- Place an oven rack in the upper third of the oven and preheat the oven to 425°F. Line the broiler rack with foil.
- Place the salmon, skinned side down, on the broiler rack and sprinkle with the salt and pepper. Top evenly with the horseradish, then with the panko, lightly pressing down. Lightly spray the panko with nonstick spray. Bake until the salmon is just opaque in the center, about 12 minutes.
- Preheat the broiler. Broil the fish 5 inches from the heat until the panko is deep golden brown, about 3 minutes. Serve with lemon wedges. Yields 1 salmon fillet per serving.

- Spray broiler pan with Pam and then place salmon skin side down (no need to turn this salmon) on the broiler rack. Sprinkle with salt and pepper and then cover the salmon with the horseradish and then the panko. Spray with Pam.

- Check that all bones have been removed from filets. In a small bowl, cream together butter and horseradish with a spoon. Stir in breadcrumbs and combine well. - Lightly butter shallow baking pan or broiler pan.
- Arrange salmon filets on buttered pan.
- Sprinkle with salt and pepper, drizzle with 1/4 cup Chardonnay.
- In small bowl, combine horseradish, bread crumbs and shallot, mix well.
- Press into top of each filet.
- Bake at 375 for 12 to 14 minutes or until fish flakes easily with fork.
- Meanwhile, in small saucepan, combine 1/2 cup Chardonnay, cream and lemon juice, cook over medium-high heat until reduced to 1/4 cup.
- With wire whisk, beat in 1 cup of the butter.
- Remove from heat, beat in remaining 1/2 cup butter until thick and smooth.
- Stir in parsley and chives.
- If desired, season with salt and pepper.
- Serve butter sauce over salmon filets.

- Heat oven to 200C/fan 180C/gas 6. Whizz the bread into crumbs in a food processor. Add the horseradish and thyme, then season and mix well.
- Put the salmon in one layer in a lightly oiled baking dish. Press the crumbs on to the flesh, then bake for 10-12 mins.
- Meanwhile, put the cabbage in a large pan with a little salt and pour in boiling water to come halfway up. Cover and cook for 8-10 mins until tender. Drain well, then return to the pan with the yogurt and plenty of black pepper. Reheat gently. Pile the cabbage onto plates and serve with the salmon.
