½ pound ground pork
1 cup finely shredded cabbage
¼ cup finely shredded carrot
2 green onions, thinly sliced
2 tablespoons chopped fresh cilantro
½ teaspoon sesame oil
½ tablespoon oyster sauce
2 teaspoons grated fresh ginger root
1 ½ teaspoons minced garlic
1 teaspoon chile sauce
1 tablespoon cornstarch
1 tablespoon water
12 (7 inch square) spring roll wrappers
4 teaspoons vegetable oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place pork in a medium saucepan. Cook over medium high heat until evenly brown. Remove from heat and drain.
  • In a medium bowl, mix together pork, cabbage, carrot, green onions, cilantro, sesame oil, oyster sauce, ginger, garlic and chile sauce.
  • Mix cornstarch and water in a small bowl.
  • Place approximately 1 tablespoon of the pork mixture in the center of spring roll wrappers. Roll wrappers around the mixture, folding edges inward to close. Moisten fingers in the cornstarch and water mixture, and brush wrapper seams to seal.
  • Arrange spring rolls in a single layer on a medium baking sheet. Brush with vegetable oil. Bake in the preheated oven 20 minutes, until hot and lightly browned. For crispier spring rolls, turn after 10 minutes,

4 teaspoons vegetable oil, plus more for brushing
1 tablespoon chopped peeled ginger
2 cloves garlic, chopped
4 scallions, chopped
1 1/2 cups finely shredded green cabbage

1 pound lump crabmeat, picked over
1/4 cup chopped fresh cilantro
1 teaspoon Asian chili-garlic paste
1 1/2 teaspoons toasted sesame oil
1 tablespoon soy sauce
1 tablespoon rice vinegar
14 square spring roll wrappers
1 large egg white
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon mirin (sweet rice wine)
1 teaspoon chopped peeled ginger
1 scallion, finely chopped

Steps:

  • Preheat the oven to 425 degrees. Make the spring rolls: Cook the ham in 2 teaspoons vegetable oil in a small nonstick skillet over medium heat until crisp, 2 to 4 minutes. Add the ginger, garlic and scallions; cook until fragrant, about 1 more minute.
  • Toss the cabbage and carrot with the hot ham mixture in a large bowl. Add the crab, cilantro, chili-garlic paste, 1 teaspoon sesame oil, the soy sauce and vinegar; toss.
  • Wrap the spring rolls (see right). Pierce each roll with a skewer in a few places to prevent bursting.
  • Place a rack in a baking dish and brush with vegetable oil. Mix the remaining 2 teaspoons vegetable oil and 1/2 teaspoon sesame oil; lightly brush on rolls. Place the rolls on the rack; bake until golden on top, about 15 minutes. Turn the rolls; bake until golden and crisp, 8 to 10 more minutes.
  • Meanwhile, mix all the sauce ingredients in a small bowl. Serve with the warm spring rolls.

8 ounces boneless skinless chicken breasts, cooked and chopped finely
2 ounces bean thread noodles (rice noodles)
2 cups cabbage, shredded
1/2 cup bean sprouts
1/2 cup carrot, thinly julienned
1 garlic clove, minced
1 tablespoon fresh ginger, minced
1 tablespoon hoisin sauce
1 tablespoon fish sauce
1/2 teaspoon ground coriander
15 spring roll wrappers, 8 inch diameter (approximately)
1 1/2 tablespoons rice wine vinegar
1/2-1 tablespoon Splenda granular
2 teaspoons soy sauce
1 teaspoon hot sesame oil
1/2 teaspoon chili-garlic sauce
1/4-1/2 teaspoon sesame seeds

Steps:

  • Preheat oven to 400 and prepare baking sheet with parchment paper, sprayed with cooking spray.
  • Prep chicken, rice noodles and veggies.
  • Combine cabbage, bean sprouts, carrots, garlic and ginger. Set aside.
  • Heat saucepan over medium heat and spray with cooking spray. Add cabbage mixture and cook for 2 minutes, stirring from time to time. Add hoisin sauce, fish sauce and ground coriander. Stir until well combined.
  • Remove saucepan from heat, add chicken and noodles, combine. Set aside.
  • *Note there are two different types of rice papers - I use the hard rice kind found in the refrigerator section, directions for those wrappers are as follows. I have not tried using the other wrappers, (I can't find them around here!), but feel free to use them as you normally would. I've heard they are easier to use than the crisp ones.
  • Working with one rice paper at a time. Dip rice paper in warm water for 12-15 seconds until pliable. Remove rice paper to clean towel. Add about two tablespoons of noodle mixture to rice paper and wrap up tightly. Place seem side down on prepared baking sheet. Repeat until all filling is gone.
  • Spray spring rolls with fine layer of cooking spray.
  • Bake for 20-25 minutes, flipping rolls half way through.
  • While rolls are baking, combine dipping sauce ingredients with wire whisk.

EASY CHICKEN STIR FRY AND BAKED SPRING ROLLS



Easy Chicken Stir Fry and Baked Spring Rolls image

I love the idea of "Cook Once Eat Twice". There are those days when you just can't get into the kitchen, but certainly want a good meal. This recipe fits the bill. My version of a chicken stir fry that can be served immediately, or rolled into phyllo leaves for spring rolls which can be frozen and baked at a later date. Great for entertaining, a healthy snack, or a lighter meal served with a salad and a variety of dipping sauces. Feel free to switch the chicken for beef, pork or shrimp. Any variety of vegetables will work also. Vegetarians in your family? Eliminate the meat completely, for a dish that everyone will enjoy. The combinations are endless. You can use melted butter when preparing the rolls, however I prefer to use cooking spray as it's easier then brushing the extremely thin pastry sheets. Note: cooking time will vary depending on how crispy you prefer your vegetables. Servings sizes and nutritional values will not be completely accurate as posted if you are having just the stir fry, as it also includes the phyllo dough. See below for information on preparing Spring Rolls. Don't let the long list of ingredients and directions scare you off. This works up very quickly.

1 1/2 cups chicken breasts, sliced thinly
1 tablespoon olive oil
1 tablespoon soy sauce
1 tablespoon garlic, minced
1/4 teaspoon red pepper flakes
1 tablespoon dried basil
1 cup shoestring carrots
1 cup sweet red pepper, thinly sliced
1 cup celery, sliced
2 cups bean sprouts, rinsed and drained
1/2 cup green onion, sliced
1 cup frozen peas, thawed
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon cornstarch
1 tablespoon cold water
1/4 cup sweet chili sauce
15 phyllo pastry sheets, cut in half
cooking spray

Steps:

  • In a small bowl mix chicken slices, olive oil, soy sauce, garlic, red pepper flakes and basil. Cover and refrigerate for at least 1 hour but no longer than 24.
  • Heat a large skillet to a medium high heat. Add the marinaded chicken, Saute until lightly browned.
  • Add carrots, sweet red peppers and celery. Continue to cook until vegetables begin to softened.
  • Add bean sprouts, onions, peas, salt and black pepper. Mix cornstarch with water and set aside.
  • Once the bean sprouts have softened to your liking, add the cornstarch mixture to thicken the juices.
  • Stir in the sweet chili sauce and serve.
  • Preparing Spring Rolls:.
  • Allow mixture to cool, for easier handling.
  • Work with one phyllo leaf at a time. Keep the remainder covered with a damp cloth or plastic wrap. They will dry out quickly if not.
  • Sheets should be cut in half horizontally. Lay one sheet out on the counter and give a light coating of cooking spray (or brush with melted butter). Fold in half with the short sides together.
  • With the short side towards you, place 2 tbsp (or to your liking) of mixture onto the lower third of the phyllo leaf. Bring the bottom up over the mixture, then fold in each side. Again, lightly coat with cooking spray. Roll tightly, and lay on a baking sheet with the seam side down. Continue in this manner until all the mixture has been used. Give another light coating of cooking spray. At this point, you can freeze them for later use or continue on to bake. With the full recipe, I've been able to make 30 spring rolls.
  • Preheat oven to 375*. Bake for 15 - 20 minutes or until golden brown. Bake frozen rolls for 25 - 30 minutes.

I love Spring Rolls but I hate deep frying! These are just as tasty as fried and definitely much lower in fat, although I don't think they would qualify as a really low fat recipe. Spring roll wrappers can be found in the freezer or refrigerator at any good Chinese or Vietnamese grocery store.

20 large spring roll wrappers
6 cups finely shredded cabbage
2 large carrots, peeled and grated
1 lb lean ground turkey or 1 lb ground lean pork
2 tablespoons peeled minced fresh ginger
1 tablespoon toasted sesame oil
1/2 teaspoon salt
vegetable oil, for brushing

Steps:

  • Prepare the cabbage and carrots and set them aside.
  • Fry the meat until just done with the ginger, salt and sesame oil.
  • Lift from the pan and put in a large bowl.
  • Drain off any excess fat (but don't wash the pan) and saute the shredded cabbage and carrots with a couple tablespoons of water, until just limp and the water is gone.
  • Mix with the meat.
  • Brush each spring roll wrapper with oil, turn over, and put a little- one twentieth to be precise- of the filling in a tube shape diagonally across one quadrant of the wrapper.
  • Fold in the side corners, then roll up to make a neat tube.
  • Repeat 19 more times.
  • Lay the finished spring rolls on a lightly oiled cookie tray.
  • Bake at 350°F for about 30 minutes, until golden brown.
  • Serve hot with plum sauce.

20 egg-roll wrappers (from 1 16-oz. package)

Steps:

  • 1. Preheat oven to 400ºF. Brush a rimmed baking sheet with 1 Tbsp. vegetable oil. Combine chicken, coleslaw mix, scallions, ginger, sesame oil and soy sauce in a large bowl. 2. Put 2 Tbsp. water into a small bowl. Place an egg-roll wrapper on a flat surface with a long side facing you. (Keep other wrappers covered while you work.) Spoon about 1/4 cup chicken mixture in a line 1 inch from bottom edge of wrapper, leaving 1 inch on either side. Moisten edge farthest away from you with water. Roll bottom edge over chicken and then fold side edges in toward filling. Roll wrapper tightly and seal by pressing lightly on edge. Place on baking sheet, seam side down.   • Preheat oven to 400°; add oil to a preheated skillet over medium to medium-high heat.
  • Saute pepper, celery, water chestnuts, and onion for 2-3 minutes.

This is a healthier version of the deep-fried spring roll. My family really enjoyed these. You can serve these as an appetizer, but I served them as a main dish. Based on a Rachael Ray recipe.

1 Tbsp vegetable oil
1/2 red bell pepper, finely chopped
2 celery ribs, finely chopped

2 Tbsp tamari (or dark soy sauce)

4 sheet(s) phyllo dough, defrosted (13 x 17 in. each)
4 Tbsp butter, melted

Steps:

  • 1. Preheat your oven to 400 degrees F.
  • 2. Add the oil to a large skillet over medium-high heat. Saute eht pepper, celery, water chestnuts and onion for 2-3 min. Then transfer to a bowl. The veggies should still retain some crunch.
  • 3. Add the bean sprouts, crab, tamari and thyme to the bowl of veggies. Combine well.
  • 4. Brush half a sheet of phyllo dough with melted butter and fold the sheet in half, making almost a square.

This was created for RSC #13. O.k. so shrimp isn't t really fish, but it made the name of the recipe work! I think the flavor combination works so well; each ingredient adds a little something special. I used a large size wrapper, but you could certainly use the smaller type. I just liked being able to stuff in as much filling as possible. I used these as a main dish served with Chinese fried rice, but you could easily use as an appetizer.

2 ounces cellophane noodles (bean-thread, soaked in boiling hot water to cover for 20 minutes, drained well and chopped)
6 dried shiitake mushrooms (soaked in hot water to cover for 20 minutes, rinsed, squeezed dry, the stems discarded and the caps )
2 small boneless skinless chicken breasts, cubed (about 6 ozs each)
1/2 lb raw shrimp, cut into small pieces
1 1/2 tablespoons garlic cloves, minced (about 3)
3 scallions, minced
1 tablespoon minced peeled fresh gingerroot
4 baby carrots, minced fine
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh mint leaves
1 cup chopped mung bean sprouts
1 tablespoon soy sauce
1/4 teaspoon salt
1 tablespoon fish sauce
1 teaspoon sugar
15 spring roll wrappers (8 inch)

Steps:

  • Preheat oven to 425 degrees.
  • Put the cubed chicken into a food processor and pulse about 6 times (You can mince by hand if you don't have a food processor).
  • Put two tablespoons of oil in a non-stick skillet, add the chicken and cook for 5 mints, Add the shrimp and cook for another 1 1/2 minutes. Remove from the pan and set to the side.
  • Add another tablespoon oil to the pan and stir fry the scallions, mushrooms, carrots, for about 4 minutes. Add the bean sprouts, cilantro, garlic ginger and mint, cook for another minute.
  • Remove mixture from the pan and pat the ingredients dry (the dryer the mixture the better).
  • In a large bowl mix the noodles, chicken/shrimp mixture, vegetable mixture, soy sauce, fish sauce, salt and sugar .
  • To assemble rolls, place a spring roll wrapper on a clean working surface. Spread 3 tablespoons of the filling into a sausage shape lengthwise along the spring roll wrapper nearer the end closest to you.
  • Fold the left and right sides of wrapper over filling, then lift up the wide end nearest you and tuck overtop. Roll to the other end. Secure the roll by dipping your fingers in some water and wetting the end, "pasting" it shut.
  • Arrange spring rolls in a single layer on a baking sheet. Brush with vegetable oil. Bake in the preheated oven 20 minutes, until hot and lightly browned.

1/2 head napa cabbage (about 8 ounces cored and shredded)
1 carrot
1/2 tablespoon sambal oelek (or other chili paste, to taste)
6 ounces extra firm tofu
1 teaspoon soy sauce or 1 teaspoon tamari
2 teaspoons water
1 teaspoon seasoned rice vinegar
1/4 teaspoon sesame oil
24 spring roll wrappers (4x4-inch)

Steps:

  • Cut the cabbage in quarters lengthwise and cut out and discard the hard core. Slice two of the quarters thinly, and reserve the other two for another use. Cut the carrot into thin matchsticks about 1-inch long. Mix the cabbage with the carrot in a large bowl and stir in the sabal oelek (chili paste).
  • Cut the tofu into 1/4-inch thick slices. Lay them out on a double-layer of paper towels. Top with another double layer of towels and gently press down on each slice with your hands to remove as much moisture as possible. Remove from paper towels and cut into tiny, 1/4-inch cubes. Place into a medium-sized bowl.
  • In another bowl, combine the soy sauce, water, rice vinegar, and sesame oil. Pour over the tofu, stirring gently (I used my hands) to distribute the sauce without breaking up the tofu.
  • Preheat oven to 375°F Place one spring roll wrapper on your work surface with a corner toward you. (Keep the remaining wrappers covered to prevent them from drying out.) Place a heaping tablespoon of the cabbage mixture in the center and top it with a line of tofu cubes. Bring the bottom corner over the filling and the two sides in, forming an envelope-like packet. Moisten the top corner with a little water and roll up from the bottom, pressing the edge to seal. Place seam-side down on a baking sheet lined with a silicone mat or parchment paper. Repeat with remaining ingredients.
  • Bake for 6-9 minutes. Turn over and bake for another 6-10 minutes or until golden brown. Serve with a sweet and sour dipping sauce.

FILLING:
3 T. sesame oil, plus more for brushing
1 t. garlic, minced
2 t. ginger, trated
1/4 c. scallions, thinly sliced
1 lb. ground pork
3 c. cabbage, thinly shredded
1 c. carrot, grated
1 8-oz can sliced water chestnuts, chopped
3 T. soy sauce
2 T. fresh cilantro, chopped
2 t. chili garlic paste
3 T. rice wine vinegar
18 flour spring roll wrappers
DIPPING SAUCE:
3 T. soy sauce
3 T. rice wine vinegar
1 1/2 T. sweet rice cooking wine
1 1/2 t. ginger, peeled & chopped
1 scallion, thinly sliced
1/2 t. honey

Steps:

  • Preheat oven to 375. Lightly brush surface of a nonstick cookie sheet with sesame oil. In a large saute pan, heat 2 T. of the oil. Add ginger, garlic, scallions, & pork. Saute until pork is cooked through & then remove from heat. Add cabbage, carrots, water chestnuts, soy sauce, cilantro, chili paste & rice wine vinegar. Place 3 T. of filling on wrapper, about 1" from edge that's toward you. Roll once, then fold right side, then left side toward center. Continue rolling into a tight roll. Place seam-side down on cookie sheet to hold tightly & to keep its shape during baking. Fill remaining wrappers. Brush spring rolls with sesame oil. Bake in oven for 10 minutes. After 10 minutes, turn over each spring roll & continue to bake another 10 minutes. Serve with dipping sauce.
