tomatoes, weighing approximately 3/4 pound each

Steps:

  • Drain the capers if packed in vinegar; soak, rinse, and drain if packed in salt.
  • Chop them fine.
  • Turn the oven on to 400.

6 medium zucchini
1 tablespoon olive oil
1 large onion, finely chopped
2 stalks celery, finely chopped
8 ounces mushrooms, thinly sliced
1/2 teaspoon dried tarragon
1/2 teaspoon freshly ground black pepper
1 egg
2 tablespoons freshly squeezed lemon juice
1 (14 1/2-ounce) can salmon, including bones and liquid, skin removed
1/2 cup chopped fresh parsley
3/4 cup bread crumbs

Steps:

  • Set Global Sun Oven out to preheat. Lightly coat two glass baking dishes with cooking spray. Cut the zucchini in half length-wise. Cut each half into 2 to 3 pieces, hollow out each piece, leaving sides intact. Set aside. Heat the oil in a large skillet over medium heat. Add onion, celery and mushrooms and cook, stirring occasionally until celery is tender, about 5 minutes. Stir in tarragon and pepper and cook for about 1 minute. Remove from heat and set aside. Drain salmon, reserving liquid, and remove skin. In a large bowl beat egg with lemon juice. Add salmon and mash with a fork. Add reserved mushroom mixture, parsley, breadcrumbs and enough salmon liquid to obtain the right consistency. Stuff the hollowed out zucchini pieces with salmon mixture. Arrange pieces in the prepared baking dishes, cover with foil then cover foil with a dark tea towel. Cross stack the baking dishes in the GSO, or bake zucchini in two batches. Bake until zucchini have softened and filling is brown on top, 1 to 1 1/1 hours.
